BLUE CHEESE AND BEEF MEATBALLS
Juicy meatballs with tasty bursts of blue cheese and onion. My own recipe, and my husband absolutely loves them.Good enough to eat alone. I personally think they would also be good in hoagie sandwiches.

- Preheat oven to 350 degrees F (175 degrees C). Line a jelly roll pan with aluminum foil.
- Mix ground beef, bread crumbs, eggs, blue cheese, onion, pepper, and salt together in a bowl; shape into 22 meatballs and arrange onto prepared pan.
- Bake meatballs until they are very firm, hot, and grey in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

A Party Favorite - This Cheese Ball is the best!! I've tried many different cheese ball recipes, but this one seems to have the right combo of ingrediants and flavors! It's also very simple to make!!

- Roll each cheese ball in the chopped walnuts, covering entire surface.

- In a medium bowl, stir together the cream cheese, blue cheese, Cheddar cheese, onion and Worcestershire sauce. Transfer to a separate bowl that has been lined with plastic wrap. Cover and refrigerate overnight.
- The next day, gather the cream cheese mixture into a ball. Spread the walnuts out on a dinner plate. Roll the cheese ball in nuts until coated. Refrigerate or serve immediately.

EASY BLUE CHEESE BURGERS
I'm a college student with a limited budget and a limited space for cooking. I make these burgers on a Foreman grill and they're quick and delicious!

- In a large bowl, mix all ingredients except blue cheese. Make sure salt and pepper are distributed evenly throughout the mixture.
- Divide beef mixture into 4 sections (these will eventually become 4 burgers).
- Take approximately 2/3rds of a single section, form into a burger shape, and use your thumb to form a deep imprint in the middle.
- Fill imprint with 1/4 of the blue cheese.
- Take the remaining 1/3rd of the beef mixture from that section and cover the blue-cheese filled imprint in the burger, flattening around the edges to ensure that the ground beef stays together and the blue cheese does not leak out.
- Repeat and then grill burgers to desired doneness.
- Place grilled burger on bun and top with more crumbled blue cheese if desired.
- Watch out when you bite into the burger - the blue cheese will be hot!
BLUE CHEESE & BACON BURGERS
My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses.

- Mix together the softened butter and blue cheese until well mixed. Roll into a log about 2-3 inches in diameter and wrap in Parchment paper. Refrigerate until hardened. You can also freeze if you don't plan to use for a while.
- Once the butter is hardened, mix together the remaining ingredients in a large bowl by hand. Form the meat into 4-6 balls (depending on how big you want your burgers).
- Slice 1/2 inch slices from hardened blue cheese/butter log. Place each butter/blue cheese circle into the middle of the burger ball and press into middle, shaping into a thick burger shape. Repeat for all remaining burgers. Ensure that butter/blue cheese is sealed into the middle of the meat. Grill burgers until desired doneness.
- Cook bacon as usual on stove or oven. If you have non-peppered bacon, add a generous amount of pepper before cooking.
- Serve burgers on your favorite bun with bacon. Add your favorite toppings -- fresh tomatoes, lettuce, extra blue cheese, ketchup, mustard, extra blue cheese, etc.
- These are awesome! I love to make them huge -- 1/3 to 1/2 pounders and serve without a bun and have a salad as a side dish. They are so yummy!

GRILLED BLUE CHEESE BURGERS
A great twist on the grilled burger! A must for blue cheese lovers, and the sauteed mushrooms finish these off perfectly! I had these at a friend's cook-out, and I had to have the recipe. If you like your meat spicier, feel free to add more spice to the meat mixture.

- Combine ground beef, salt, and pepper in a large bowl; mix well, and shape into 16 thin patties. It easier to form 8 equally portioned balls of meat, then halve it to form the patties.
- Combine cream cheese, blue cheese, onion, horseradish, and mustard in a small bowl; beat at medium speed of an electric mixer until blended. Divide cheese mixture evenly among 8 patties; spread to within 1/2 inch of edges. Top with the remaining patties, pressing edges to seal. Make sure to seal them well.
- Grill hamburgers over medium-hot coals (350 to 400 degrees) 10 minutes on each side or to desired degree of doneness. Set aside, and keep warm.
- Saute mushrooms in melted butter in a skillet until tender. Top burgers with sauteed mushrooms.
