BLUE RIBBON PEANUT BUTTER COOKIES
I used this recipe when I won a Blue Ribbon at the South Plains Fair in Lubbock, Texas in 1981. It came from a cookbook my mother received as a Wedding gift in 1952. I don't know the name of the Cookbook and the only copy of the recipe I have is hand written by my mother which is priceless to me. A batch of these cookies was the only thing my father in-law wanted from me for his birthday, Father's day and Christmas. I hope you enjoy them. The real trick to them is not to over cook them (it will make them to crunchy) or under cook them ( it will make them to soft), you want a balance between the two.

Steps:
- Cream butter, peanut butter, both sugars, egg and vanilla.
- Sift together all the dry ingredients; blend into creamed mixture.
- Shape in 1 inch balls; roll in granulated sugar.
- Place 2 inches apart on a ungreased cookie sheet.
- Press balls with a fork making a crisscross on top or press a peanut half into the top of the balls.
- Bake at 375 degree oven for 10 to 12 minutes.
- Cool slightly; remove from pan.

CHOCOLATE AND PEANUT BUTTER RIBBON DESSERT
Peanut cookies form the crust of this light layered frozen dessert with chocolate and peanut layers, topped with a garnish of cookies and whipped topping.

Steps:
- Crush 8 of the cookies in resealable plastic bag with rolling pin. Mix cookie crumbs and butter. Press onto bottom of foil-lined 9x5-inch loaf pan.
- Mix cream cheese, peanut butter, sugar and vanilla with electric mixer on medium speed until well blended. Gently stir in 3 cups of the whipped topping. Spoon 1/2 cup of the cream cheese mixture into small bowl. Stir in melted chocolate until well blended; set aside. Spoon half of the remaining cream cheese mixture over crust. Top evenly with chocolate mixture; cover with remaining cream cheese mixture.
- Freeze 4 hours or overnight until firm. Invert onto plate. Remove foil, then re-invert onto serving platter so that crumb layer is on bottom. Coarsely break the remaining 4 cookies. Top dessert with remaining whipping topping and cookies.

- Preheat oven to 375 degrees F (190 degrees C).
- Cream together white sugar, brown sugar and shortening until fluffy. Stir in the vanilla and eggs. Combine the flour, wheat germ, salt and baking soda; mix into the batter. Stir in crispy rice cereal and chocolate chips. Drop by teaspoonfuls on an ungreased cookie sheet, spacing cookies 2 inches apart.
- Bake for 11 to 13 minutes in the preheated oven, until cookies are light brown at the edges. Cool well before eating as the chocolate can burn your mouth.

PEANUT BUTTER CINNAMON COOKIES
Everyone loves peanut butter cookies- this cookie is a little different that it has cinnamon in the cookie and it is rolled in cinnamon/sugar, then flattened with the tines of a fork or pressed down with your meat tenderizer to give it a bumpy look.

- 1. Mix the first 5 ingredients in a medium bowl.Set aside. Beat butter, sugars, peanut butter ,egg and vanilla in a large bowl with mixer on medium speed until well blended, about 2 minutes. Gradually beat in flour mixture on low speed until well mixed. Refrigerate dough for 2 hours or until firm.
- 2. Heat oven to 375^. Shape dough into 1-inch ball. Roll in the cinnamon/sugar mixture to coat well. Place about 3 inches apart on and ungreased baking sheet. Gently flatten with fork tines, pressing a crisscross pattern onto tops of cookies; or use your meat tenderizer to press gently make a pattern on tops.
- 3. Bake 8 to 10 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
IRRESISTIBLE JIF PEANUT BUTTER COOKIES
Steps:
- 1. HEAT oven to 375ºF. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.
- 2. COMBINE flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended. Drop by rounded measuring tablespoonfuls of dough 2-inches apart onto greased baking sheet. Flatten slightly in a crisscross pattern with tines of fork.
- 3. BAKE one baking sheet at a time for 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet. Remove cookies to cooling rack to cool completely.

Steps:
- Beat shortening, peanut butter, granulated sugar and brown sugar until light and fluffy.
- Add egg and beat until incorporated.
- Sift together in separate bowl the flour, baking powder, soda and salt. Stir with whip until well blended.
- Add flour mixture to mixing bowl and mix on low speed until just incorporated. Do not overmix.
- Chill for 1 hour.
- Roll in balls about the size of golf balls on ungreased cookie sheet.
- Flatten, criss-cross fashion with a fork dipped in sugar.
- Bake at 350° for 10-12 minutes.
- Leave cookies on cookie sheet exactly 1 minute before transferring to rack to cool completely.

MARY'S PEANUT BUTTER COOKIES RECIPE
This is a great soft peanut butter cookie! My husband's comment was that the peanut butter taste was not so overwhelming as most cookies of this type... very nice.

- 1. Preheat oven to 375 degrees F.
- 2. Combine margarine, peanut butter, sugars, egg and vanilla.
- 3. In a separate bowl sift together dry ingredients and add to wet mixture.
- 4. Form into small balls, roll in remaining sugar and flatten with a fork... creating a criss-cross design.
- 5. Bake 10-12 minutes until practically perfect.
- 6. Note: You can substitute butter for the margarine, but I actually prefer the reduced-fat margarine in this recipe. Also, be careful not to over-bake. These cookies are best when they're a little under-done.

- To make the crust, combine graham cracker crumbs, melted butter and sugar. Press into a lightly greased deep-dish pie plate. Bake at 300 degrees for 12 minutes. Allow to cool while preparing the filling.

- To make the ganache, place the chocolate chips and heavy cream in a small bowl. Microwave for 30 seconds and whisk until the chocolate is completely melted and smooth. Microwave an additional 10 seconds if needed. Whisk in the peanut butter. Reserve ¼ cup of the ganache for decorating the pie and pour the rest over the peanut butter filling. Refrigerate to allow the ganache to set.
