CHEESY BAKED SALMON
This is such a simple recipe, and it is so delicious! Salmon is baked with garlic and dill, and topped with Cheddar cheese and green onions.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.
- Bake 20 minutes in the preheated oven. Top with Cheddar cheese and green onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.

Steps:
- Preheat oven to 400 degrees F.
- In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
- Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
- Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
- For the sauce:
- Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.

A friend mentioned baking salmon with blue cheese at dinner one night. Salmon? Blue Cheese? Sounded YUM to me! I couldn't find an actual recipe here so I came up with my own.

- 1. Preheat oven to 375 degrees.
- 2. Place salmon fillets in pan.
- 3. Lightly season both sides with salt and pepper.
- 4. Spoon 1 -2 tablespoons of blue cheese dressing over the top of the salmon. Put enough to cover the top of the fillet.
- 5. Bake for 25 minutes (or until the fish flakes easily) in oven.
- 6. Option using blue cheese crumbles: Bake for 20 minutes, spread the blue cheese crumbles on top and bake another 5 minutes.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat olive oil in a large heavy skillet over medium heat. Saute onion and bell pepper until onion is soft and translucent. Add Italian seasoning and kalamata olives. - Skin the salmon fillets. Make an incision in the middle of each one along the length, halfway through its thickness. Cut or form batons from the cheese to fit into the incision in the salmon and press it in.
- Prepare a double layered length of kitchen foil about twice as long as the salmon fillet. Dot some butter in the middle and place a fillet on top of it. Drizzle with a bit of honey, then raise the sides of the foil around the salmon so it sits there like in a boat.
- Close up the edges and fold over along the whole length to seal it well but leave some space inside around the fillet. Do the same with the other fillet for individual papillotes.

- If your salmon has thin sides and ends, cut off and square up. This helps with consistent even cooking. Coat the salmon with the salt, pepper and harissa. Coat the cast iron skillet well with canola cooking spray. Place the skillet on medium high heat and let it get hot. Spray some of the canola oil on the top of the salmon.
- When the skillet is hot, place the salmon (skin side up) in it, and let it sear for about 2-3 minutes to get golden brown. Reduce heat to medium low, cover with a lid and cook another 3-4 minutes. - When done, remove skillet from heat and transfer the salmon to a serving dish. Zest with some of the lemon and squeeze half of the lemon juice on the salmon leaving the other half to slice for individual servings. (Note: Remove the bottom layer of skin if you prefer.) Dollop some of the bleu cheese dressing on the salmon and sprinkle with fresh dill and capers (optional).Serve immediately.
