EASY DEVILS ON HORSEBACK WITH BLUE CHEESE
Devils on horseback are one of my favorite finger foods when I am entertaining and, stuffed with blue cheese, they are simply the best. Make sure you don't cut the date all the way through when pitting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Stuff each date with 1/2 to 1 teaspoon of blue cheese and wrap date with half a slice of bacon; secure with a toothpick. Arrange on the baking sheet.
- Bake in the preheated oven until bacon is crispy, 15 to 20 minutes.

A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

- Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
- In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
- Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

BLUE CHEESE AND BACON TRUFFLES

- Place the bacon in a medium skillet and heat over medium heat. Cook the bacon until almost entirely crispy, about 10 minutes. Add the shallots and cook for an additional 2 minutes. Using a slotted spoon, scoop the bacon mixture into a medium bowl. Add the cream cheese and gorgonzola and mix well with a rubber spatula. Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
- When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.
MAPLE SRIRACHA DEVILS ON HORSEBACK
Medjool dates are stuffed with blue cheese, wrapped in bacon, and crisped with a Maple-Sriracha glaze. Maple Sriracha Devils on Horseback are a perfect party snack!

Steps:
- Soak 18 plain wooden toothpicks in water for 20-30 minutes.
- Preheat oven to 400 degrees F with rack in middle position. Line a baking sheet with foil and place an oven-safe wire rack onto the pan.
- Using a paring knife, cut a lengthwise slit into each date to open (don't slice in half entirely). Remove and discard pits. Fill each date with 1/2 to 1 teaspoon crumbled blue cheese (depending on date size), pressing to stuff. Close dates and press edges together to seal.
- Cut each slice of bacon in half. Wrap dates in bacon, overlapping edges and securing with a soaked toothpick. Transfer to the wire rack.
- Stir together maple syrup and Sriracha and lightly brush each wrapped date with glaze. Bake 15 minutes. Remove from oven and brush with a second coating of glaze. Continue baking for 5-10 minutes, until bacon is crisp (depending on the thickness of your bacon). Serve hot or warm.

BLUE CHEESE BACON DEVILS ON HORSEBACK
Steps:
- Soak the dates in the sherry for 2 hours, making sure they're fully submerged.
- Meanwhile, place the blue cheese in a small zip-top bag, then snip one corner off the bag, leaving about a 1/2-inch opening. Leave at room temperature until ready to fill the dates.
- Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).
- Drain but do not rinse the dates. Use a pair of scissors to open each date lengthwise.
- Pipe roughly 1/2 teaspoon of the cheese into each date, then wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
- Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.

- Preheat the oven to 400 degrees F. Cover a metal rimmed baking sheet with foil, dull side up, and fit with a baking/cooking rack; spray with non-stick spray.
- Using kitchen scissors insert the lower blade of the scissors into the pitted area of the date (see photos) and cut a vertical opening (note: a paring knife can also be used but do not cut through the entire date, just one side). Inset an almond into the cavity.
- Holding the date together, wrap 1/2 slice of bacon around the date (will will wrap around twice) and secure the end of the bacon with a wooden toothpick.
- Place the Devils on Horseback on the prepared baking sheet leaving room between them. Bake in the middle of the oven for 30 minutes or until the bacon is done to your liking. The bacon will crisp further when out of the oven. The broiler can be turned on for a few minutes at the end if crisp bacon is desired however leave the pan in the middle of the oven and watch closely. Serve hot.

- Pit the dates: use a sharp paring knife to make a slit down the length of each date. Use your fingers to pull the date open and remove the pit. Remove stems if there are any.
- In a medium bowl, whisk together the maple syrup, dijon, brown sugar, and a few cracks of black pepper. Add the dates to the mixture and toss to coat.
- Prepare a baking sheet lined with parchment paper. Use your thumb and forefinger to squeeze the end of each date to open it up, and stuff it with blue cheese. Wrap each stuffed date in a piece of bacon, placing the end of the bacon under the date to secure. Arrange the wrapped dates on the parchment lined baking sheet and use a pastry brush to dab the remaining maple mixture on top.
