The Oyster Bar in Bellingham, Washington serves a goat cheese souffle that inspired this dish. I prefer blue cheese, but any cheese will do. It's a smooth and creamy comfort food that I serve with soup or salad or just as a snack! No toast necessary!

1 tablespoon butter for greasing
½ (8 ounce) package cream cheese, softened
4 large eggs
1 cup heavy cream
4 ounces finely crumbled blue cheese
¼ teaspoon freshly ground nutmeg
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter six 1/2-cup ramekins.
  • Beat cream cheese in a bowl using an electric mixture until smooth. Beat in eggs 1 at a time, beating well after each addition. Add cream, blue cheese, nutmeg, black pepper, and salt. Mix well.
  • Scoop mixture equally into prepared ramekins. Place filled ramekins into a 9x13-inch baking dish. Pour 1/2 inch of hot water into the bottom of the baking dish.
  • Bake in the preheated oven until souffles are golden brown and puffy, 30 to 35 minutes. Remove from baking dish and let rest 5 to 10 minutes. Dry bottoms of ramekins before serving.

25g breadcrumbs
50g plain flour
1 tsp mustard powder
300ml milk
4 eggs
100g grated extra-strong cheddar (blue cheese, goat's cheese and smoked cheeses also work well)

Steps:

  • Preparing the soufflé dish: Heat oven to 200C/fan 180C/gas 6 and place a baking sheet on the middle shelf. Butter a 15cm soufflé dish generously, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Tip out any excess breadcrumbs.
  • Making a thick white sauce: In a pan, melt the butter over a medium heat; stir in the flour and mustard. Cook, stirring, for 1 min. Take off the heat and gradually stir in the milk, mixing it in thoroughly before adding more. Return to the heat and stir continuously until very thick (around 10 mins). Transfer to a bowl and allow to cool. Crack the eggs, placing the whites into a clean bowl and stirring the yolks into the sauce. Stir in cheddar and season well.
  • Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.
  • Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a 'top hat' effect; this ensures the soufflé rises above the rim and doesn't stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.

Handful dried breadcrumbs
2 firm dessert pears, 1 peeled, 1 left unpeeled, both quartered, then halved
50g butter
2 tsp soft brown sugar
4 fresh thyme sprigs, plus 2 extra
Smoked salt (optional)
1½ tbsp plain flour
125ml whole milk, warmed
2 large free-range eggs, separated
75g creamy blue cheese (we used vegetarian stilton), crumbled
For the bitter leaf salad
1 chicory, leaves separated
½ fennel bulb (and fronds), thinly sliced
Handful watercress and rocket leaves
Handful walnuts, roughly chopped
For the dressing
1½ tbsp extra-virgin olive oil
1 tsp dijon mustard
2 tsp white wine vinegar
You'll also need
600ml baking dish, greased with butter

Steps:

  • Sprinkle breadcrumbs into the greased baking dish, turning to coat the inside. Heat the oven to 200°C/180°C fan/gas 6.
  • Put all the pear slices in a frying pan over a high heat with 25g of the butter, the sugar, a splash of water and the thyme. Bring to the boil, then lower the heat slightly and cook for 15-20 minutes or until soft and caramelised. Season with smoked (or ordinary) salt and ground black pepper. Set aside to cool a little.
  • Meanwhile, heat the remaining butter in a pan. When it foams, stir in the flour and cook for 3-4 minutes, stirring with a spatula, until it smells biscuity. Take the pan off the heat and beat in the warm milk until smooth. Simmer gently for 3-4 minutes, stirring until smooth and thick.
  • Remove the pan from the heat and mix in the egg yolks and half the blue cheese. Put half the pears (a mix of peeled and unpeeled) in the prepared dish.
  • In a clean mixing bowl, whisk the egg whites using an electric hand mixer until they hold medium-stiff peaks. Mix 1 tbsp of the egg white into the egg yolk mixture to loosen it, then gently but briskly fold in the remainder using a metal spoon. Pour into the dish and top with the remaining cheese. Bake for 18-20 minutes until puffed up but with a slight wobble.
  • Meanwhile, toss the salad ingredients with the remaining pears. Whisk the dressing ingredients, drizzle over the salad and season with black pepper.
  • Serve the soufflé immediately, sprinkled with the extra thyme, along with the salad and some crusty bread if you like.

1/4 cup finely grated Parmesan, plus extra for sprinkling
3 tablespoons all-purpose flour
1 cup scalded milk
Kosher salt and freshly ground black pepper
Pinch cayenne pepper
Pinch nutmeg
4 extra-large egg yolks, at room temperature
3 ounces good Roquefort cheese, chopped
5 extra-large egg whites, at room temperature
1/8 teaspoon cream of tartar

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter the inside of an 8-cup souffle dish (7 1/2 inches in diameter and 3 1/4 inches deep) and sprinkle evenly with Parmesan.
  • Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, the cayenne, and nutmeg. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
  • Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Roquefort and the 1/4 cup of Parmesan and transfer to a large mixing bowl.
  • Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
  • Whisk 1/4 of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

3 cups ( 750 mL ) milk
12 oz ( 345 g ) butter
12 oz ( 345 g ) flour
Pinch salt
2 3/4 oz ( 80 g ) Parmesan cheese
2 3/4 oz ( 80 g ) blue cheese
7 egg yolks
7 egg whites
7 oz ( 200 g ) raisins
7 oz ( 200 g ) cider vinegar
7 oz ( 200 g ) honey
1 cinnamon stick
7 oz ( 200 g ) grapes, cut in half

Steps:

  • For the baked soufflé
  • Bring milk to a simmer in a pot over low heat.
  • In a small pot, melt butter and add flour, cook for 1 minute (this is called a roux), add in salt. Add simmering milk to roux, ⅓ at a time and beat with a wooden spoon.
  • Let the roux cool and then beat in cheese and egg yolks, then set aside. Whip egg whites to stiff peaks. Fold the egg whites into the cheese base ⅓ at a time, until it is light and fluffy. Pour the mixture into a well-greased muffin tin.
  • Bake at 150°F (65°C) for 15-20 minutes or until risen and is golden brown. Remove from oven and let cool, remove from tins and let cool. When ready to serve place back in an oven at 350°F (175°C) for 5 minutes to warm through.
  • For the Raisin and Grape Gastrique
  • Place everything in a pot with the exception of the grapes and cook down until it is reduced by half. Stir in the grapes and spoon over warm soufflé.

freshly ground black pepper to taste
5 large egg whites
Red Pepper Vinaigrette
6 cups mesclun (mixed baby greens, about 1/2 pound), rinsed and spun dry
Garnish: finely chopped red and yellow bell peppers and edible flower petals

Steps:

  • Make soufflés:
  • Preheat oven to 350°F. and generously butter six 1/2-cup soufflé dishes or custard cups.
  • In a small bowl stir together walnuts and 1/2 tablespoon flour. Coat soufflé dishes or custard cups with walnut mixture, knocking out excess.
  • In a small heavy saucepan melt butter over moderately low heat and whisk in remaining 3 1/2 tablespoons flour. Cook roux, whisking constantly, 3 minutes and add milk in a stream, whisking. Bring mixture to a boil over moderate heat, whisking, and cook until thickened, about 30 seconds.
  • Remove pan from heat and transfer mixture to a bowl. Cool mixture slightly. Whisk cheese, yolks, black pepper, and salt to taste into milk mixture until cheese is melted.
  • In a bowl with an electric mixer beat whites until they just hold stiff peaks. Stir one third of whites into cheese mixture to lighten and fold in remaining whites gently but thoroughly.
  • Divide soufflé mixture among prepared soufflé dishes or cups and put in a large baking pan just large enough to hold them. Add enough hot water to pan to reach halfway up sides of soufflés dishes or cups and bake soufflés in middle of oven until puffed and golden brown, about 25 minutes. Remove pan from oven and let soufflé dishes or cups stand in pan 15 minutes. (Soufflés will fall.)
  • Lightly butter a baking sheet.
  • Remove soufflé dishes or cups from pan and run a knife around edge of each dish or cup, carefully lifting edge of each soufflé slightly to help release it from bottom. Invert soufflé onto hand and carefully put, top side up, onto prepared baking sheet. Soufflés may be prepared up to this point 2 days ahead and chilled, covered.
  • Increase temperature to 425°F.
  • Bake soufflés in middle of oven until puffed slightly and heated through, about 5 minutes.
  • Make vinaigrette while soufflés are baking.
  • In a bowl toss mesclun with vinaigrette and divide among 6 salad plates. Arrange soufflés among 6 salad plates. Arrange soufflés along side of mesclun and garnish with bell peppers and flowers.

  • Preheat the oven to 400 degrees. Butter the inside of an 8­-­cup soufflé dish (7-1/2 inches in diameter x 3-1/4 inches deep) and sprinkle evenly with Parmesan. Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, the cayenne, and nutmeg. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
  • Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Roquefort and the 1/4 cup of Parmesan and transfer to a large mixing ­bowl.
  • Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy ­peaks.
  • Whisk one quarter of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the soufflé dish, then smooth the top. Draw a large circle on top with the spatula to help the soufflé rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees. Bake for 30 to 35 minutes (don’t peek!) until puffed and brown. Serve ­immediately.
