HAM AND BEEF SLIDERS
I love sliders! There are so many different things you can do, sky's the limit! This particular version is a family favorite. Like a hot ham and cheese sandwich plus a cheeseburger all in one! I will sometimes bake the beef before hand, then when it's dinner time, assemble the sliders.

Steps:
- Preheat oven to 375°F Spray a 13×9 pan with nonstick spray. Sprinkle a little salt and pepper in pan. Press ground beef evenly in pan. Sprinkle beef with more salt and pepper to taste. Bake for 20 minutes.
- Remove from oven and allow to rest and cool to allow meat to soak back up the juices.
- Split rolls in half. Spray a clean 13x9 pan with nonstick spray. Place bottom of rolls in pan.
- After the beef is cool to touch, place gently on cutting board and cut into 12 squares. Place squares on rolls.
- Top beef with ham slices that are folded into 4ths.
- Layer cheese on top. Place top buns on cheese. Pulling tops apart from each other and kind of centering over each patty and ham slice as best you can.
- Turn oven on to 350°F.
- In a bowl melt butter. Add rest of sauce ingredients. Whisk together until combined.
- Brush bun tops with the sauce, using all of it.
- Cover with foil. Bake in oven for 10 minutes. Remove foil and bake 10 more minutes. Serve and enjoy!

- Stir together all ham filling ingredients in small bowl; set aside.
- Stir together all egg filling ingredients in small bowl; set aside.
- Stir together all cream cheese filling ingredients in small bowl; set aside.
- Cut crusts from bread slices.
- Butter 1 side of each bread slice.
- Spread about 2 tablespoons ham filling on each of 4 slices whole wheat bread; top each with 1 slice white bread.
- Spread about 2 tablespoons egg filling on each of 4 slices whole wheat bread; top each with 1 slice white bread.
- Spread top of each sandwich with about 1 tablespoon cream cheese filling.
- Wrap with plastic food wrap; refrigerate at least 1 hour.
- Slice each sandwich into thirds.
- Garnish with cucumber slices, parsley sprigs, chives or celery leaves.
- You may substitute 1/2 tsp dried herbs for the parsley and chives in the cream cheese filling.

ULTIMATE HAM SANDWICH

- Spread Homemade Mayonnaise (recipe follows) on a thick slice of crusty white or rye bread. Top with Bibb lettuce, sliced tomato, thick slices of leftover ham, a few dill pickle slices and sliced cheddar cheese. Spread whole-grain mustard on another slice of bread, then close the sandwich.
- Whisk the egg yolk, vinegar and 1 tablespoon water in a medium nonreactive heatproof bowl (glass or ceramic). Fill a large bowl with ice water and set aside. Bring 2 inches water to a simmer in a saucepan over medium-low heat.
- Set the bowl with the yolk mixture over the saucepan (do not let the bowl touch the water). Slowly whisk until a thermometer inserted into the yolk mixture registers 150 degrees F, 4 to 5 minutes.
- Set the bowl with the yolk mixture in the ice water to stop the cooking; whisk just until the mixture is lukewarm (do not let it get cold).
- Put the bowl with the yolk mixture on a damp towel. Add 1/4 teaspoon salt. Combine the oils in a measuring cup. Whisking constantly, slowly drizzle the oil into the bowl in a thin stream until smooth and thick. If at any point the oil is not emulsifying into the mixture, stop adding the oil and whisk to combine before continuing. Whisk in 1 to 2 teaspoons water if the mayonnaise is too thick. Season with salt. Cover and refrigerate up to 4 days.
- Yield: 1 cup

- 1. Slice top from rolls and place bottoms in baking pan.
- 2. Layer ham and cheese on rolls.
- 3. Replace tops.
- 4. Combine butter, poppy seeds, mustard, Worcestershire, and onion powder in a saucepan. Mix well.
- 5. Drizzle over rolls. Refrigerate until butter is firm or overnight.
- 6. Cover with foil.
- 7. Bake at 350° for 30 minutes or until cheese melts.
- 8. Uncover and cook for 2 additional minutes.
- 9. Serve warm or cold.
HAM DELIGHTS
I used regular ham in this yummy sandwich, but I bet it would be really good with country ham as well. Perfect for anything from a cocktail party to the big game!

- 1. Preheat oven to 350F.
- 2. In a large bowl, combine butter, mustard, and Worcestershire sauce. Add ham & cheese. Mix until well blended.
- 3. Slice the top half off of the rolls. DO NOT BREAK INTO INDIVIDUAL ROLLS. Return bottom half to the pan.
- 4. Spread 1/3 of the ham/cheese mixture evenly over the bottom half of the rolls in each pan. Replace top half of rolls.
- 5. Bake in oven for around 15 minutes until rolls are golden brown and cheese has melted. Slice into individual rolls before serving.

- 1. You will need two 9 x 13 pans. Place the bottoms of 12 rolls in each pan. Place ham (about 2 shaved slices or so) on the rolls.
- 2. Cut the cheese slices into 4 parts and place 2 small pieces on each sandwich. Put the dinner roll tops on.
- 3. In a sauce pan, mix butter, Worcestershire sauce, onion powder, garlic powder and poppy seeds. Wait until all butter is melted and then brush the melted mixture over the ham sandwiches.
- 4. Cover with foil and let sit in fridge for 1 hour or over night. (If you want to bake them right away, you can also.)
- 5. Preheat oven to 375 and bake for 15 minutes or until cheese is melted. Serve.
- 6. They are great hot and even at room temperature Enjoy!
REALLY YUMMY BAKED HAM & CHEESE SANDWICHES
We served these at a family campout with around 65 people there. EVERYONE loved them!!!

- 1. Slice Hawaiian rolls in half. Put bottoms into a oven safe baking dish.
- 2. Melt butter and mix mustard, brown sugar, and worcestershire sauce in with it. Paint some of the sauce on the bottom buns.
- 3. Fold each slice of ham into quarters and put one on each bun bottom.
- 4. Put one half slice of cheese folded in half on top of ham. Cover with Bun tops.
- 5. Add the poppy seeds to the sauce and paint on top buns. Make sure all of the bun tops are covered with the sauce. Then pour remaining sauce all over the buns.
- 6. Bake covered in 350 degree oven for 30 minutes. Take cover off for last 5 minutes.
HAM, CHEESE & BACON SLIDERS
This is my take on the Ham & Cheese sliders I've been seeing on Facebook lately. Everything's better with bacon! :)

- 1. Preheat oven to 350. Slice rolls in half, setting the tops aside. Lay the roll bottoms on a baking sheet.
- 2. Cut the thick sliced ham & Swiss until slices are roughly the size of the rolls. (48 pieces of the ham, 24 pieces of the Swiss)
- 3. In a small bowl, combine the mayonnaise & coleslaw dressing. Mix well.
- 4. Brush the dressing evenly on the inside of both halves of the rolls. To the bottoms, add 2 slices of ham, bacon & a slice of Swiss on each roll. Cover with the roll tops.
- 5. Combine topping ingredients. Pour (or brush) evenly over the sandwiches.
- 6. Cover with foil & bake for 12-15 minutes. Remove foil & bake for 2 mins more, or until cheese is melted & tops are golden. Serve warm.
- 7. ** Everything can be assembled the day before & stored in the fridge, until ready to bake.
