PICKLED RED BEET EGGS
My Pennsylvania Dutch grandmother, Florence Walter, used to make these. They are especially great for picnics. The combination of pickled eggs, beets, and onions is really something special. A great way to use up left-over Easter-eggs too!

- Drain liquid from the beets into saucepan. Place beets, onions, and eggs into a large bowl or pitcher.
- Pour sugar and vinegar into the saucepan with the beet liquid and bring the mixture to a boil. Reduce the heat to low, and let the mixture simmer 15 minutes.
- Pour the beet juice mixture over the beets, eggs, and onions. Seal the bowl or pitcher and refrigerate. Refrigerate for at least one to 3 days; the longer they are allowed to sit the better they will taste.

- Place eggs into a saucepan and pour in cold water to cover; place over high heat. When the water just starts to simmer, turn off heat, cover pan with a lid, and let stand for 17 minutes. Don't peek.
- Pour out the hot water and pour cold water over eggs. Drain and refill with cold water; let stand until eggs are cool, about 20 minutes. Peel eggs under running water.

- Place 4 eggs in a wide pot; cover with cold water by 1 inch and bring to a boil. Reduce the heat to medium low and simmer 10 minutes. Drain the eggs and run under cold water to cool. Lightly tap the eggs against the counter to crack all over. Fill 2 tall, wide glasses three-quarters of the way with warm water. Stir in 1/2 teaspoon white vinegar and a few drops of red food coloring to each, then add 2 eggs to each glass. Refrigerate 4 hours, then drain and peel the eggs.

- To prepare these colourful Greek Easter eggs, start by boiling the eggs. Wash thoroughly the eggs and place them (in one single layer) gently in an empty pot. Add enough cold water to cover the eggs by 3-4 cm.
- Season the water with a good pinch of salt and bring to the boil. If you like your eggs hard-boiled, but juicy at the same time, boil the eggs for 6 minutes.
- Remove the pot from the stove and place the eggs under cold running water for about 1 minute to stop the cooking process. Crack one egg to check if you are happy with the result.
- After the eggs cool down, start preparing the dye for your Greek Easter eggs. Place the warm water and the dye powder in a large glass bowl and stir, until dissolved. Add the vinegar and stir to combine. Place carefully the eggs (comfortably) in the bowl and set aside for 2-3 minutes. Remove with a slotted spoon on a rack over some kitchen paper and let them dry for about 40 minutes.
- To give a little shine on your dyed Greek Easter eggs, wipe them with a paper towel with a little olive oil.

- Wash the beets and cut into quarters and place in a saucepan with 6 cups of cold water and the vinegar. Bring to a boil, reduce heat and simmer for 20 minutes. Remove from heat.
- While the beets are cooking, boil the eggs; place the eggs in a pot in a single layer. Cover with cold water by one inch. Bring to a boil and as soon as the water comes to a boil, remove from the heat and cover the pan. Let the eggs sit in the water for 12 minutes. Remove the eggs from the hot water, crack the shells well but leave the shells on the eggs. Place the warm eggs in the warm beet liquid and let the eggs sit for 30 minutes. Remove the eggs and discard the beets and beet liquid.
- Peel the eggs under cold running water. Dry and cut in half lengthwise. Remove the yolks, place in a mixing bowl and mash with a fork. Add the mayonnaise and wasabi and mix well. Pipe or spoon the egg yolk mixture back into the whites. Garnish with olives if desired. Refrigerate until serving.
