These are great for a casual gathering of friends and family, to take to a potluck supper at church. Took a bunch to church, gone in just minutes. Hope you enjoy them as much as they did.

1 tablespoon(s) olive oil, extra virgin
1 pound(s) (1/2-inch-thick) sliced pancetta, cut into 1-inch squares
1 pint(s) cherry tomatoes, halved
1 - (1-ounce) package fresh basil
3 cup(s) (1-inch) cubed sourdough bread

Steps:

  • In a large skillet, heat olive oil over medium heat. Add pancetta. Cook, stirring frequently, for 8 to 10 minutes or until lightly browned. Remove pancetta and drain on paper towels until cool.
  • On 4-inch skewers, thread 2 pieces pancetta, 1 cherry tomato half, 1 basil leaf, and 1 bread cube.
  • Here's a great tip for halving the tomatoes. Take two round lids put some tomatoes on one and cover with the other. With a sharp knife cut between the lids. Repeat until all are halved.
  • Serve with my ranch dressing, makes a great dip.

Six 1-inch-thick slices good-quality ciabatta bread
2 tablespoons extra-virgin olive oil
6 slices thick-cut bacon, cooked
1 head butter lettuce
24 small cherry or grape tomatoes
Green Goddess Dip, for serving, recipe follows
3/4 cup buttermilk
1/3 cup plain Greek yogurt
1/4 cup fresh basil leaves
1/4 cup fresh dill
1/4 cup fresh flat-leaf parsley leaves
1/4 cup fresh tarragon leaves
1 1/2 tablespoons Dijon mustard
1 tablespoon champagne vinegar
1/4 cup plus 2 tablespoons neutral oil
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of the bread with the olive oil. Place on a baking sheet fitted with a rack. Bake until lightly toasted, 4 to 5 minutes. Let cool, then cut each slice into bite-size pieces.
  • Cut each slice of bacon into 4 pieces. Remove 12 nice leaves from the head of lettuce. Cut each lettuce leaf into 2 pieces. Skewer a piece of bread onto each of twenty-four 4-inch skewers. Carefully roll up the lettuce pieces and place one on each skewer, followed by a piece of bacon and a tomato. Serve with Green Goddess Dip.
  • Combine the buttermilk, yogurt, basil, dill, parsley, tarragon, mustard and vinegar in a blender and blend for about 15 seconds. With the blender running, slowly drizzle in the neutral oil and extra-virgin olive oil until the mixture is emulsified. Season with salt and black pepper. Serve chilled.

  • In a large bowl whisk together lemon juice, olive oil, basil, 1/4 tsp. salt and 1/8 tsp. pepper. Lightly brush some of the mixture on lettuce quarters. Add tomatoes and avocado pieces to the lemon mixture, tossing gently to coat. Transfer tomatoes and avocado pieces to a medium bowl using a slotted spoon; set aside. Add bread cubes to remaining lemon mixture, tossing well to coat. Set aside.
  • Line a large microwave-safe plate with a double-thickness of plain white paper towels. Place 4 of the bacon slices on the paper towels in a single layer. Micro-cook, uncovered, on 100 percent power (high) for 1-1/2 to 2 minutes or until bacon is almost cooked through but still pliable (do not let get crisp). Transfer bacon to another plate to cool slightly. Repeat with remaining bacon slices.
  • On four 12-inch skewers* alternately thread tomatoes and avocado pieces and some of the bread, leaving 1/4-inch space between pieces. Thread bacon slices and remaining bread cubes onto eight 12-inch skewers, leaving 1/4-inch space between pieces, and threading bacon slices accordian-style onto skewers.
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Place bacon skewers on grill rack over drip pan. Cover and grill bacon skewers for 10 minutes or until bread is lightly browned and crisp and bacon is cooked through and just crisp, turning once. Add lettuce and tomato skewers to outside edge of grill rack above the coals the last 2 minutes of grilling, turning once. (For a gas grill, preheat grill; reduce heat to medium. Adjust for indirect cooking. Cover and grill as above.)
