1/2 cup olive oil
1 onion, chopped
1 carrot, chopped
2 stalks celery, chopped
3 cups red wine (only use stuff you would drink yourself)
2 cups water
2 bay leaves
2 tablespoons fresh thyme, chopped
3 tablespoons fresh basil, chopped
1/4 cup chopped fresh parsley
5 cloves garlic, peeled and crushed
14 peppercorns
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 teaspoon soy sauce

Steps:

  • Compine all ingredients in a deep pan and cook for 3 hours.
  • Strain Marinate beef or game for 12-24 hours in refrigerator.

VENISON GOETTA

Goetta is often compared to scrapple or breakfast sausage. I found this recipe in a wild game cook book.

Number Of Ingredients 12

1 lb ground venison
2 cups hot water
1 medium onion, finely chopped
1 bay leaf, finely crumbled
1/2 teaspoon coarse black pepper
1 1/2 cups oatmeal
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon thyme
1 1/2 teaspoons sage
1/4 teaspoon nutmeg
1/4 teaspoon crushed red pepper flakes (*)

Steps:

  • Combine venison, hot water and onion in a large skillet.
  • Strip bay leaf from vein and finely crumble into skillet.
  • Simmer until meat is no longer pink and onion is tender. Add pepper, oatmeal and salt. Stir quickly and cook for 3 minutes.
  • Remove from heat and season with onion powder, thyme, sage, nutmeg and crushed red pepper.
  • Spoon meat mixture into loaf pan sprayed with vegetable oil spray. Let stand until firm.
  • Remove from pan, cut loaf in half and wrap each half in plastic wrap.
  • Freeze one and refrigerate the other.
  • To use, slice meat 1/4-inch thick, coat gently with flour and pan fry in small amount of butter or vegetable oil until broned on each side. Serve with eggs and toast for breakfast.
  • *you can add more crushed red pepper flakes to taste.

Number Of Ingredients 5

1 lb ground elk or 1 lb ground venison
6 slices bacon, cooked
1/2 white onion
2 garlic cloves
1 egg

Steps:

  • Pre heat oven to 350.
  • I mention using a food processor but you can just chop everything by hand, just make sure it's chopped very fine.
  • In a food processor add your white onion and garlic and pulse a few times. Then break up your cooked bacon and pulse again. Add your ground meat pulse, add egg, pulse until combined well. If meat is warm or room temperature then place in the fridge for a few minutes. Using your hands make 5 large meatballs the size of baseballs or you can make 10 small golf ball sized meatballs. In a large skillet warm some oil and brown each side of the meatballs, place in a baking dish and bake for about 15 minutes in the oven. You may need to bake less or more depending on the size you choose to make.

PORK & HAM ROAST MARINADE

This recipe comes from my Auntie Eleanor and is about 40 years old. This is an amazing recipe. I cannot tell you how good this is you have to make it yourself a unique taste!

12 ounces 7-Up soda, soda
1 tablespoon mustard
1/4 cup dark brown sugar
4 ounces crushed pineapple
8 garlic cloves (to taste)
2 onions

Steps:

  • 4 cloves of garlic aside.
  • 4 garlic cloves finely minced add to sauce pan.
  • Add all ingredients including juice from crushed pineapple to a sauce pan.
  • Simmer until thicken.
  • Pierce pork or ham roast.
  • Insert garlic cloves.
  • quarter onions and add to roasting pan with roast.
  • Baste roast and put into 350 oven.
  • Baste every 1/2 hour until browned and roast is done.
  • Pineapple rings can be added on top with toothpicks before roast is done Maraschino cherries can be put in center of rings.
  • Note:.
  • Please only use 7 UP and French's mustard it is just not the same without them. Make without the 4 oz of pineapple as well still wonderful it will make a fabulous gravy.
  • This recipe which came to me from my Aunt Eleanor, did not include the garlic so you may want to leave it out.

BASIC FRIED RABBIT OR SQUIRREL

1 rabbit or 1 squirrel
butter, melted,as needed for the size
corn flakes, crushed,as needed
shortening or bacon grease, as needed

Steps:

  • Remove legs from body of dressed rabbit or squirrel.
  • Split the body down the back through the breast.
  • Cut each half in two crosswise.
  • Dip meat pieces in melted butter.
  • Roll pieces into crushed corn flakes coating all around.
  • Brown meat in hot oil on each side.
  • Reduce heat to low and simmer for about 1 hour.
  • Note: Some people like to soak the meat in salted water a few hours before cooking.
  • If so cover the body with water in a pot and add 3 Tablespoons of salt.
  • Then drain, rinse, and pat the body dry before cooking.
  • I often do this especially if the animal appears to be old.
