Steps:
- Shape into patties and chill: Shape into patties, about 1/2 inch thick and larger than your bun. Refrigerate at least 30 minutes or until you are ready to cook.
- Prepare a charcoal or gas grill for cooking over high direct heat: Using tongs and a folded up paper towel dipped in vegetable oil, oil the grill grates. Make sure grill is hot and well oiled before laying down the patties.

BLUE CREEK BURGERS

- Preheat a griddle to medium. Make 4 equal-size patties from the ground bison meat, taking care not to overwork the patties.
- Season each patty with 1/4 teaspoon of Ted's Special Spice Mixture on each side, and place on griddle. Cover the burgers with a stainless-steel bowl or other heatproof dome-shaped object, and cook for 6 minutes. Turn burgers over, and season the top of each burger again with 1/4 teaspoon of the spice mixture. Cover with the dome, and continue to cook, 4 to 5 minutes for medium.
- Meanwhile, in a small skillet, melt butter over medium heat. When the butter has melted, add the mushrooms and saute about 5 minutes. Remove from heat and set aside.
- Place equal amounts blue cheese on each burger and cook until the cheese melts. Butter the cut side of the rolls and place, cut side down, on the griddle. Cook until lightly toasted. Serve each burger on a roll with 3 slices bacon and equal amounts sauteed mushrooms.

- Mix ground beef with gourmet sauce, salt, and pepper.

BLEU CHEESE BURGERS
These thick (man-sized), tender, and very creamy bleu cheeseburgers are another one of our recipes made 'on the fly' with whatever was in the pantry. Be sure and use a good quality bleu cheese (we like Stella Brand). Ideal served with with Recipe #264984. Use pita bread and add sliced tomatoes for a '2Bleu style' gyro.

- Mix all meat ingredients into a bowl until combined. Form 4 patties. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Heat oil and butter in a large non-stick skillet over med-high heat. Add burgers and sear to brown (about 2 minutes on each side).
- Place burgers onto cookie sheet and bake for 20 minutes until cooked throughout. Serve with Bleu Cheese sauce on warmed buns. NOTE: These burgers can also be cooked on the grill.
