Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.

PAULA DEEN'S CARAMELIZED VIDALIA ONION AND BLUE CHEESE HOT DIP
This is a quick and easy dip to make that everyone seems to love. I used panko bread crumbs because that is what I had in my pantry. I also found that you needed to cut the onion pieces into smaller strips (I took the onion and cut it in half and then half again). I also used Clemson Blue Cheese.

- Heat the butter in a large skillet or pot over medium heat. Once melted, stir in the onions with a big pinch of salt and pepper. Cook for 5 minutes, just until the onions begin to soften. Turn the heat down to low (or medium-low, if low isn’t cooking them), and cook, stirring often, until the onions are dark brown and caramely, anywhere from 30 to 60 minutes, depending on how much you want to babysit them. This will take a while, but the onions are in smaller pieces, so are also more apt to burn. Keep an eye on them and stir often, reducing the heat when needed. Add a splash of water to the pan if it gets dry at any time.
- Let the onions cool slightly before adding them to the dip. Alternately, you can also caramelize the onions a day or two ahead of time! I will caramelize them and store them in a container in the fridge. I do reheat them on low heat (either in a pan or microwave) just to warm the solids up a bit.
- Whisk together the sour cream, mayo, garlic powder and a big pinch of salt and pepper. Once the onions are caramelized, stir them in. Continue to stir until everything is combined - it will come together. Taste the dip and if you need more salt, add it in.
- This stays great in the fridge if you make it ahead of time - it will thicken up a bit. It is also great served immediately. Serve with chips, crackers, pretzels, veggies - anything!

- Place a large skillet on the stove and turn on the heat to medium high. Add the vegetable oil and shallots. Once the skillet is hot and the shallots begin to cook, turn the heat down to medium low. Continue to cook the shallots until they are golden to dark brown. You will need to stir the shallots on occasion so that they do not burn. The process of caramelizing shallots takes some time, at least 20 minutes, and you should pay attention to them. I often need to adjust my heat either up or down to prevent them cooking too fast and burning. Once done, set aside to cool slightly.
- In a medium bowl add the sour cream and mayonnaise. Stir until evenly combined. Add the room temperature blue cheese and use the side of your spoon or rubber spatula to stir and smash the blue cheese into the sour cream mixture. You want to have different size chunks of blue cheese blended into the sour cream.
- Stir in the caramelized shallots and taste for seasoning. It is a good idea to taste with the chip or vegetable you are serving the dip with, before you add more salt.
- Cover the dip with plastic wrap and place in the refrigerator for 2 hours for the flavors to meld together.

- In a large Dutch oven or heavy-bottomed skillet over medium-low heat, add the oil and butter and heat until melted. Add the onions, breaking up the rings and toss to coat the onions completely. Allow the onions to cook, without a lid, stirring every 2-3 minutes. Allow the onions to cook for about 10 minutes until you see some browning. Sprinkle the onions with the brown sugar and toss to combine. Continue to cook the onions another 15 minutes or so, stirring occasionally, allowing them to get very brown, you may need to reduce the heat to prevent burning.
- When the onions are soft (but not so soft they are mushy) and caramelized remove the pan from the stove and transfer the onions to a serving dish.
- Add the beef to a large bowl and sprinkle it with salt and pepper and mix it together with your hands. Mix it just enough to combine as over mixing will make the beef tough.
