- In a bowl, mix together the mayo, chili powder, cumin, garlic and a little salt and pepper to taste.
SPICY GARLIC MAYONNAISE
This comes from The Cuisine of California cookbook and was given to me by --Sheri-- in the last cookbook swap. This is great to kick up any kind of sandwich. I've also used it on a shrimp and avocado salad. It may be kept up to 5 days in refrigerator.

Steps:
- Immerse pimiento or red pepper in a pan of boiling water and boil 2 minutes. (Skip this step if used the roasted red peppers in a jar).
- Remove from water with a slotted spoon.
- Reserve.
- While motor is running, add garlic cloves to a food processor fitted with the steel blade.
- Process until pureed.
- Add pimiento or red pepper and process until blended.
- Add egg yolks and blend.
- With blades turning, slowly pour in olive oil in a fine steady stream until sauce is thick and smooth and all oil is added.
- Add salt, pepper and cayenne.
- Taste for seasoning.
- Refrigerate in a tightly covered container until ready to use.
- Serve cold.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., In a small bowl, mix mayonnaise, vinegar, pepper and salt. Spread half of the mixture over four toast slices. Layer with bacon, salad greens, tomatoes and avocado. Spread remaining mayonnaise over remaining toast; place over top.

BLT CLUB WITH TANGY GARLIC MAYO
Found this tangy garlic mayo recipe while trying to dress up a steak sandwich but it works a much better on BLTs. I'll include ingredients for a single sandwich, you can multiply the ingredients from there depending on how many servings you need.

- Tangy Garlic Mayo: Mash minced garlic with a spoon until you get a pasty consistency. Stir garlic, mayo, balsamic vinegar and lemon juice in a bowl until thoroughly mixed.
- BLT Club:.
- Spread garlic mayo on first piece of toast, top with 2 leaves of lettuce, 3 slices of bacon and 2 slices of tomato.
- Spread garlic mayo on both sides of second piece of toast and place on top of first layer of sandwich. Top with 2 leaves of lettuce, 3 slices of bacon and 2 slices of tomato, salt and pepper to taste.
- Spread garlic mayo on last slice of toast, place on sandwich, then cut diagonally and serve. (fries and a pickle spear are a good side).

This is a yummy mayonnaise that I made for one of my other sandwiches already posted, but decided it would also be great on many other sandwiches as well..so decided to post the recipe. I will use it the next time I make my Cajun Shrimp Croissant Sandwich. Enjoy!

- Mash up roasted garlic cloves. Mix well with remaining sauce ingredients. Add salt and pepper to taste and mix well. Lasts for up to a week in fridge.
- In a large nonstick pan, cook onions in the 2 TB oil over medium high heat, stirring often. Cook until very soft and golden brown, caramelized. Season with salt and pepper to taste. Set aside.
- In a bowl, liberally sprinkle ground beef with salt and pepper and mix to incorporate. Shape into 4 large patties, and keep at room temp. When ready to cook, grill burgers to medium rare or medium. Place cheese slices on top of the patties and keep warm.
- Spread garlic mayo generously on buns. Layer on avocado, bacon, tomatoes, caramelized onions, and lettuce over warm cheese/beef patties.

- Place bacon in a single layer in a large frying pan over medium heat and cook until crisp. (You might need to do this in batches depending on the size of your pan.) Transfer to a paper towel-lined plate.
- Meanwhile, core the tomato and slice into 1/4-inch thick slices. Wash and throughly dry lettuce leaves and toast the bread.
- Remove the stem from the chile and thinly slice. Thinly slice the garlic clove and place on top of the sliced chile on the cutting board. Place cilantro leaves on top along with the salt and chop everything all together until everything is minced. Transfer to a bowl and stir in mayonnaise.
