DEVILS ON HORSEBACK

Devils on Horseback image

A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

Time 1h35m

Yield 14 truffles

Number Of Ingredients 6

6 ounces double-smoked bacon, chopped fine
2 small shallots, minced
4 ounces cream cheese, at room temperature
4 ounces crumbled Gorgonzola, at room temperature
1 1/2 cups finely crushed pretzels
2 tablespoons minced fresh chives

Maple Sriracha Devils on Horseback image

Medjool dates are stuffed with blue cheese, wrapped in bacon, and crisped with a Maple-Sriracha glaze. Maple Sriracha Devils on Horseback are a perfect party snack!

Provided by Amanda Biddle

Categories     Appetizer

Time 50m

Number Of Ingredients 5

18 Medjool dates
1/2 cup crumbled blue cheese
9 slices bacon ((I use Applewood Smoked))
3 tablespoons pure maple syrup
2 teaspoons Sriracha sauce ((more or less, to taste - see note))

Steps:

  • Soak 18 plain wooden toothpicks in water for 20-30 minutes.
  • Preheat oven to 400 degrees F with rack in middle position. Line a baking sheet with foil and place an oven-safe wire rack onto the pan.
  • Using a paring knife, cut a lengthwise slit into each date to open (don't slice in half entirely). Remove and discard pits. Fill each date with 1/2 to 1 teaspoon crumbled blue cheese (depending on date size), pressing to stuff. Close dates and press edges together to seal.
  • Cut each slice of bacon in half. Wrap dates in bacon, overlapping edges and securing with a soaked toothpick. Transfer to the wire rack.
  • Stir together maple syrup and Sriracha and lightly brush each wrapped date with glaze. Bake 15 minutes. Remove from oven and brush with a second coating of glaze. Continue baking for 5-10 minutes, until bacon is crisp (depending on the thickness of your bacon). Serve hot or warm.

BLUE CHEESE BACON DEVILS ON HORSEBACK

Blue Cheese Bacon Devils on Horseback image

Provided by Alton Brown

Categories     appetizer

Time 2h40m

Yield 20 dates

Number Of Ingredients 4

20 pitted Deglet Noor dates
1 cup dry sherry
2 ounces blue cheese
7 slices bacon (not thick-cut), cut into 3-inch lengths

Steps:

  • Soak the dates in the sherry for 2 hours, making sure they're fully submerged.
  • Meanwhile, place the blue cheese in a small zip-top bag, then snip one corner off the bag, leaving about a 1/2-inch opening. Leave at room temperature until ready to fill the dates.
  • Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).
  • Drain but do not rinse the dates. Use a pair of scissors to open each date lengthwise.
  • Pipe roughly 1/2 teaspoon of the cheese into each date, then wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
  • Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.

  • Pit the dates: use a sharp paring knife to make a slit down the length of each date. Use your fingers to pull the date open and remove the pit. Remove stems if there are any.
  • In a medium bowl, whisk together the maple syrup, dijon, brown sugar, and a few cracks of black pepper. Add the dates to the mixture and toss to coat.
  • Prepare a baking sheet lined with parchment paper. Use your thumb and forefinger to squeeze the end of each date to open it up, and stuff it with blue cheese. Wrap each stuffed date in a piece of bacon, placing the end of the bacon under the date to secure. Arrange the wrapped dates on the parchment lined baking sheet and use a pastry brush to dab the remaining maple mixture on top. Bake in the preheated oven for 25 minutes, then broil for 3 minutes more (watch them so they don’t burn!) Serve hot!

DEVILS ON HORSEBACK - CULTURE: THE WORD ON CHEESE
This recipe is endlessly adaptable and very forgiving of substitutions. We prefer a mellow, English-style blue cheese in this recipe, but it you want something stronger, go for it. Marcona almonds add a nice crunch to these bite-sized appetizers, but if you can't find them or don't like them, feel free to just use a touch more cheese.
