1 tablespoon apple cider vinegar or distilled white vinegar
1/2 teaspoon sugar
Kosher salt
1/2 jalapeño, seeded and minced
One 10-ounce package frozen lima beans
2 tablespoons unsalted butter
1/2 sweet onion, chopped
3 ears corn, shucked and kernels cut from the cob
1 clove garlic, minced
2 vine-ripe tomatoes, diced
2 tablespoons fresh basil, cut into chiffonade

Steps:

  • Make the chile vinegar: Combine the vinegar, sugar, a pinch of salt and 1 tablespoon water in a very small microwave-safe bowl. Add the jalapeño and microwave until bubbling, about 30 seconds. Let stand while you prepare the succotash.
  • Put the lima beans in a medium saucepan and cover with water by a couple of inches. Bring to a boil, then boil for 3 minutes. Reduce the heat to a low simmer and cook until tender, about 12 minutes, then drain.
  • Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 8 minutes. Add the corn, garlic and 1/3 cup water and cook, stirring occasionally, until the corn is tender, about 10 minutes. Stir in the lima beans, tomato and basil. Add as much of the chile vinegar as you like, then serve.

The original recipe for this chili came from allrecipes.com and was posted by Deb. This chili received over 2000 reviews with a five star rating. I have tweaked it to fit my family's taste. It is an excellent chili and both easy and fast to make.

2 lb ground chuck
1 large onion, diced
1/2 tsp black pepper
1/2 tsp garlic powder
2 1/2 c tomato sauce
1 8 oz. jar(s) salsa*
4 Tbsp williams chili seasoning, original
1 15 oz. can(s) pinto beans, do not drain
1 15 oz. can(s) red beans, do not drain
1 15 oz. can(s) light red kidney beans, do not drain

Steps:

  • 1. In a dutch oven over medium heat, combine the ground beef and the onion and saute until meat is browned and onion is tender. Drain grease, if desired.
  • 2. Add the ground black pepper, garlic powder ,tomato sauce, salsa, chili seasoning mix and beans. Mix well, reduce heat to low and simmer for at least an hour.
  • 3. *The salsa heat is up to you...mild, medium or hot.

1 tablespoon olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 (4 ounce) cans chopped mild green chilies
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
1/4 teaspoon cayenne pepper
3 (16 ounce) cans great northern beans, undrained
6 cups chicken stock or 6 cups canned chicken broth
4 cups chopped cooked chicken, to taste
3 cups grated monterey jack cheese (about 12 oz.)

Steps:

  • Heat oil in large pot over medium high heat. Add onions and saute until translucent, about 10 minutes. Stir in garlic, then chilies, cumin, oregano, and cayenne and saute 2 minutes. Add undrained beans and stock and bring to a boil. Reduce heat and add chicken and cheese to chili and stir until cheese melts. Season to taste with salt and pepper and ladle into bowls. FOR FREEZING: Pour soup into a rigid container (or freezer bag), label and freeze. To reheat, thaw in refrigerator overnight or simply put frozen soup into a largepot and gently heat, with lid on and stirring often, till heated through.

4 lbs ground beef
1 large white onion
2 stalks celery, finely diced
1 tablespoon minced garlic
1 tablespoon kosher salt
4 cups beef stock
1 knorr beef bouillon cube
3 cups water
8 tablespoons adams chili powder
4 tablespoons gebhardt chili powder
8 teaspoons cumin
2 teaspoons salt
2 teaspoons mexican oregano
1 (15 ounce) can Contadina tomato sauce
1 teaspoon cayenne pepper
2 knorr chicken bouillon cubes
1 teaspoon garlic powder
1 teaspoon accent msg

Steps:

  • brown first five ingredients and drain fat to your liking.
  • add beef stock and beef bullion cube and enough water to cover beef mixture by one inch. simmer for an hour.
  • in a separate bowl mix together all dry spices.
  • add tomato sauce and 1 chicken bullion cube as well as half of the dry spice simmer one hour.
  • add remaing chicken bullion cube and spices stir and simmer for final hour.\.
  • serve and enjoy.
