BLUE CHEESE AND GARLIC BREAD
A friend showed this to me years ago, and I added and changed amounts around to fit my taste. This goes great with any pasta dish, steak, or even seafood. If stored in a plastic bag, either open bag and microwave with a cup of water in microwave, or place 1 tablespoon of water in bag to ensure moist bread after heating.

BLUE CHEESE GARLIC BREAD
Saw this in a Holiday cookbook and just had to jot it down. I love blue cheese and garlic so I knew it would be a winning combination. I use my Whole Wheat French Bread Recipe #102132 for the bread. When I don't have chives available, I use 1/4 tsp. onion powder. Excellent with spaghetti!

- Combine the yeast and the water in the bowl of a stand mixer fitted with the paddle attachment and let it sit for 15 minutes, until the yeast starts to foam. Stir in the salt.
- Start adding the flour, 1 cup at a time, mixing well after each addition. Continue adding flour until you have a smooth dough. Switch to the dough hook once the dough starts to come together. (*You may need more or less than 5 cups of flour. The dough will start to pull away from the sides of the bowl, but should still be slightly tacky.)
- Lightly flour a work surface. Pour the dough onto the floured surface, and knead for a few seconds, until the dough is in a smooth ball.
- Lightly grease a large bowl and add the dough to the bowl. Turn the dough over to coat the dough in the oil. Cover the bowl with plastic wrap that has been sprayed with nonstick cooking spray. Place the bowl in a warm place and let the dough rise until it has doubled in size, 2-4 hours.

- Mix the yeast with warm water (not too hot though). Then add all the ingredients and knead in a food processor at medium speed for a few minutes. Reserve in a warm place covered with humid cloth and let it rise for at least 30 min to 1 hour (for example a warm part in the house or the oven at 30 °C).
- Heat olive oil in a frying pan and sliced onions and fry. Add salt and pepper. Fry until onions become translucent. I like them to cook long so that they become almost caramelized then sooo tasty! (as in mu caramelized onions recipe but it’s not necessary).
- Preheat your oven to 220 °C. Spread the dough on the baking sheet covered with parchment paper. Cover the central part with blue cheese cream. Arrange walnuts (each walnut cut into 4 to 8), onions and cubes of the remaining Fourme d'Ambert. More or less depending on your taste.
