A Simple Mexican Dish: How to Make Chilaquiles With Tortilla Chips image

An adaptable and easy chilaquiles recipe turns stale chips or leftover corn tortillas into a crunchy base for a customizable breakfast.

1 tablespoon vegetable oil
2 to 3 cups tortilla chips (approximately 30 chips from a bag)
1 1/4 cups green salsa (or red salsa )
1/2 cup queso fresco cheese (or cotija, crumbled)
2 tablespoons Mexican crema (or substitute regular sour cream thinned with a splash of milk)

Steps:

  • Gather the ingredients.
  • Lightly coat a large frying pan with vegetable oil. Heat over medium-high heat until oil shimmers.
  • Spread tortilla chips in pan.
  • Quickly pour salsa over chips and reduce heat to medium-low. Simmer the chips in sauce, undisturbed, until chips absorb some of the liquid and soften, for approximately 10 minutes.
  • Divide chilaquiles between two plates; sprinkle half of the cheese on each and drizzle with half of the crema.

2 tomatoes, chopped
6 dried chile de arbol peppers
1 onion, sliced
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
salt to taste
water to cover
2 tablespoons vegetable oil, or to taste
2 (6 inch) corn tortillas, cut into strips
4 eggs

Steps:

  • Combine tomatoes, chile de arbol peppers, onion, garlic, chicken bouillon, and salt in a saucepan; add enough water to cover. Bring to a boil; reduce heat and cook, stirring occasionally, until tomatoes and peppers soften, 5 to 10 minutes.
  • Transfer chile peppers to a blender using a slotted spoon; blend until smooth. Pour in tomato mixture; blend until smooth.
  • Heat oil in a large skillet over medium heat. Cook and stir corn tortillas in the hot oil until crispy, 3 to 5 minutes. Crack in eggs; stir until scrambled and set, about 5 minutes. Strain blended sauce over tortillas and eggs; mix well.

  • Take 10 minutes and prep all of your ingredients. Remove and discard husks from 12 oz. tomatillos and rinse off any sticky residue (don’t worry, it’s normal). Cut larger ones in half and set aside on cutting board. Cut 6 of the 8 scallions into 1" pieces. Thinly slice remaining 2 scallions and set aside on your board. Pull skin and bones off ½ rotisserie chicken and discard. Shred meat with your fingers and set aside on your cutting board. Cut 1 lime into wedges and set aside.
  • Heat 1 Tbsp. oil in a large skillet over medium until shimmering. Add 2 whole corn cobs, 1" pieces of scallions, and tomatillos (cut side up).
  • Cook, rotating corn and tomatillos and tossing scallions occasionally, until vegetables are lightly charred all over. This will happen at different times. The scallions and tomatillos will cook fastest, 3–4 minutes. As they’re done, transfer them to a large bowl.
  • The corn will take longest, 8–12 minutes total, so keep rotating cobs. When corn is lightly charred all over, transfer to cutting board and let cool; keep skillet close by because you’re going to use it again in a few minutes.
