PEAR AND GORGONZOLA CHEESE PIZZA
A very interesting appetizer pizza. Sounds strange, but everyone will love the unique combination of fragrant pears and distinctive Gorgonzola.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Place pizza crust dough on a medium baking sheet. Layer with Provolone cheese. Top cheese with Bosc pear slices. Sprinkle with walnuts and Gorgonzola cheese.
- Bake in the preheated oven 8 to 10 minutes, or until cheese is melted and crust is lightly browned. Remove from heat. Top with chives and slice to serve.

ROASTED PEARS WITH BLUE CHEESE AND WALNUTS
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the pears, cut sides up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Strip the leaves from the thyme branches and sprinkle over the pears. Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
- Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.

- In a small saucepan over medium-low heat melt the garlic-infused olive oil (or olive oil + minced garlic) with the butter.
- Hand-stretch or roll your dough: If you are hand-stretching your pizza dough: I like to rub a small amount of olive oil into my hands first; this allows me to shape the dough easier without it ripping accidentally from friction.
- Once the pizza has gone in the oven, I like to start my honey balsamic reduction. I usually rinse out the small pan I made the cheese sauce base in, but you are welcome to use a new pot if you prefer. Add the honey and balsamic vinegar to the pan over medium-low heat, stirring to combine. It should quickly reach a low and steady simmer but not a heavy boil. Allow it to maintain a steady simmer for around 5 minutes and begin to reduce. If it starts to boil rapidly, reduce the heat. Once the combined mixture coats the back of a spoon remove from heat until ready to use.
