PEANUT BUTTER ICE CREAM PIE
This is a quick dessert that I make before most pot-lucks or parties. I get rave reviews every time I take this anywhere. I got this recipe from my little sister, Brit.

Steps:
- Crust: Finely chop peanuts (Food processor works best).
- Mix butter with nuts.
- Press mixture into pie pan until it covers entire pan and put in freezer until filling is ready.
- Filling: Mix together ice cream, karo syrup and peanut butter.
- I found that a Kitchen Aid Mixer or Food Processor works best to mix.
- Once mixture is blended together add in peanuts and coconut.
- Scoop mixture into pie crust.
- It will be fairly soft and should smooth out evenly pretty easily.
- Freeze until ready to serve.
- I usually make this a few hours before serving, so it has a chance to freeze again (It makes serving much easier if the pie is froze).

PEANUT BUTTER ICE CREAM PIE
This is a wonderful summer treat for all peanut butter and ice cream lovers. It's very simple to make, but be sure to plan ahead, as it needs to set up in the freezer for 3 to 4 hours. If you don't care for chocolate, you can substitute graham cracker pie crusts. Time preparing includes freezing time.

Steps:
- Working quickly, blend the 1/2 gallon softened vanilla ice cream with the peanut butter, mix well.
- Stir in the Cool Whip until well blended.
- Quickly divide between the two pie crusts, sprinkle with chopped peanut butter cups, and freeze for 3 to 4 hours until frozen solid.
- Take out about 10 minutes before serving for easier slicing. Enjoy!
BLUE COAT INN PEANUT BUTTER ICE CREAM PIE
From a restaurant near Dover, Delaware, known as the Blue Coat Inn. (I don't know if it is still there or not.) Cook time is freeze time.

PEANUT BUTTER ICE CREAM PIE
I made this for my family recently and they loved it. I decided to make it with my 5-year old daughter and we had alot of fun. It's easy and perfect for the summer.

Steps:
- To soften ice cream, microwave in carton or glass bowl for 15-20 seconds.
- Spoon softened ice cream into pie crust, leaving about 1/4 in around the top. Smooth with spatula or back of spoon dipped in warm water.
- Spread half of a container of cool whip over the top of the ice cream.
- Drizzle peanut butter sauce over whipped topping. If you do not have peanut butter sauce, you can soften a few teaspoons of smooth peanut butter in the microwave for 10-15 seconds and then use a spoon to drizzle it.
- Gently place mini marshmallows over the top of the pie.
- Cover with lid or plastic wrap and place in freezer for at least 4 hours or overnight.
- Let sit for 15 minutes before cutting. Slice into 6-8 wedges and serve. If you have trouble cutting through it, dip knife in hot water.

- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, mix together crushed graham crackers, 3/4 cup finely chopped peanuts, and sugar. Stir in melted butter or margarine. Press mixture into a 9 inch pie plate.
- Bake crust in preheated oven for 8 minutes. Chill.
- In a medium mixing bowl, mix ice cream and peanut butter together on medium-low speed until combined. Pour mixture into chilled crust. Sprinkle with 1/4 cup chopped peanuts. Freeze for at least 6 hours. Remove from freezer 10 minutes before serving.

CHOCOLATE PEANUT BUTTER ICE CREAM PIE
This is an easy recipe....very little work involved and quick to put together. The major time involved is leaving the pie in the freezer to set! The 6 hours and 15 minutes of freezer time are not included in the prep or cooking time!

- Process cookies and peanuts in a food processor until finely crumbled, Add butter, and process until blended.
- Press crumb mixture into a 9-inch deep-dish pieplate; freeze for 15 minutes.
- Stir together the ice cream and chopped candy; spoon into the piecrust. Freeze for at least 6 hours. Remove from the freezer and let it stand 15 minutes before serving.
- Heat fudge sauce in a small saucepan over low heat, stirring constantly. Remove from heat; stir in coffee and coffee liqueur. Drizzle over pie.
PEANUT BUTTER ICE CREAM PIE
This recipe reminds me a lot of the old Big Boy's peanut butter ice cream pie. It was my favorite dessert they had. (besides the hot fudge ice cream cake, that is.) Now I can make it my own. This recipe came from one of the Southern Living annual cook books from the 1980's, though I'm not sure of the exact one. I did change it slightly as the original recipe called for simply freezing the pie for 8 hours, and a drizzling of chocolate syrup over the top just before serving, but everyone in my family agrees that it's better with hot fudge spread over the top.

- Combine peanut butter, whipped topping, and icecream; stir in peanuts; continue stirring until well blended. Spoon into crumb crusts. Freeze for an hour.
- Spread the top with room temperature hot fudge and sprinkle with extra crushed chocolate covered peanuts.
- Return to freezer and continue to freeze for 6 to 8 hours before serving. garnish with a bit of whip cream if desired.

Logan's Roadhouse "Peanut Butter Ice Cream Pie". The best selling dessert at Logan's! I am an employee and this recipe is authentic. It costs about $6 for a slice of this ice cream pie, but it'll cost about the same to make a whole pie! I've seen a lady come in and buy a pie for $30. This recipe is very, very simple and is a great dessert for holidays, parties, etc. It tastes great with Hershey's chocolate syrup drizzled all over it and that's exactly how we serve it at Logan's. - Scoop 2/3 tub of chocolate ice cream into Oreo pie crust.
- Place a piece of wax paper over pie (covering the whole pie) and pat down the ice cream until it is flat and filling the whole crust.
- Next, scoop half to 2/3 tub of "Bunny Tracks" ice cream onto the top of the chocolate ice cream.
- Again, place a sheet of wax paper over pie and pat down the "Bunny Tracks" ice cream until it is a smooth layer.
- Keep the pie covered with a sheet of wax paper and freeze until ice cream is hard.
- Freezing can take hours. I suggest making this pie at least 10-24 hours pior to serving, just to be sure it is ready when you are!
