You can use the filling with a pie crust too. Just follow the first part of the directions and instead top with the pie crust baking for at least 30 min. The fruit should be bubbling and thickened.

blue agave nectar
1 teaspoon lemon peel
3/4 teaspoon cornstarch
1 1/4 cups unbleached all-purpose flour
1 cup instant oats
3/4 cup wheat germ
1/4 teaspoon salt
8 tablespoons unsalted butter, cold and cut into bits, divided
3 tablespoons blue agave nectar

Steps:

  • Preheat the oven to 350 degrees. Gently mix the fruit, agave nectar, lemon peel and corn starch until the corn starch has dissolved. Spoon this into a 9x13 inch baking dish.
  • Mix together the flour, oats, wheat germ and salt. Cut in 5 tablespoons of the butter till the mixture resembles coarse crumbs. Stir in the agave syrup with a fork. Toss it evenly over the fruit and dot the top with the remaining 3 tablespoons of butter.
  • Bake for about 35 to 40 minutes. The streusel should be golden brown and the fruit bubbling and somewhat thickened.

1 cup all-purpose flour
1 1/2 cups sugar, divided
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 eggs, beaten
2 tablespoons milk
2 tablespoons vegetable oil
2 cups fresh blackberries or 2 cups frozen blackberries
2 cups fresh blueberries or 2 cups frozen blueberries
3/4 cup water
1 teaspoon orange zest

Steps:

  • In a bowl, combine flour, 3/4 cup sugar, and next 4 ingredients.
  • Combine eggs, milk, and oil; stir into dry ingredients until just moistened.
  • Spread batter evenly onto the bottom of a greased 5-quart slow cooker.
  • In a saucepan, combine berries, water, orange peel and remaining sugar.
  • Bring to a boil.
  • Remove from heat; immediately pour over batter.
  • Cover and cook on high for 2 to 2 1/2 hours or until tests done.
  • Turn cooker off.
  • Uncover and let stand for 30 minutes before serving.

2 teaspoons baking powder
¾ cup white sugar
¾ cup milk
¼ cup butter
2 cups sliced fresh peaches

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

1 cup sugar, adjust to your taste
2 tablespoons flour
1 egg, beaten
1/2 cup margarine, melted
5 slices white bread, crusts removed and cut into strips
3 cups fruit, approx, SEE NOTE
1 1/2 teaspoons cinnamon (optional) or 1 1/2 teaspoons cardamom (optional)

Steps:

  • Mix first 4 ingredients together and set aside.
  • Place drained fruit in a buttered 8x8 pan and top with bread strips.
  • Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
  • Bake at 350 degrees for 35-45 minutes or until golden brown.
  • Great topped with ice cream or whipped cream on top.
  • Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

THis is yummy. It has the texture of a cobbler filling but not crust The size of the cans of fruit isn't to important, the mixture you put in the pan shouldn't be to wet. The nuts are a must as they add texture that 's is missing from the crust, but actually the crust isn't all that important in this recipe.

20 ounces canned cherry pie filling
28 ounces canned peaches
20 ounces canned apricots
1/4 cup brown sugar
1/4 cup orange juice
1/2 cup chopped walnuts
toasted coconut

Steps:

  • Drain pineapple, peaches and apricots well. Combine with cherry pie filling sugar and juice. Bake in a 7x11 for a thicker casserole or a 9x13 for a thinner casserole. Top with walnuts or other nuts. Bake 350 degrees for 1 hour.
  • Top with toasted coconuts, if desired.
