PERFECT BRUNCH PIE

3/4 cup chopped kalamata olives
1/4 cup chopped garlic-stuffed green olives
1/2 cup chopped plum tomatoes
2 tablespoons chopped scallion
2 tablespoons chopped red onion
1/2 cup chopped white mushrooms
3 cloves garlic, minced
1/2 cup chopped marinated artichoke hearts
1/2 cup shredded sharp cheddar cheese
1/2 cup crumbled feta cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
4 large eggs
1/2 cup reduced-fat milk
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
10 sheets frozen phyllo dough, thawed

Steps:

  • Preheat the oven to 350 degrees F. Mix the kalamata and green olives, the tomatoes, scallion, onion, mushrooms, garlic and artichoke hearts in a large bowl. Stir in both cheeses, the basil, oregano and thyme; set aside, 20 minutes. Meanwhile, beat the eggs, milk, and salt and pepper to taste in another bowl.
  • Brush a 10-inch glass or ceramic pie dish with some of the butter. Stack 6 sheets of phyllo dough (keep the rest covered with a damp towel) and cut the stack into a 12-inch round with a paring knife. Place 1 phyllo round in the prepared pie dish and brush with butter; continue to layer the remaining 5 phyllo rounds in the dish, brushing each piece with butter before adding the next.
  • Spread the olive mixture evenly in the phyllo-lined dish, then pour in the egg mixture. Cut the remaining 4 phyllo sheets into 10-inch rounds. Layer on top of the pie, brushing each piece with butter before adding the next.
  • Bake until the top is golden and a knife inserted in the middle comes out clean, about 1 hour. Let rest 10 minutes before slicing.

1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

12 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss cheese (4 oz)
1/2 cup Original Bisquick™ mix
1/3 cup mayonnaise or salad dressing
3/4 cup milk
1/8 teaspoon pepper
2 eggs
2 tablespoons mayonnaise or salad dressing
1 cup shredded lettuce
6 thin slices tomato

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer bacon and cheese in pie plate.
  • In medium bowl, stir Bisquick mix, 1/3 cup mayonnaise, the milk, pepper and eggs with wire whisk until blended. Pour into pie plate.
  • Bake 25 to 30 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving. Spread 2 tablespoons mayonnaise over top of pie. Sprinkle with lettuce. Place tomato slices on lettuce.

1 can (4-1/2 ounces) mushroom stems and pieces, drained
8 bacon strips, cooked and crumbled
1 tablespoon chopped green pepper
1 tablespoon chopped onion
3 medium tomatoes, peeled and sliced

Steps:

  • In a large bowl, combine the first 4 ingredients. Cut in shortening until crumbly. Stir in sour cream. Cover and refrigerate for 30 minutes. , Press dough into a 9-in. pie plate; flute edges if desired. Bake at 375° for 10 minutes. Cool completely., In a large bowl, combine the mayonnaise, cheddar cheese, mushrooms, bacon, green pepper and onion. Layer half of the tomatoes in crust; top with half of the mayonnaise mixture. 1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 cup shortening
1/2 cup sour cream
3/4 cup mayonnaise
1 cup cheddar cheese
1 (4 1/2 ounce) can mushroom stems and pieces, drained
8 slices bacon, strips cooked and crumbled
1 tablespoon green pepper, chopped
1 tablespoon onion, chopped

Steps:

8 slices of bread
12 oz bacon
4 eggs
1 avocado (pitted and sliced)
1 large tomato (sliced or sliced baby tomatoes)
4 green lettuce leaves
Mayo or your favorite sandwich spread
S&P

Steps:

  • Line a rimmed cookie sheet with foil. Line a rack with bacon and place the rack over the lined cookie sheet.
  • Bake at 400˚F for 20 minutes. The rack allows for heat to circulate around the bacon, but I've made it without the rack and it was still great!
  • Saute your eggs over medium heat with 1/2 Tbsp olive oil. Lightly season with S&P. I left the yolk untouched and didn't flip them. I did put the lid on for 30 seconds in the end so the whites would be fully cooked. The yolk was still juicy.
  • Toast both sides of your bread until golden (we did this over a skillet with a little butter)
  • Spread mayo on one side of each bread slice.
  • One one half, add bacon, and egg. On the second half, add lettuce, avocados, tomatoes and sprinkle lightly with S&P. Sandwich the two halves together and skewer with a toothpick for effect :) Seriously this sandwich is awesome.
