SARDINIAN MINESTRONE, LONGEVITY SOUP



Sardinian Minestrone, Longevity Soup image

This is a hearty soup eaten by the worlds longest living people. My family says its the best soup I make. It's best served with a slice of sourdough bread, Parmesan or Pecorino cheese and a splash of Italian Parsley.

Number Of Ingredients 15

16 oz beans: I use three different types - lima (or fava), azuko (or red beans), and chickpeas
1 large onion, finely chopped
1 bulb of fennel, finely chopped
3 stalks of celery, chopped
4-5 cloves of garlic, minced
3 carrots, chopped
3 medium potatoes (or four), I like the yellow type
2/3 cups of barley (small pasta can be used)
2 cups of broth (water can be used)
1 large can of crushed tomatoes
1/2 teaspoon of salt (or more)
1/2 teaspoon of black pepper
a splash of cayenne pepper (optional)
chopped Italian parsley
grated pecorino cheese or freshly grated parmesan cheese

Steps:

  • 1. Cook dry beans until tender. You can use cans if you have little time. Or, use a pressure cooker. Sometimes I use a crock pot. 2. Add beans to a stock pot. 3. Add all other vegetables. 4. After vegetables become tender, add the crushed tomatoes. 5. Cook until everything is tender. 6. Serve in a small bowl, top with parsley and cheese. 7. Add a slice of sourdough bread and enjoy.

  • Heat the oil in a 5 qt Dutch oven or soup pot set over medium. When the oil begins to shimmer, add the onions, carrots, celery, broccoli, sweet potatoes, and fennel. Saute, stirring frequently, until all of the vegetables are softened.
  • Scootch the vegetables to the side, creating a clear spot and add the tomato paste and garlic to the spot. Stir together until the garlic is fragrant (less than a minute), then mix in with the remaining vegetables.
  • Increase heat to medium-high, and ddd the beans, crushed tomatoes, and 4 cups of water. Bring to a boil, then reduce heat low or medium-low to maintain a very gentle simmer. Cook for 20 minutes, uncovered.
  • Add the pasta and a pinch of salt. If the soup is too thick, add another cup of water. Cook for 10 minutes more.

  • Put a large shallow casserole pan on a medium-high heat.Finely slice the bacon, if using, and sprinkle into the pan with 1 tablespoon of olive oil, stirring occasionally while you prep your veg.Peel and finely chop the garlic and onion, adding the garlic to the pan with the bay leaves as soon as the bacon turns golden, followed by the onions.Trim and chop the carrots and celery into rough 1cm dice, adding to the pan as you go.
