BLUE CHEESE SWIRL BREAD



Blue Cheese Swirl Bread image

This easy skillet bread gets lightly crusty on the outside, but stays soft and fluffy inside. The dough is shaped into a log, then blue cheese is pressed into the dough before it's rolled into a spiral. The finished loaf smells amazing, and looks like it took way more effort than it did. Serve alongside soups or stews, or all on its own as a tasty snack.

1 cup/235 milliliters whole milk
4 tablespoons/55 grams unsalted butter (1/2 stick), plus more for greasing
1/2 cup/120 milliliters cool water
4 cups/510 grams all-purpose flour
2 1/4 teaspoons instant yeast
1 teaspoon kosher salt
7 ounces/200 grams creamy or firm blue cheese, crumbled
Heavy cream, for brushing

Steps:

  • In a medium saucepan, heat the milk and butter over medium until the butter is melted. Add the cool water and stir to combine. The mixture should feel just warm to the touch (about 95 degrees). If needed, let cool before using.
  • In the bowl of an electric mixer fitted with the dough hook attachment, combine the flour, yeast, salt and milk mixture on low speed, 3 minutes. Increase the speed to medium and continue to mix until smooth, another 3 minutes.
  • Transfer the dough to a lightly greased medium bowl and cover the bowl with plastic wrap. Let rise for 1 hour in a warm place. Generously grease a 10-inch cast-iron or oven-safe skillet with about 1 1/2 tablespoons unsalted butter.
  • On a lightly floured surface, roll the dough into a log about 22 inches long and 1 1/4 inches in diameter. Press the crumbled blue cheese into the log in a long stripe down the middle.
  • Starting at one end, roll the log into a spiral (the blue cheese should mostly be folded inside the spiral). Place the dough into the prepared skillet. Cover with plastic wrap and let rise in a warm place until noticeably puffy, 35 to 45 minutes.
  • Position a rack in the middle of the oven and one below. Heat the oven to 375 degrees. Uncover the dough, and brush the surface with heavy cream.
  • Place a baking sheet on the lower rack of the oven to catch any cheese that may bubble over. Bake the bread on the middle rack until the bread is golden-brown, 30 to 35 minutes. (It should have an internal temperature of 195 degrees in the thickest part of the loaf.)
  • Let cool for at least 15 minutes before serving. Serve warm or at room temperature.

A friend showed this to me years ago, and I added and changed amounts around to fit my taste. This goes great with any pasta dish, steak, or even seafood. If stored in a plastic bag, either open bag and microwave with a cup of water in microwave, or place 1 tablespoon of water in bag to ensure moist bread after heating.

1 (12 ounce) loaf French bread
½ cup butter at room temperature (divided)
4 teaspoons garlic powder, divided
1 (8 ounce) bottle blue cheese salad dressing
½ cup shredded mozzarella cheese, divided
1 (3 ounce) package grated Parmesan cheese, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Cut French bread loaf in half lengthwise and spread butter on both cut sides. Sprinkle each side with 2 teaspoons garlic powder. Place halves on prepared baking sheet.
  • Bake in the preheated oven until butter has melted and bread is hot but not toasted, about 5 minutes. Remove bread from oven.
  • Turn on oven's broiler.
  • Spread half the bottle of blue cheese salad dressing over each half; sprinkle each piece of bread with mozzarella cheese and Parmesan cheese.
  • Broil until mozzarella cheese has melted and is slightly browned, 1 to 4 minutes. Watch carefully to prevent burning. Let bread cool 2 to 3 minutes before cutting into serving pieces.

FOR THE GARLIC BUTTER:
1 pound butter, softened
2 tablespoons chopped shallots
3/4 cup chopped garlic
1/4 cup fresh lemon juice
2 tablespoons chopped flat leaf parsley
Salt and fresh ground pepper to taste
FOR THE FONDUE:
16 ounces crumbled Maytag bleu cheese
1 quart heavy cream
1/4 chopped white onion
1/3 cup white wine
1 tablespoon unsalted butter
Salt and fresh ground pepper to taste
FOR PRESENTATION:
1 32 oz. loaf ciabbatta
2 T Chopped fresh chives for garnish

Steps:

  • To make the garlic butter: Combine all the ingredients in a food processor or Kitchen Aid mixer with paddle attachment and mix until thoroughly combined.
  • To make the fondue: Saute the onion in 1 Tbutter over medium heat until translucent, then deglaze with the white wine and reduce. Add the cream, bring to a boil and then reduce to a simmer. Add the cheese and reduce until the fondue's texture is thick and creamy and can coat the back of a spoon. Season with salt and pepper to taste. Serve immediately.
  • For presentation: Cut the bread into four rectangles and then cut those pieces half. With a spatula, spread a layer of garlic butter onto the top of each piece and place in a preheated 450-degree oven until golden brown (8-10 minutes). Remove and let cool slightly before cutting each piece into four more pieces.
  • Pool the warm fondue on the bottom of a serving plate and then stack the garlic bread pieces, Lincoln Log-style in the middle of the pool. Garnish with the chopped chives and serve immediately.
  • Makes 32 pieces of garlic bread.

1 tablespoon oil
1 small yellow onion, finely chopped
Freshly ground black pepper, to taste
2 cloves garlic, minced
13.5 oz (~3 cups) all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups blue cheese crumbles
1 (12 oz) bottle lager (cheap beer works well, don't waste expensive beer)
cooking spray (I like to use this non-aerosol EVO sprayer)
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the oil in a pan over medium-low heat, and add the onions. Cook, stirring occasionally, until browned, about 10 minutes. Season generously with black pepper and add in the garlic. Cook for a minute, then remove from heat.
  • Whisk the flour, sugar, baking powder, and salt together in a large bowl until well-combined. In the center of the mixture, create a well. Add the onion and garlic, the blue cheese, and the lager to the dry mix. Stir until the mixture becomes moist, making sure to not over-stir.
  • Spray a 9 x 5 pan with cooking spray and pour or spoon in the batter. Drizzle half of the butter (1 tablespoon) over the batter and bake for 35 minutes. Then, remove from the oven and pour over the remaining butter. Bake for 25 more minutes, or until the bread turns golden brown and a toothpick comes out clean. Cool in the pan for 10 minutes, then remove from the pan and cool on a wire rack until ready to eat.

1 (16 1/3 ounce) package pillsbury grands homestyle biscuits
1/4 cup butter or 1/4 cup margarine

Steps:

  • Melt butter or margarine in pan; add blue cheese.
  • Stir until blue cheese is melted and smooth.
  • Take each dinner roll, and cut it into 6 pieces.
  • Oil an 8x8-inch (or similar size) pan or glass baking dish (glass baking dish is preferred).
  • Pour butter/blue cheese mixture into the baking dish.
  • Place the cut up pieces of dough into the baking dish, on top of the blue cheese/butter mixture, crowding the pieces so that they touch.
