MEATBALL SLIDERS

- Mix all meats, panko, 1/2 cup water, 6 tablespoons cheese, egg, egg yolk, 1/4 cup parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper in large bowl. Form into eighteen 2-inch-meatballs.
- Heat vegetable oil in large skillet over medium-high heat. Working in batches, fry meatballs until brown all over. Transfer to plate. Pour off drippings from skillet. Reduce heat to medium. Add olive oil to skillet. Add onion, garlic, basil, and fennel seeds. Sauté until onion begins to brown, about 5 minutes. Add all tomatoes with juices. Bring to boil, scraping up browned bits. Reduce heat to low, cover with lid slightly ajar, and simmer, stirring occasionally, about 30 minutes.
- Puree sauce in processor until almost smooth. Return to same skillet. Add meatballs. Cover with lid slightly ajar and simmer until meatballs are cooked through, stirring occasionally, about 30 minutes longer. DO AHEAD: Can be made 1 day ahead. Cover; chill.
- Place arugula leaves on bottom of each roll, if desired. Top each with 1 meatball. Drizzle meatballs with some of sauce and sprinkle with remaining 2 tablespoons parsley and 2 tablespoons. cheese. Cover with tops of rolls.

- Place bacon in a food processor; cover and process until finely chopped. In a large bowl, combine the milk, egg, bread crumbs, onion and seasonings. Crumble the bacon, pork and beef over mixture and mix well. Shape into 2-in. meatballs., Place in an ungreased 15x10x1-in. baking pan. Bake at 425° for 30-35 minutes or until a thermometer reads 160°., Combine mayonnaise and dip mix; spread on roll tops. Layer each roll bottom with salad greens, a tomato slice and a meatball; replace tops.

I made these little meatball sandwiches for a Christmas eve party a few years ago, and they were the hit of the party...the meatballs are delicious and a fresh slice of mozzarella cheese melted over the top, served on sweet Hawaiian rolls...DELICIOSO!!

- 1. In a medium bowl, add the first 9 ingredients and blend just until everything is incorporated. I use my fingers.
- 2. In a large skillet add about 1/4 cup of oil and turn heat to medium - med high. Roll meatballs, about the size of a golf ball. Place in hot grease and using a large spoon, turn as they brown. Once all are browned, drain on paper towel...
- 3. I then wash out the same pan and add marinara or spaghetti sauce to the pan. Place the meatballs into the sauce ( I sprinkle with a little shredded parm.) and simmer for about 20 minutes, making sure meatballs are completely cooked in the center.
- 4. Turn oven on to 375 degree F. On a sheet pan, lay opened sandwich rolls and bake, just long enough to get a little crunchiness. A bout 5 minutes... Remove from oven.
- 5. Set the tops aside and on the bottom half of buns; place a meatball and some sauce. Lay a slice or half a slice, (depending on how big your slices are) on top of the meatball.
- 6. Turn oven to broil and place meatballs under broiler. Broil just long enough to melt the cheese or gets a little browning.
- 7. Remove from oven, place on the tops and secure with picks. Serve with extra warm sauce and enjoy...they are scrumptious!
