- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
- Mix flour, baking soda, and salt together in a bowl.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.

MARY'S BLUE RIBBON BANANA BREAD
Yum! This is an old-fashioned banana bread recipe that's delicious. It's a very basic recipe but so good. Reminds us of something our grandmother would make. This banana bread is moist and tender, slightly dense, and has a nice crust on the outside. This would be great for breakfast or a snack.

- 1. Sift dry ingredients together.
- 2. In a large bowl cream butter and sugar well.
- 3. Add eggs and beat well until light and fluffy.
- 4. Add vanilla.
- 5. Mix banana pulp with sour cream.
- 6. Add pulp alternately with dry ingredients to butter, sugar, and eggs mixture on slow speed.
- 7. Scrape sides as needed.
- 8. DO NOT OVER BEAT. Beat only until combined. I then stir with a wooden spoon to make sure it is all combined.
- 9. Grease and flour a loaf pan, 9X5X3. Bake at 350 degrees for 50-60 minutes.
- 10. Test with a cake tester. Do not test in the crack. Test off to the side. It should come out clean, but be careful not to over bake. You want a loaf of moist banana bread.

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.

- Preheat oven to 350 degrees. Line two 8" x 5" loaf pans with parchment paper. Helpful tip: secure paper to edges of pan with binder clips. This prevents paper from sliding when batter is added to pan. Set pans aside.
- In mixing bowl, combine mashed bananas with oil, eggs, sugar and lemon juice. Mix until all ingredients are well combined.
- In another bowl, whisk together the dry ingredients; flour, baking powder, baking soda and salt. Gradually add the dry ingredients to the wet ingredients, using a large whisk to combine. Stir the batter until just combine and until there are no more lumps.
- With a rubber scraper, fold in the chopped nuts.
- Evenly divide the batter into the two prepared pans.
- For the crumb topping; in a bowl, combine the softened butter, brown sugar and flour. Mix the a fork until crumbly. Sprinkle over the top of each loaf.
- Remove the binder clips from the edges of the pans (if you were using to secure the parchment paper) and place loaves in oven. Bake at 350 degrees for 45-50 minutes or until a toothpick inserted comes out clean and crumb free.
- Let cool 10-15 minutes before slicing.

- Preheat oven to 325 degrees. Grease and flour 2 loaf pans. Cream together butter and sugar. Beat in eggs, add vanilla, then fold in mashed bananas. Fold in 2 c of flour. Measure two additional c of flour, reserving 2 T of this to coat blueberries, which are added as a last ingredient. Place remaining flour in a sifter, adding allspice, baking soda, baking powder and salt. Sift and fold into the batter. Sprinkle the 2 T of flour on blueberries, coat well, then fold into batter. Divide the batter between 2 prepared loaf pans. Bake for approximately 50 minutes. Test with toothpick to determine when done (should come out clean from the center).

- MASH bananas with a fork in a large measuring cup. Medium bananas should measure about 1 ½ cups. If this is the case, add the entire 1 cup mayonnaise. If the bananas are larger, add slightly less mayonnaise, probably about ¾ cup, to equal 2 ½ cups total bananas and mayonnaise.
- BEAT in a large bowl the egg, sugar, banana-mayonnaise mixture and vanilla, until mixed well. In a medium bowl, mix flour, baking powder and salt. Fold into banana mixture with pecans (and chocolate chips, if using) just until no streaks of flour can be seen. Turn into the prepared baking pan.
- BAKE 1 hour, until a toothpick comes out clean when inserted into the center. Cool on a rack 15 minutes, then remove from pan. Cool completely, then wrap in foil. Keeps well up to 5 days. Freezes well.
