BUCKEYE BALLS
Peanut butter balls dipped in chocolate. They look like buckeye nuts. Absolutely delicious!

Steps:
- Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
- In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

EASY BUCKEYE RECIPE
Steps:
- Combine peanut butter, butter and vanilla with a mixer on medium until fluffy.
- Mix in powdered sugar a little bit at a time until incorporated. Chill mixture 30 minutes.
- Roll into balls and place on a parchment lined pan. Chill mixture 30 minutes.
- Combine chocolate chips and shortening in a small bowl. Microwave at 50% power for 1 minute. Stir and continue microwaving in 30 second increments just until melted.
- Place a toothpick into each peanut butter ball and dip in chocolate leaving a little bit of the peanut butter peeking out the top.
- Place on a parchment lined pan and chill.

- In a small bowl, combine 1 cup confectioners' sugar, peanut butter and butter. Shape into 1-in. balls; place on a waxed paper-lined pan. Chill for 30 minutes or until firm. , In a microwave, melt white candy coating; stir until smooth. Dip balls in coating; allow excess to drip off. Place on waxed paper. Immediately press a Reese's candy onto the top of each eyeball for pupil. Let stand for 30 minutes or until set. , In a small bowl, combine the water, food coloring and remaining confectioners' sugar. Transfer to a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe wavy lines downward from pupil, creating the look of bloodshot eyes. Store in an airtight container.

PEANUT BUTTER BUCKEYES
Peanut Butter Buckeyes are an easy no bake dessert that requires only 7 Ingredients and only a couple minutes of prep! These are a great dessert to make ahead of time and pull out of the fridge or freezer when needed!

Steps:
- Start by adding butter and peanut butter to a stand mixer with the paddle attachment. Beat until smooth and creamy, 2-3 minutes.
- Add vanilla, powdered sugar and salt and mix until combined.
- Roll into balls and place on a baking sheet lined with parchment paper. Place in the freezer for 30 minutes to chill.
- Add chocolate and coconut oil to a small bowl and microwave for 30 second intervals until smooth and fully melted.
- Place a toothpick into the center of the peanut butter ball and dip one at a time in the chocolate making sure to leave some of the peanut butter filling exposed. Allow any excess chocolate to drip off and place back on the baking sheet. Use your fingers to pinch the center to remove the toothpick hole.
- Chill until set then serve and enjoy!

Steps:
- Line a baking sheet with parchment paper; set aside.
- In a stand mixer fitted with the paddle attachment, or in a large bowl, cream the peanut butter, butter and salt to combine. Gradually add the confectioners' sugar and combine until smooth.
- Use a small ice cream scoop or spoon to make thirty-five 1 1/2-inch portions, then use your hands to roll into balls and place on the prepared baking sheet. Refrigerate until firm, 10 to 15 minutes.
- In a heat-proof bowl set over but not touching simmering water, melt the white melting wafers over medium heat. Once the peanut butter balls are firm, dunk them in the melted wafers to coat completely. Use a fork to lift from the bottom, let the excess coating drip off and set back on the prepared baking sheet. Place an eyeball in the center of the ball and repeat the process with the remaining balls.
- Let sit until the white coating is set, about 15 minutes.
