It doesn't get simpler or more delicious than these cheesy egg noodles! Bake egg noodles in a creamy cheese sauce for an easy dinner!

6 cups egg noodles. cooked to al dente
1/4 cup flour
1/4 cup butter
2 cups whole milk
3 cups sharp cheddar cheese (divided)
salt and pepper to taste

Steps:

  • Pre-heat your oven to 350 °F.Cook your pasta according to the instructions on the bag. Drain and place in a greased medium sized casserole dish.

  • Place the butter in a sauce pan and heat it until it's melted, then stir in the flour.
  • Add in a very, VERY small amount of milk. Just enough to mix it in. Keep adding a small bit of milk at a time, constantly stirring, until you have added it all and the mixture is smooth.
  • Add in 2 cups of the shredded cheese, stirring to melt it in completely.
  • Once the cheese has melted and the sauce has thickened, pour over the noodles in the casserole. Top with the remaining cup of cheddar cheese.
  • Bake covered in the oven for 20-25 minutes, then uncover and let the cheese melt and brown for another 10-15 minutes. Serve and enjoy!

1/4 teaspoon beef bouillon granules

3/4 cup frozen sugar snap peas
4 ounces cream cheese, softened
1/3 cup crumbled blue cheese
1 tablespoon all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1/3 cup 2% milk
Hot cooked egg noodles

Steps:

  • In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towel. In the same skillet, cook beef over medium heat until no longer pink. Combine bouillon and water; stir into skillet. Add peas. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until peas are tender., Meanwhile, in a small bowl, beat the cream cheese, blue cheese, flour, salt and pepper until smooth. Stir in milk. Gradually stir into beef mixture. Cook and stir for 2-3 minutes or until heated through. Serve over noodles; sprinkle with bacon.

1/2 pound capellini (or spaghetti)
2 tablespoons unsalted butter
1/3 pound blue cheese (crumbled)
1/4 cup fresh parsley (finely chopped)

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup of the pasta water, then drain the noodles.
  • Turn the heat down to low and add the butter to the pot.
  • When the butter has melted, add the noodles back to the pot and stir to coat.
  • Slowly add the blue cheese, stirring the noodles so the cheese melts.
  • As you add the cheese, also drizzle a little of the reserved pasta water over the noodles, using as much or as little as needed. The water will keep the noodles from clumping together and thin out the blue cheese as it melts so the sauce has a lighter, less-sticky texture.
  • Once the blue cheese has mostly melted, stir in the parsley. Add salt to taste.
  • Serve immediately and enjoy!

If your blue cheese is very strong, start by adding a lesser amount then adding more to taste.

2 tablespoons extra-virgin olive oil
1 sweet onion, chopped
2 garlic cloves, minced
1/2 cup butter, divided
2 tablespoons flour
1 pint heavy cream
1/2 cup crumbled blue cheese
4 cans green beans, drained very well
1 cup french fried onions, chopped
1 cup panko breadcrumbs
kosher salt & freshly ground black pepper

Steps:

  • Preheat oven to 400F.
  • Drain green beans in a colander. Allow to drain thoroughly.
  • Heat EVOO in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more. Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes. Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated (small pieces are okay). Season to taste with salt and pepper.
  • Gently add green beans to skillet and mix until well-coated. Pour mixture into a baking dish.
  • In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole.
  • Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned. Serve immediately.
