This is a good adult appetizer. Always a hit at parties.

Steps:
- Bring a large pot of lightly salted water to a boil. Add tomatoes and cook uncovered until peels start to break, about 10 seconds. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and slip skins off each tomato.
- Combine tomatoes, celery, and olives in a bowl; pour in enough vodka to completely cover. Marinate in the refrigerator, 8 hours to overnight. Strain and sprinkle celery salt over tomato mixture.

- Using water, moisten rim of a highball glass. Sprinkle 1/4 teaspoon celery salt on a small plate; dip rim into salt. Discard remaining celery salt from plate. Fill a shaker three-fourths full with ice. Place remaining ice in prepared glass. , Add vodka, juices, Worcestershire sauce, horseradish if desired, pepper, remaining celery salt and pepper sauce to shaker; cover and shake until condensation forms on exterior, 10-15 seconds. Strain into prepared glass. Garnish as desired.

- Salt the rim of a tall glass. To do so, pour salt onto a small plate, moisten the rim of the glass on a damp towel and press into the salt. Fill the glass with ice cubes.
- In a cocktail mixer full of ice, combine the vodka, vegetable juice, Worcestershire sauce, hot pepper sauce, salt and pepper. Shake vigorously and strain into the glass. Garnish with a stalk of celery and olives stuck onto a toothpick.

BLOODY MARY TOMATOES

Steps:
- Use a toothpick to poke 4 holes in each grape tomato. Put them into a jar or shallow bowl that can be covered while the tomatoes marinate.
- Add the vodka, hot sauce, and Worcestershire sauce, make sure tomatoes are covered and refrigerate. Let marinate overnight but no longer than 24 hours.
- When ready to serve, remove the tomatoes from the liquid and put into a serving bowl, leave just a little liquid in the bottom to keep the tomatoes slightly moist on the bottom.
- In another small dish combine the lemon pepper and celery salt.
- Serve with toothpicks and celery. Dip the tomatoes into the salt mixture. Enjoy! I recommend doubling this recipe because they will be gone in a flash!

- For tomato water:
- In food processor, purée first six ingredients until smooth. Line sieve with cheesecloth and set sieve over nonreactive bowl. Pour purée into center of cheesecloth and refrigerate overnight. Gather sides of cheesecloth up over purée to form large sack and squeeze gently to extract last bits of water. Discard sack and its contents and transfer tomato water to bowl. Set strainer over bowl and squeeze in lime, lemon, and orange juice. Stir well. Makes about 20 ounces tomato water, enough for roughly 4 drinks.
- For Bloody Mary
- Fill 4 highball glasses with ice. In each, combine 4 ounces tomato water and 1 1/2 ounces vodka and stir. Garnish with cherry tomatoes.

- In a blender, puree the tomatoes, lime juice, Worcestershire, horseradish, and salt and pepper until smooth. Chill covered until ready to use.
- On a small shallow dish, mix 3 parts sea salt to 1 part finely ground black pepper. Run a lime wedge around the rim of each glass, then dip the rims in the salt and pepper mixture. Fill each glass with ice, 1-ounce vodka, and approximately 2/3 cup Fresh Tomato Bloody Mary mixture.

- Cut washed tomatoes in large chunks and place in a large stock pot. NOTE - Skins and seeds are fine to add in the mixture if you will be using a tomato strainer/sieve. Otherwise you will want to peel the tomatoes by placing them in boiling water for 1 minute and then immediately removing them to an ice water bath. Once cool enough to handle, remove the skins and seeds.
- Add the beets, carrots, celery, garlic, parsley, jalapeños and cherry bomb peppers into the pot with the tomatoes. Bring the pot to a boil and reduce and simmer for at least 30 minutes, stirring occasionally so that the tomatoes do not stick to the bottom of the pot.
- Once the vegetables are tender, run the mixture through a tomato strainer with the tomato screen attachment. If you do not have a strainer, use an immersion blender, food processor, or high speed blender to puree the liquid. *Be sure to work in batches if using a food process or blender and do not fill the container more than half full.
- Return the liquid back into a large stockpot and add the remaining ingredients. Bring to a boil, and let simmer for 10 minutes.
