BLUE CHEESE STUFFED TOMATOES

- Slice the top third (stem side) off each tomato. Cut a small slice off each bottom so that the tomatoes are flat and able to stand up. Using a melon baller or small spoon, remove the inside of each tomato to hollow out the center. Place the tomatoes on a plate or platter. Sprinkle the tomatoes with 1/4 teaspoon salt.
- Mash the cream cheese in a bowl with a rubber spatula until it is soft and malleable. Gently fold in the blue cheese, being careful not to overmix and break the blue clumps. Season with pepper. Use two small spoons to fill the tomatoes with the blue cheese mixture. (How much will depend on the size of the tomato; small tomatoes should get about 1 teaspoon of the mixture. You can also transfer the mixture to a pastry bag or resealable plastic bag with the corner cut off and pipe the cheese mixture into each tomato.)
- Toss the chives and bacon together in a small bowl. Top each tomato with the mixture. Drizzle hot honey over the entire plate. Serve.
BLUE CHEESE & SUN-DRIED TOMATO DRESSING
This is great with spinach salad and garlic croutons. Also great with romaine lettuce, celery and buffalo shrimp. It can even be used on sandwiches.

Steps:
- In a food processor or blender combine all ingredients except the 1 cup of the blue cheese and sun dried tomatoes.
- Blend until smooth and creamy.
- Place in a bowl and add the sun dried tomatoes and remaining blue cheese, mix well.
- Refrigerate until needed.

- In a small to medium sized dish, add a few drops of water. Stick Saran Wrap in the inside of the bowel (the water will help it stick to the bowl fully so your dip is molded perfectly!). Set aside for later.
- Divide 16 ounces of cream cheese between 3 bowls. (roughly 5+ ounces each) In bowl 1- add 1/2 cup of blue cheese (reserving the additional for the topping). In bowl 2- add pesto. In bowl 3- add sun-dried tomatoes. Mix well, until the cream cheese is fully mixed with each layer (see picture above of 3 bowls).
- Layer half of the blue cheese mixture on the bottom. Top with all of the pesto, then the sun dried tomato mixture and finish with the remaining blue cheese. (you can layer this anyway you like!)
- Refrigerate for 30 minutes, and turn upside down on a platter to serve. Remove Saran Wrap, and enjoy!
