SPICY RED-WINE SPAGHETTI



Spicy Red-Wine Spaghetti image

Kosher salt
1 pound spaghetti
1/4 cup extra-virgin olive oil
3 large cloves garlic, chopped
1 large shallot, halved, thinly sliced into strips
1/2 teaspoon dried crushed red pepper
One 750ml bottle zinfandel
1 tablespoon tomato paste
1 tablespoon butter
1/4 cup fresh flat-leaf parsley leaves, chopped
4 ounces coarsely crumbled goat cheese

Steps:

  • Bring a large pot of salted water to the boil. Add the pasta and cook for 6 minutes, stirring pasta occasionally, until par-cooked. Drain and reserve the pasta water.
  • In a 12-inch nonstick skillet, heat the olive oil over medium-high heat. Add the garlic, shallots, crushed red pepper flakes and 1 teaspoon salt. Cook until the garlic becomes fragrant, 1 to 2 minutes.
  • Add the wine and tomato paste. Bring to a simmer over medium-high heat. Reduce the heat to medium and simmer gently for 3 minutes.
  • Add the pasta to the skillet. Cook, stirring frequently, until almost all of the wine is absorbed and the pasta is tender but still firm to the bite, about 5 minutes (if the pasta mixture is too dry, add pasta cooking water 1/4 cup at a time).
  • Stir in the butter and 1 teaspoon salt. Increase the heat, and toss until the wine sauce thickens enough to coat the pasta, about 1 minute. Toss to blend.
  • Add the parsley and goat cheese and serve.

3 Tbsp extra-virgin olive oil (plus more for drizzling)
3-4 cloves garlic (roughly sliced (not too thin))
1 lb. fresh cherry tomatoes (or canned whole tomatoes *see Note 1)
1/2 cup basil leaves (loosely packed and torn if large)
1/8 - 1/4 tsp. crushed red pepper flakes
3/4 tsp. kosher salt (plus more, to taste)
Pinch sugar (optional)
1 tsp butter (optional)
12 oz Paccheri pasta tubes (16-18 paccheri or more if using smaller pasta, about 14 oz *see Note 2)
3.5 oz Buffalo or Fresh Mozzarella Ball (cut into 1/2-inch cubes (100g) *see Note 3)
Finely grated Parmesan
Fresh basil (thinly sliced)

Steps:

  • Start a large pot of water boiling for the pasta and salt it well. Once boiling, add the pasta to the pot and cook according to package directions, or until al dente.
  • Add the olive oil and garlic to a skillet on the stovetop. Turn the heat on to medium-low and heat the oil and garlic slightly. As soon as the oil is heated and you can see tiny bubbles around the garlic, add the cherry tomatoes and basil to the pan and raise the temperature slightly. Add the red pepper flakes and salt (and a pinch of sugar, if using). Cook, stirring, until the skin on the cherry tomatoes starts to crack open. **Make sure the garlic doesn't brown during this process. If it is starting to colour at all, add a Tbsp or 2 of water to the pan to stop the garlic browning.
  • When the tomatoes start cracking, use the back of a large spoon to smash about 1/2 of the cherry tomatoes. Add the butter (if using) and stir to combine.
  • When pasta is ready, spoon out of pot with a slotted spoon, allowing the excess water to drain off back into the pot. Add the drained pasta to the skillet with the tomatoes. Stir to combine. Add a 1/2 ladle or so of pasta water to the skillet and cook the pasta with the sauce about 2 minutes. Season with some freshly ground pepper.
  • Remove skillet from heat and stir in the cubed fresh mozzarella. Stir in and allow the residual heat from the pan to soften the cheese. Serve immediately with freshly grated Parmesan and some fresh, chopped basil. *If using regular mozzarella cheese, you may need to leave it on the heat for a bit to soften the cheese.

We make this for Halloween every year at my son's request! It's like spaghetti using bow-tie pasta! It is mixed together with mozzarella cheese cubes and baked in the oven. The bow-tie pasta is the bats and the stringy, gooey mozzarella cheese is the cobwebs!

1 (8 ounce) package farfalle (bow tie) pasta
1 pound ground beef
1 small onion, chopped
1 (28 ounce) jar pasta sauce
8 ounces mozzarella cheese, cut into 1/2 inch cubes
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Fill a large pot with lightly salted water, bring to a rolling boil over high heat. Stir in the bow tie pasta and return to a boil. Boil pasta, stirring occasionally, until cooked through but still firm to the bite, about 12 minutes. Drain well.
  • Cook and stir ground beef and onion in a large skillet until beef is no longer pink, about 5 minutes. Drain fat. Stir in pasta sauce and bring to a boil. Reduce heat to simmer.
  • Stir cooked pasta and half of the mozzarella cheese into the sauce; toss to combine. Transfer to a 2-quart baking dish. Top with remaining mozzarella and Parmesan cheese.
  • Bake in preheated oven until lightly browned and bubbly, 15 to 20 minutes.

1 (750 ml) bottle red wine, 1/4 cup reserved
1 (15 ounce) can cooked sliced beets, beet juice reserved
1 lb linguine
5 garlic cloves
2 tablespoons balsamic vinegar
3 tablespoons olive oil
1 cup grated parmesan cheese
salt and pepper
1/3 cup heavy cream
2 teaspoons sugar
2 tablespoons Italian parsley, chopped
1/2 lb fresh mozzarella cheese, cut into bat shapes

Steps:

  • Combine water, red wine and beet juice (around 3/4 cup) in a large pot and bring to a boil. Add linguine and cook until al dente. Reserve 1 cup of the cooking liquid and drain the pasta. Set aside.
  • Add beets, remaining 1/4 cup red wine, garlic, balsamic vinegar, olive oil, 1/2 cup parmesan and a pinch of salt and pepper to a blender. Pulse until smooth.
  • Pour the beet mixture into a saucepan. Add the reserved cooking liquid and heavy cream and bring to a simmer. Add the sugar, remaining parmesan and a pinch of salt. Simmer for 3 minutes.
  • Add the pasta to the sauce and toss to coat. Garnish with fresh mozzarella bats and parsley.

2 cups cherry tomato, halved
1 cup fresh mozzarella, small cubes
1 bunch fresh spinach, roughly chopped

Freshly ground black pepper

Steps:

  • Heat a skillet over high flame. Put 3 tablespoons of olive oil, onions, garlic, thyme, and saute for 1 minute. Then add the chicken stock, and allow the sauce to reduce by 1/2. Now add the pasta, tomatoes, mozzarella, spinach, and toss to combine. Season the pasta with salt and pepper, to taste. Drizzle with the remaining 2 tablespoons olive oil.

20 sliced olives, rounds (for eyes)
20 green tortilla chips (for wings)

Steps:

  • Combine the room temperature cream cheese, grated parmesan cheese and pesto into a glass bowl and mix until all the ingredients are incorporated. Refrigerate the cheese mixture for 1 hour.
  • Line a cookie sheet with parchment paper.
  • Use a small ice cream scooper to scoop out 10 cheese balls and let rest on cookie sheet with parchment paper.

1/2 pound bow-tie pasta
1 teaspoon olive oil
1 clove garlic, minced
1 can (28 ounces) whole peeled tomatoes, in puree
1/4 teaspoon dried oregano
1/8 teaspoon sugar
Coarse salt
2 precooked chicken sausages, about 3 ounces each, cut crosswise into 1/4-inch-thick rounds
8 ounces mozzarella cheese, cut into small cubes (1 3/4 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Cook pasta according to package instructions. Drain; set aside.
  • Meanwhile, in a large saucepan, heat oil over medium. Add garlic; cook until fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to a boil, reduce to a simmer; cook, stirring and breaking up tomatoes until slightly thickened, 5 to 8 minutes. Season with salt.

RED WINE PASTA #2

I haven't tried it yet but wanted to post it for safekeeping. The cooking method for this version is slightly different from my Recipe #351330. In this recipe, "the pasta finishes boiling in the wine sauce." This turns the pasta a deep burgundy and gives it a rich flavor, complimented by the slight spice of the pepper. Updated 4/15/09: The original recipe did not specify the amount of red wine used. I have corrected the recipe to use a 750ml bottle.

2 tablespoons olive oil
750 ml red wine (1 bottle, such as Merlot)
1 large shallot, chopped

8 -10 leaves fresh basil, chopped. (optional)
2 tablespoons butter
salt, to taste

Steps:

  • Put a large pot of water on to boil. (I add salt to water). Let it come to a boil.
  • Add the pasta to the pot of water, cook until al dente (check recommended cooking time found on the box of pasta; remove pasta from heat and drain about 2-4 minutes before end of recommended cooking time; pasta will finish cooking in the red wine sauce).
  • Meanwhile, in a large high-sided skillet, sauté the shallot, garlic and cayenne in the olive oil over medium-high heat until tender, about 1 minute.
  • Add the red wine and basil (optional) to your skillet and bring to a boil. Reduce the heat slightly, keeping the sauce simmering.
  • Drain the pasta and add it to your skillet. Set the timer for the remainder of the cooking time for the pasta. As the pasta cooks, the wine should reduce down into a thick sauce. When the pasta is finished, add the butter to glaze. Season with salt and pepper. Take it out of the pan and serve.
  • Garnish with freshly grated Parmesan cheese.

zest and juice 1 lemon
1 red onion , very finely chopped
400g spaghetti
6 tbsp extra-virgin olive oil , plus extra for drizzling
4 tsp small capers
1 red chilli , deseeded and finely chopped
pinch of sugar
500g red ripe cherry tomatoes , quartered
bunch mint , leaves torn
handful chives , snipped
1 or 2 x 125g balls buffalo mozzarella , depending on how lavish you feel

Steps:

  • Put the lemon juice and zest into a large bowl, tip in the onion, then season with salt and pepper. Set aside for 10 mins, to let the onion soften a little.
  • Boil the spaghetti for 10 mins. Mix the oil, capers, chilli and sugar into the lemony onions, then season generously.
  • When the pasta is ready, drain, toss with a splash of oil, then let cool awhile. Put into the bowl with the dressing, tip in the tomatoes and most of the herbs, then toss well. Tear in the mozzarella and toss ever so gently. Put into bowls, top with more herbs and drizzle with more oil to serve.

This is an adaptation of a recipe by Ainsley Harriott. My husband usually doesn't like pasta but he finishes this before me and asks for more! It is slightly decadent in that it uses a bottle of red wine but is very good!

500 g minced beef
750 ml red wine, whatever you prefer
1 teaspoon dried herbs
salt and pepper
1 tablespoon olive oil
2 garlic cloves
1 onion, chopped
1 (400 g) can chopped tomatoes
2 teaspoons dried chili pepper flakes
1 tablespoon tomato paste
2 tablespoons sweet chili sauce
1 (500 g) packet spaghetti
3 tablespoons chopped fresh parsley
parmesan cheese, to serve

Steps:

  • Place the minced meat, red wine, mixed herbs and salt and pepper in a bowl.
  • Stir well.
  • Cover and refrigerate overnight or all day.
  • Heat oil in pan.
  • Stir fry onion and garlic until soft.
  • Add red wine mixture, tomato paste, canned tomatoes, sweet chili sauce and chili flakes.
  • Bring to the boil then simmer uncovered for 45 minutes or until most of the liquid has evaporated and the mixture resembles traditional bolognese consistency.
  • (it will be much darker colour than usual).
  • Cook the spaghetti as mentioned on the packet.
  • At the last minute, stir the chopped parsley through the sauce.
  • Add sauce to the drained spaghetti and top with grated Parmesan cheese.
  • Serve with a nice glass of red.
