Lettuce Wedges With Blue Cheese Dressing image

Juice of 1 large lemon
1 cup mayonnaise
1 cup buttermilk
1/2 cup sour cream
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
6 ounces blue cheese, crumbled (about 1 1/2 cups)
2 heads iceberg lettuce
10 slices bacon, cooked and crumbled
1 medium tomato, finely diced
Freshly ground pepper

Steps:

  • In a medium mixing bowl, combine the lemon juice, mayonnaise, buttermilk, sour cream, garlic powder and onion powder. Whisk the mixture together until smooth. Add the cheese and mix just until blended. Chill in an airtight container in the refrigerator at least 2 hours before serving.
  • Core and quarter each head of lettuce. Serve a generous dollop of dressing over each lettuce wedge and top with the bacon and tomato. Season with pepper.

1 sheet Reynolds Wrap® Heavy Duty Aluminum Foil
1 sheet Reynolds Wrap® Aluminum Foil
1 tablespoon olive oil
½ teaspoon salt
1 teaspoon ground black pepper, divided
4 cups sliced mushrooms
1 red onion, thinly sliced
1 pound ground beef
1 tablespoon Worcestershire sauce
¼ cup crumbled blue cheese
4 hamburger buns, split
4 Lettuce leaves
4 slices Sliced tomatoes

Steps:

  • Combine olive oil, salt, and 1/2 teaspoon black pepper in a small bowl. Center half of the mushrooms and onion on a sheet (12x18 inches) of Reynolds Wrap® Heavy Duty Aluminum Foil. Drizzle with half of the olive oil mixture. Bring up foil sides. Double-fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make two packets.
  • Line a baking sheet with Reynolds Wrap® Aluminum Foil. Mix the beef, Worcestershire sauce, and 1/2 teaspoon black pepper in a large bowl until combined. Shape beef mixture into eight thin, 4-inch diameter patties on the prepared baking sheet. Place 1 tablespoon of the blue cheese onto the center of each of four of the patties. Top with the remaining four patties; pinch edges to seal.
  • Transfer burgers on the foil and foil packets to the rack of an uncovered grill directly over medium-high heat and grill for 10 minutes or until burgers are done (160 degrees F) and vegetables are tender. Toast cut sides of hamburger buns during the last minute of grilling.
  • Open packets carefully by cutting along top fold with a sharp knife, allowing steam to escape; then open top of foil packet.
  • Serve burgers on buns with grilled vegetables and lettuce and/or tomato slices, if desired.

2 teaspoons light mayonnaise
2 teaspoons water
2 teaspoons fresh lemon juice
3 dashes hot sauce
Coarse salt
1/4 cup crumbled blue cheese
1 romaine lettuce, cored and chopped
4 medium carrots, quartered lengthwise and cut into 1-inch pieces
2 medium celery, quartered lengthwise and cut into 1-inch pieces

Steps:

  • In a large bowl, whisk together sour cream, mayonnaise, water, lemon juice, hot sauce, and 1/4 teaspoon salt. Fold in blue cheese.
  • Add romaine lettuce, carrots, and celery; toss to combine. Serve immediately.

This is so easy and so pretty. It makes a nice summer lunch, just add some fruit. I like Homemade french or Italian dressing on it.

1 head lettuce
1 (3 ounce) package cream cheese
2 tablespoons blue cheese
2 tablespoons grated carrots
1 tablespoon minced green pepper
2 tablespoons diced tomatoes
1/8 teaspoon pepper
1/4 teaspoon salt
1 teaspoon minced onion

Steps:

  • Wash lettuce; remove core.
  • With a tablespoon, remove enough of the lettuce around core to leave a cavity 2 to 3 in diameter.
  • Save removed lettuce for another use.
  • Combine cheeses, carrot, green pepper, tomato, pepper, salt and onion, pack firmly into lettuce cavity.
  • Wrap lettuce head in foil or plastic wrap and chill until center is solid.
  • Slice lettuce into wedges.
  • Serve with dressing of your choice.
  • A few pieces of fresh fruit (grapes, strawberries or melon) placed on the salad plate is very nice.

1 head iceberg lettuce
6 ounces cream cheese, softened
1/3 cup blue cheese, crumbled
2 tablespoons milk
1/4 teaspoon dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne pepper
prepared Italian salad dressing

Steps:

  • Core the lettuce, wash, and set aside to drain well. Cream the cheese, milk and spices with an electric mixer. Stuff the core of the head of lettuce with the cheese mixture, wrap in plastic wrap and refrigerate, preferably overnight. To serve, cut in six wedges, lay on a salad plate, garnish with grape tomatoes, cuke slices, purple onion, etc. and drizzle with your favorite dressing.
