BLUE RIBBON KIELBASA
Sweet and Sour Kielbasa made in a Dutch oven or crock pot. It has won several awards at scout camps and county fairs.

Steps:
- Slice the kielbasa in 1/4 inch pieces
- Cut the peppers and onion into 1/4 strips
- Mix ingrediants,place everything in dutch oven or crock pot and pour pineapple chucks and juice over the top.
- cook at 35 - 40 minutes 350 degrees or for 4 hours on low in crock pot.

COMFORTING CHEESY KIELBASA AND POTATO BAKE

Steps:
- 1. Cut the kielbasa in half length wise and then cut into 1/2 inch slices. Place in a large bowl. You can use any other cooked sausage, andouille etc., if you want to change it up.
- 2. Cut the onion into thin slices and place in the bowl.
- 3. Peel the potatoes and cut into about half inch cubes. Place them in the bowl.
- 4. Add the salt, pepper, onion powder, garlic powder, parsley, paprika and olive oil to the bowl. Mix well. Shred the cheddar cheese and set aside.
- 5. Preheat oven to 400 degrees. Spray a 9 X 13 pan with cooking spray on the bottom and sides. Add the kielbasa and potato mixture to the pan and spread out evenly.
- 6. Cook uncovered for 35 to 45 minutes or until potatoes are fork tender, stirring every 10 minutes. When the potatoes are done, turn the oven off and add the shredded cheddar to the top. Let it sit in the oven for an additional 5 minutes, or until cheese is melted.

- Cut onions and peppers into 3/4" wide strips. Saute until onions start to become clear. Cut Kielbasa in 1" chunks and add to onions and peppers. Add pineapple, including juice. Place lid on Dutch Oven. Cook at around 350 deg. for 35 minute.

KIELBASA AND FRIED BUTTERED SAUERKRAUT
Add some cornbread and you have one easy weeknight meal. Kielbasa and sauerkraut are great together, but adding the butter makes this recipe extra special. Browning the butter and sauerkraut adds tons of flavor. Make sure to let it get browned ... that's where the flavor is.

- 1. Use a large skillet. Put the butter in and melt it around the pan. When it starts to sizzle put in the whole can of sauerkraut.
- 2. While the sauerkraut is cooking, cut up the kielbasa into 1 inch slices. Put aside.
- 3. Stir the sauerkraut. Once it starts turning brown add the kielbasa.
- 4. Continue to stir, add the spices, and stir some more. The sauerkraut should be golden brown with some darkened areas. Let it cook and stir often (sauerkraut burns easily, so you have to watch it. You only want a little bit darkened)
- 5. Once everything is mixed and the sauerkraut is golden brown turn off the heat and let it sit until the burner is cool. (This will darken the sauerkraut further.) Serve and enjoy.
ZESTY BBQ KIELBASA
This recipe is an old school favorite of mine, that our cafeteria served. I was lucky enough to get the recipe from my best friends mother who worked in the cafeteria...been enjoying them ever since. My kids just love this recipe...makes a great appetizer and can easily make a double recipe, for parties.. I hope you try them...

- 1. Preheat oven to 350 degree F. In a small to medium skillet, brown onions in butter.
- 2. In a small bowl, whisk all other ingredient, except kielbasa. Add mixture to skillet, mix with onion and simmer a few minutes.
- 3. In a small casserole dish, spread Kielbasa slices.
- 4. Pour sauce over Kielbasa and toss to coat. Note: You could probably use 2 pounds of sausage with the amount of sauce, we just like ours saucier. Any less sauce with a pound of kielbasa is too dry for our tastes.
- 5. Bake for 20 - 25 minutes, or until good and bubbly. I then place under broiler to caramelize a few minutes. Just my preference. Serve with toothpicks. Enjoy!
SUPER EASY KIELBASA BEAN SOUP

- 1. slice sausage links in half lengthwise then cut into 1/2 inch chunks
- 2. slice onion as indicated in ingredient list
- 3. spray either crockpot or medium to large saucepan or soup pot with cooking spray; add sausage and onion
- 4. pour in the beans, liquid included; add vinegar and mustard- stir to combine (if this is too sour, you can add a tiny bit of sugar to take the edge off); stir in Montreal or other seasonings
- 5. add just a bit of water to make more 'stew' like but not like a brothy soup- just enough to separate the ingredients a little bit- DO NOT cover the mixture with water
- 6. turn crockpot on (low if you'll be gone all day, high if you need it in a couple hours) or cook on stove-once it gets to a boiling point, turn heat down and let simmer until flavors blend...re-season to taste
- 7. ** if you prefer a thicker stock once its done cooking, add a bit of cornstarch/water or use Wondra/gravy flour to thicken....Enjoy!
GRILLED KIELBASA SKEWERS
Using kielbasa makes these skewers an easy summer dinner. The sausage grills evenly with the vegetables. Italian dressing adds zesty flavor to the fresh veggies. This is an easy meal to put together and quick to grill because the sausage is already cooked.

- 1. Cut kielbasa into 1" slices. Cut onion, bell peppers, corn on the cob, zucchini, tomato and ANY other of your favorite veggies you like int 1/2" to 1" chunks depending on how fast that veggie might cook. For example, the tomato will cook fast so cut into 1" chunk; corn can be cut into 2-3" pieces.
- 2. Place all the cut up vegetables and kielbasa into a large glass bowl. Pour the entire bottle of Italian salad dressing over it all. Mix so everything is coated and let marinate for at least a half-hour.
- 3. Start your BBQ. If you are using wooden skewers, soak them in water for at least 10 minutes before using.
- 4. Skewer the kielbasa and the vegetable, alternating meat and vegetables however you desire.
- 5. Place on oiled or sprayed grill. Grill for about 10 minutes.
- 6. Basically until your vegetables are done to your liking. Remove and serve. These go nicely with rice or pasta salad

- 1. Preheat oven to 350 degrees
- 2. Boil large pot of water. Cook pasta for 8-10 min until al dente: Drain
- 3. In a medium skillet over medium high heat cook sausage in oil until browned about 5 min.
- 4. In a large bowl, combine ziti, sausage, stewed tomaotes, sauce, oregano, parsley and pepper. Mix well. Pour into 9x13 dish. sprinkle with bread crumbs, and top with cheese.
- 5. Cover with foil and bake in preheated oven 30 min. Remove foil and bake 10-15 min more till golden.

- 1. In a large frying pan, on med-high heat add your fatback, then add sauerkraut, shredded carrot and small onion
- 2. Cook until translucent and soft. Add your Kielbasa and stir till cooked, add the large onion and the vodka and cook until the onions are translucent.
- 3. Once all incorporated and cooked lower the gas to med/low and add the sour cream...cook until cream is nice and soft and creamy throughout the pan.
