2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon cinnamon
½ cup melted butter
1 cup loosely packed brown sugar
3 eggs, beaten
2 tablespoons sour cream
3 ripe bananas, mashed
½ cup chopped pecans or walnuts, toasted (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, sift together flour, baking soda, salt, and cinnamon. Set aside.
  • In a second mixing bowl, whisk together butter, brown sugar, eggs, and sour cream. Stir in mashed bananas.
  • Add wet ingredients to the dry ingredients and mix well. Stir in toasted nuts, if using.
  • Pour batter into well-greased 9x5-inch loaf pan. Bake for 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Cool for 10 minutes in the pan, then remove loaf from pan and allow to finish cooling on a wire rack.

1 stick butter, softened
2 c sugar or sugar substitute ( splenda )
6 bananas ( ripe & mashed )
1 tsp baking soda
1 tsp salt
1/2 c pecans, in pieces
1/2 c walnut pieces
2 Tbsp vanilla extract ( mexican vanilla is best )
4 c all purpose flour
3 eggs

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Mix together butter, sugar, eggs, and mashed bananas.
  • 3. In another bowl combine flour, baking soda and salt.
  • 4. Combine both mixtures and add vanilla and nuts. Mix thoroughly. Pour into 2 well greased bread pans.
  • 5. And bake for an hour at 350 degrees. To test stick tooth pick into center and if it comes out clean it's done.
  • 6. Cooks Note: Being Diabetic I've made it with Splenda and it's outstanding.

1 cup sugar
1/2 cup butter ((one stick, softened))
2 eggs
3 ripe bananas
1/2 tsp vanilla
1/2 cup soured milk ((Put 1 T lemon juice in cup and add milk to 1/2 cup))
2 cups flour
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp salt
1 Tbsp cinnamon sugar*

Steps:

  • Beat butter and sugar together until creamy and well blended. Add eggs and beat until fluffy. Break banana into chunks and add to sugar/butter mixture. Blend til bananas are mashed. Add flour, soda, nutmeg, and salt alternately with soured milk. Add vanilla. Mix until smooth and all ingredients are combined.Put into a well greased 5" x 9" loaf pan, top with about a tablespoon of cinnamon sugar. Bake in 350 degree oven about 55 minutes or until toothpick comes out clean.Beckie's Blue Ribbon Banana Bread also makes the cutest little loaves, perfect for snacking or gifting. This recipe makes one 3.5" x 7.5" and three 3" x 5.5" mini loaves. 1 1/3 cups granulated sugar
1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 cup chopped toasted walnuts or pecans
1 cup mashed banana (about 2 medium bananas, the blacker, the better)
2 large eggs, lightly beaten
1/2 cup plain yogurt (low-fat is fine)
1/2 cup vegetable oil
1 tsp. vanilla extract

Steps:

  • Adjust the rack in the lower third of the oven and heat the oven to 350 degrees F. Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray. Sift the flour, sugar, baking powder, baking soda and salt into a large bowl. Stir in the walnuts. Combine the banana, eggs, yogurt, oil and vanilla; add to the flour mixture. Stir until just combined. Spoon the batter into the prepared pan. Bake for 1 hour, or until a cake tester inserted in the loaf comes out clean. Cool 10 minutes in the pan, then turn the loaf out onto a rack to cool completely.

Yum! This is an old-fashioned banana bread recipe that's delicious. It's a very basic recipe but so good. Reminds us of something our grandmother would make. This banana bread is moist and tender, slightly dense, and has a nice crust on the outside. This would be great for breakfast or a snack.

2 c all-purpose flour
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c butter, room temperature
1 c sugar
2 eggs
1 1/2 c ripe banana pulp, mashed
1/4 c sour cream
1 tsp vanilla
1/2 c chopped walnuts, optional

Steps:

  • 1. Sift dry ingredients together.
  • 2. In a large bowl cream butter and sugar well.
  • 3. Add eggs and beat well until light and fluffy.
  • 4. Add vanilla.
  • 5. Mix banana pulp with sour cream.
  • 6. Add pulp alternately with dry ingredients to butter, sugar, and eggs mixture on slow speed.
  • 7. Scrape sides as needed.
  • 8. DO NOT OVER BEAT. Beat only until combined. I then stir with a wooden spoon to make sure it is all combined.
  • 9. Grease and flour a loaf pan, 9X5X3. Bake at 350 degrees for 50-60 minutes.
  • 10. Test with a cake tester. Do not test in the crack. Test off to the side. It should come out clean, but be careful not to over bake. You want a loaf of moist banana bread.

1 cup mashed ripe bananas
2 cups sifted cake flour

1 cup sweetened shredded coconut, divided
CREAMY NUT FILLING:
3/4 cup sugar
3 tablespoons all-purpose flour
3/4 cup heavy whipping cream

3 tablespoons butter
3/4 cup chopped pecans, toasted
1 teaspoon vanilla extract
CREAMY WHITE FROSTING:
1/2 cup shortening
1/2 cup butter, softened
1 teaspoon vanilla extract
1 teaspoon almonds extract
4 cups confectioners' sugar
3 to 4 tablespoons whole milk

Steps:

  • In a large bowl, cream butter and sugar until fluffy. Add eggs, beat 2 minutes. Add bananas; beat 2 minutes longer. Set aside. Sift together flour, baking soda and salt; add to creamed mixture alternately with buttermilk and vanilla. Beat well. Stir in pecans. , Pour into two lightly greased 9-in. round baking pans. Sprinkle with 1/2 cup coconut. Bake at 350° for 25-30 minutes. Remove cakes from the pan and cool, coconut side up, on wire racks., For filling, combine sugar, flour, cream, salt and butter in a saucepan. Cook over medium heat until thickened. Stir in pecans and vanilla. Cool. Spread filling over the bottom (plain side) of one cake layer. Place remaining cake layer, coconut side up, on top of filling. , In a bowl, combine frosting ingredients; beat until smooth. Place a 3-in. circle in the center of the cake top. Frost sides and top edges of cake. Remove the circle to expose coconut.

1/4 cup milk (whole, 1%, 2%, almond, or cashew)

Steps:

3 medium, ripe bananas, mashed
1/2 c. vegetable oil
1 c. granulated sugar
2 eggs
4 1/2 tsp. lemon juice (juice of 1/2 of lemon)
2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped walnuts or pecans
1/3 c. softened butter, (not melted, just softened)
1/3 c. light brown sugar
2/3 c. all purpose flour

Steps:

  • Preheat oven to 350 degrees. Line two 8" x 5" loaf pans with parchment paper. Helpful tip: secure paper to edges of pan with binder clips. This prevents paper from sliding when batter is added to pan. Set pans aside.
  • In mixing bowl, combine mashed bananas with oil, eggs, sugar and lemon juice. Mix until all ingredients are well combined.
  • In another bowl, whisk together the dry ingredients; flour, baking powder, baking soda and salt. Gradually add the dry ingredients to the wet ingredients, using a large whisk to combine. Stir the batter until just combine and until there are no more lumps.
  • With a rubber scraper, fold in the chopped nuts.
  • Evenly divide the batter into the two prepared pans.
  • For the crumb topping; in a bowl, combine the softened butter, brown sugar and flour. Mix the a fork until crumbly. Sprinkle over the top of each loaf.
  • Remove the binder clips from the edges of the pans (if you were using to secure the parchment paper) and place loaves in oven. Bake at 350 degrees for 45-50 minutes or until a toothpick inserted comes out clean and crumb free.
  • Let cool 10-15 minutes before slicing.

3 to 4 tablespoons milk

Steps:

  • Whisk together the flour and baking soda in a bowl. In another bowl using a mixer combine the butter, white sugar, eggs, buttermilk, bananas, maple syrup and maple extract.

A recipe I concocted for a county fair baking contest when I was a teenager, I still crave this well-worn recipe today.
Serves/Yields: yields 1 loaf
