CHICKEN PEAR SALAD WITH BLUE CHEESE

Steps:
- 1. Arrange equal amounts of the salad greens on each of 4 dinner plates.
- 2. Spoon equal amounts of the dressing evenly over all.
- 3. Top with the chicken, onions and pears. Sprinkle evenly with the blue cheese and black pepper, if desired.
- For additional flavor and texture: Add 1/2 cup dried cranberries or unsweetened cherries on top with 2 ounces thinly sliced red onion (about 1/2 cup).
- For a lighter version: Use reduced fat blue cheese and fat-free dressing.
CHICKEN, PEAR AND BLUE CHEESE SALAD

- In a large salad bowl combine the greens, chicken and salad dressing.
- Toss gently to coat.
- Divide among 4 chilled, individual plates.
- Arrange pear slices on top of salad.

CHICKEN WITH PEAR AND BLUE CHEESE SALAD
I discovered this recipe in a cook book I recently purchased. It sounds delicious! I have not tried it, but I have chosen to share the recipe with you. Cook time is marinade time for the chicken. Hope you enjoy!

Steps:
- In a deep bowl, mix olive oil, shallots, garlic, tarragon and mustard.
- Salt and pepper to taste.
- Place the chicken breasts in this mixture, coating well.
- Chill for 4 hours.
- Drain the chicken, reserving the marinade.
- Quickly fry the chicken in a deep non-stick pan for 4 minutes on each side.
- Transfer the chicken to a large serving platter.
- Add the marinade to the pan, bring to a boil and sprinkle with the flour.
- Add the chicken stock, apples and walnuts.
- Gently simmer for 5 minutes.
- Return the chicken to the pan with the sauce in it.
- Add the heavy cream and cook for 2 minutes.
- Mix the salad ingredients together and place a small amount on each plate.
- Top each plate with a chicken breast and a spoonful of the sauce.
- Serve immediately.

BAKED CHICKEN BREASTS WITH SPINACH, PEARS AND BLUE CHEESE
wholefoodsmarket.com recipe, says "The fall flavor combination of pears and blue cheese brings a seasonal element to an otherwise simple chicken dish. Great for a dinner party!" It may appear like a fussy dish, but it was very easy and simple to prepare. I transferred the chicken breasts to a dish to bake while using the same pan for searing, sauteing the onions and spinach and for warming the pears. I served it with a millet pilaf dish. Next time I will use more red onion.

- Preheat oven to 375°F Generously season each chicken breast with salt and pepper. In a large, oven-proof skillet heat 1 tablespoon olive oil and sear breasts 2 to 3 minutes each side until lightly golden. Place pan in oven and bake until chicken is done, about 15 minutes.
- While chicken is cooking, heat 1 tablespoon olive oil in a large pan over medium heat and saute red onion until just softened, 2 to 3 minutes. Add spinach and toss until wilted. Season with salt and pepper and transfer to a large platter or divide evenly between 4 plates. Wipe out pan and heat remaining 1 tablespoon olive oil with vinegar. Add pears and gently heat to warm. Stir in parsley.
- Place cooked chicken breasts on spinach. Top with warmed pear slices and about 2 tablespoons blue cheese per breast.
