Vegetarian Bloody Mary Bean Chili image

This recipe is a great way to use up ingredients in your fridge, including Bloody Mary mix. Feel free to throw in other random veggies you may have in your fridge. I enjoy serving with diced red onion, shredded Cheddar cheese, and sour cream.

BEEFED-UP BLOODY MARY SOUP

Beefed-Up Bloody Mary Soup image

The classic brunch cocktail warmed up, and beefed up with some broth and diced tomatoes into a hearty soup that's amazing with some scrambled eggs and toast. I suggest using your favorite Mary garnishes, like celery sticks, olives, and pickled okra as part of a little platter on the side. A shot of vodka in the soup is optional, but not bad. It's rich, satisfying, unique, and no one has to know it's this easy.

2019-11-29 It’s perfect for a Meatless Monday and other than the Bloody Mary mix, all the ingredients come from your basic pantry—broth, sweet potatoes, finely shredded cabbage (these become very much like noodles), shredded carrots, black beans, chickpeas (you know how I love them!), corn, and coconut milk (or other non-dairy milk). I had hoped to come up with homemade version of Bloody Mary mix ...

Delia's Bloody Mary Soup with Vodka Tomato Salsa recipe. More of a Virgin Mary really, but there's nothing to stop you adding a shot of vodka if you have the mind to. Honestly, though, it won't need it because it has a lovely spicy kick of its own, and the very best news is it must easily be the fastest soup on record, although it tastes as though it took hours!
