20-Minute BLT Puffed Pastry Pizza - A quick and easy meal sure to please the whole family!

2 whole sheets of frozen puffed pastry
2 teaspoons olive oil, for brushing
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt (I like using finely ground sea salt here)
(1) Packet Hidden Valley® Greek Yogurt Salad Dressing Mix
1 1/3 cups Greek yogurt (I used full-fat but reduced fat is OK)
3 tablespoons milk (I used 2% but any fat ratio should work fine)
8 strips of bacon, fried until crispy
2 cup baby arugula, or lettuce of your choice
2 cups cherry tomatoes, cut in half

Steps:

  • *Thaw the puffed pastry on the counter for at least 30 minutes.
  • Preheat oven to 425 degrees (F).
  • Once thawed, carefully open the sheets of pastry. Using a sharp knife slice them in half, straight down the middle. Place the pastry on a large baking sheet lined with parchment or a silicon baking mat. Lightly brush the olive oil over the top of each pastry piece, then sprinkle with salt and pepper. Pop the pan in the oven and bake for 12-13 minutes.

4 slices bacon
1 (10 ounce) can refrigerated pizza crust dough
1 teaspoon olive oil
2 cups mozzarella cheese, shredded
1 tomato, chopped
2 cups shredded iceberg lettuce
2 tablespoons mayonnaise, or to taste
salt and pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C), or according to package directions for pizza dough.
  • Place bacon in a heavy skillet over medium-high heat, and fry until browned, but not crisp. Drain on paper towels.
  • Stretch pizza dough out over a pizza stone, pan, or cookie sheet. Brush the dough with olive oil. Spread the shredded mozzarella over the crust, and arrange the tomatoes over the cheese. Chop bacon, and sprinkle evenly over the pizza.
  • Bake pizza for 10 to 15 minutes in the preheated oven, until the crust is golden and cheese is melted in the center. While the pizza is in the oven, toss the shredded lettuce with mayonnaise, and season lightly with salt and pepper. Top the finished pizza with the dressed lettuce, and serve immediately.

1/2 cup Miracle Whip
2 teaspoons dried basil
1/2 teaspoon garlic powder

3/4 cup shredded cheddar cheese
3/4 cup shredded part-skim mozzarella cheese
1-1/2 cups shredded lettuce
2 medium tomatoes, thinly sliced

Steps:

  • Place the crust on a ungreased 12-in. pizza pan. In a small bowl, combine the Miracle Whip, basil, garlic powder and onion powder; spread over crust. Set aside 1/4 cup bacon. 2 tablespoons cream cheese
3/4 cup almond flour
1 egg
1 teaspoon italian seasoning
1/4 cup mayonnaise
1 1/2 cups shredded lettuce
1/2 cup cherry tomatoes, halved
6 slices bacon, fried and diced

Steps:

  • Preheat oven to 425 degrees.
  • Add the mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.
  • Stir in the almond flour, egg, salt, and Italian seasoning to combine.
  • Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.
  • Roll the dough out into a 12 inch diameter circle.
  • Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.
  • Bake for 12 minutes or until golden brown.
  • Remove from the oven and spread with the mayonnaise. Sprinkle on the lettuce, tomatoes, bacon.

1 plain large pizza crust (i.e. pizza base)
1 -2 cup mozzarella cheese, shredded (amount depending on taste)
2 tablespoons extra virgin olive oil
1/2 cup bacon, cooked crisp & crumbled into pieces (use more if you like)
2 roma tomatoes, sliced into 1/8 inch (3mm)
3 cups lettuce, rocket (or romaine)
4 tablespoons tzatziki (or mayonnaise, if you don't have tzatziki)

Steps:

  • Brush olive oil over the pizza base.
  • Spread 3/4 of the mozzarella over the oiled surface.
  • Distribute bacon pieces over the cheese.
  • Place enough tomato slices over the bacon to cover the pizza in one single layer.
  • Spread another layer of mozzarella over the tomatoes.
  • Transfer to the preheated Pizza Maker machine (or to a very hot oven) and cook until the crust is crisp and golden and the cheese at the centre is bubbling (8 to 10 minutes).
  • While pizza is cooking mix the tzatziki or mayonnaise (as much as you'd like) with the lettuce.
  • When the pizza is ready, remove, cut into pieces and add the dressed lettuce to each piece. Serve immediately.
