EASY BLINI (RUSSIAN PANCAKE)



Easy Blini (Russian Pancake) image

I love these bite-sized pancakes because they make perfect appetizers. Top blini with smoked salmon, creme fraiche, or even caviar. Add a sprig of dill and they are sure to impress. My children also love eating these plain too!

1 cup all-purpose flour
¾ teaspoon salt
½ teaspoon baking powder
¾ cup milk
2 tablespoons milk
1 large egg
1 tablespoon melted unsalted butter
1 tablespoon unsalted butter

Steps:

  • Combine flour, salt, and baking powder in a bowl.
  • Whisk 3/4 cup plus 2 tablespoons milk, egg, and 1 tablespoon melted butter together in a separate bowl. Mix into the flour mixture until batter is fully combined.
  • Heat 1 tablespoon butter in a skillet over medium-low heat. Drop batter, 1 tablespoon at a time, onto the heated skillet. Cook until bubbles form, 1 1/2 to 2 minutes. Flip and continue cooking until brown, about 1 minute more. Lay on plate lined with a paper towel to help soak up excess butter. Repeat with the remaining batter.

These are cute little Santa creations using strawberries, pineapple, and cream cheese icing. Your guests and kids will love them.

1 (8 ounce) package cream cheese, softened
1/2 cup marshmallow cream
12 large fresh strawberries
12 fresh pineapple chunks (about 1 inch pieces) or 12 canned pineapple chunks (about 1 inch pieces)
12 frilled toothpicks
24 miniature semisweet chocolate chips
12 white fudge covered Oreos

Steps:

  • Place cream cheese mixture in decorating bag fitted with #17 star tip.
  • In a medium bowl, beat cream cheese and marshmallow cream in l with mixer on high speed until fluffy.
  • Cut each strawberry in 1/2 crosswise. Place a chunk of pineapple in center and secure with toothpick, repeat until done.
  • Press chocolate chips in to pineapple for eyes, pipe cream cheese around top bottom part of strawberry to form fur around the hat, then pipe cream cheese around pineapple to form Santa's beard.
  • Refrigerate (no more than 2 hours).
  • Serve on white cream covered Oreos or a white cookie of your choice.

I'm so proud of these cute little creations because I made up the recipe myself. You can prepare the ingredients ahead of time but should assemble up to a couple of hours before serving to prevent the lettuce from getting wilted. As I made up the spread I wrote the ingredients down. As for the rest I just bought the items that I needed and threw them together, so you will probably have extras of the bread and topping ingredients. Or, just make up some more of the sauce and make more BLTeenies. The sauce as I've written it here makes is enough for about 15 appetizers. I'm not used to writing my own recipes so bear with my directions! I tried to be clear but it was much harder to type this out than it was just to actually do it!

Number Of Ingredients 7

1/3 cup mayonnaise (no substitutes)
1/2 cup sour cream
1 teaspoon Italian salad dressing mix (the powdered stuff)
15 slices cocktail bread (I like sourdough)
3 cups shredded lettuce
3 small tomatoes, sliced (you want them to be slightly smaller than the bread)
3 ounces bacon bits (I like hormel because they seem to be darker in color and shredded finer. Oscar mayer doesnt look as)

Steps:

  • Mix together the mayo, sour cream, and dressing mix. This is going to "glue" all of the layers of the sandwich together.
  • Make an open-faced mini sandwich with the rest of the ingredients: First spread the bread with mayonnaise mixture to the edges (be generous-I use just less than a tablespoon.).
  • Add some shredded lettuce, covering the spread.
  • Put a small dollop of the mayo mixture in the center of the lettuce, then add a slice of tomato.
  • Add a chocolate-chip sized amount of the mayo mixture, followed by a nice sprinkling of the bacon.
  • Voila, you're done. Put on a pretty platter and serve.
