This thick, creamy dip is my mom's recipe and a family favorite for ringing in the season. It also makes a tasty substitute for mayonnaise on chicken and turkey sandwiches.

Steps:
- Sprinkle salt over garlic and chop, occasionally smearing mixture with blade of knife, until paste forms. Whisk garlic paste, vinegar, and thyme in a medium bowl. Add cheese; mash with the back of a fork until cheese is finely crumbled. Stir in sour cream and mayonnaise. Season dip to taste with salt and pepper. Serve with assorted vegetables. DO AHEAD: Can be made 2 days ahead. Cover and chill.

WARM BLUE CHEESE DIP WITH GARLIC AND BACON
Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
- Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
- Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
- Bake covered in the preheated oven 30 minutes, or until lightly browned.

BLUE CHEESE AND ROASTED GARLIC DIP/SPREAD
This is the most amazing dip that is also wonderful spread on grilled steaks and burgers and also wonderful served on the side with raw veggies --- fresh garlic may be used, but be cautious only to use a small amount 1 teaspoon minced or less of fresh will do fine as it will overpower the other ingredients, I use about 1 tablespoon roasted for this, start by adding in a small amount at a time, and increase the amount of roasted garlic (fresh or roasted) as this dip gets stronger when left left to chill for the full 24 hours, so you might want to start with a small amount of garlic and add in more the following day if desired --- this is a dip I created years ago and still serve it today at get togethers it is the first to completey go so I always make a double batch --- gorgonzola cheese can be replaced with blue cheese for a milder flavor --- plan ahead this dip needs to chill 8-24 hours before using, you may adjust all ingredients to taste, if you prefer a more creamy dip increase the sour cream slightly, but start with the stated amounts, you will love this dip! :)

THICK AND CLINGY BLUE CHEESE DIP RECIPE

- Use a fork to press blue cheese crumbles into small (but not super fine) crumbs. Set aside.
- Soften cream cheese in the microwave for about 20 seconds. It should be soft but not melted.
- Combine the soft cream cheese with the sour cream, mayo, sugar and seasonings.
- Mix to fully combine.
- Add the blue cheese crumbles and fold in.
- Add lemon juice and salt and pepper to taste.
- The consistency should be a LOT stiffer than pudding, more like spackle, and it will thicken as it chills.
- For thinner consistency, add a teaspoon of milk or water and stir if it's too stiff to comfortably dip a cracker into without breaking.
- It's delicious eaten right away, no chilling needed!
