BLOOD ORANGE CHICKEN
I am so in love with blood oranges! And I set out to create a dish that highlighted their deep citrus flavor and absolutely beautiful coloring! However, this dish can be made with navel oranges as well, if blood oranges are out of season. Pairs really well with some fresh steamed vegetables for a healthy dinner!

Steps:
- Place chicken breasts into a baking dish. Squeeze juice of 2 blood oranges over chicken. Marinate from 12 to 24 hours; drain and discard used marinade.
- Heat olive oil in a large skillet over medium heat. Season each chicken breast with salt and black pepper. Brown chicken in hot oil on both sides, about 4 minutes per side; transfer to a plate and cover with aluminum foil.
- Melt butter in a clean skillet over medium heat. Cook and stir onion and garlic in melted butter until onion is translucent and garlic has begun to brown, about 5 minutes. Stir in juice of 3 blood oranges, chicken stock, white wine, and parsley. Bring mixture to a boil. Return chicken breasts to skillet, reduce heat to low, and cover. Simmer until chicken is no longer pink inside, about 7 minutes per side.
- Place chicken to serving plates, leaving pan juices; dissolve honey in the pan juices and simmer sauce until thickened, about 2 minutes. Spoon sauce over chicken breasts to serve.

BOODLE'S ORANGE FOOL
Boodle's Club in London's St. James's Street, was founded in 1764 and this luscious fool has been a speciality on the menu for many years. It is a little like a trifle, with a sponge cake base which sops up the creamy, fruit-flavoured mixture on top.

Steps:
- Cut off the ends of the blood oranges. Slice off the peel and white pith with a paring knife. Cut between the membranes toward the center to release the segments. Squeeze the membranes over a bowl to extract the juice; strain out the seeds.
- Combine all but 1 tablespoon of the blood orange juice, 1/3 cup sugar, 1 tablespoon liqueur and 1/4 cup water in small saucepan. Bring to a boil and cook until syrupy, 2 to 3 minutes. Let cool.
- Bring 2 inches water to a simmer in a saucepan over medium-low heat. Whisk the egg yolks, lemon juice, the reserved 1 tablespoon blood orange juice and the remaining 1/3 cup sugar and 2 tablespoons liqueur in a heatproof bowl that fits in the pan without touching the water. Whisk constantly, scraping the bowl, until the custard is thick, 10 to 12 minutes (remove from the heat if it starts to curdle). Remove the bowl from the pan and whisk until cooled. Beat the cream in a separate bowl with a mixer until stiff, then fold into the custard.
- To assemble, dip 2 ladyfinger halves in the orange juice syrup; layer in each glass. Top with some custard and oranges. Make 2 more layers of ladyfingers, custard and oranges; cover with plastic wrap and chill 2 hours. Crush the remaining 2 ladyfingers and sprinkle on top along with the pistachios.

BLOOD ORANGE JAM RECIPE - THE VIEW FROM GREAT ISLAND

- Remove the peels from the oranges. I do this by slicing off the very top and bottom, and, with the orange firmly sitting on my surface, carefully cut away the peel, from top to bottom, working my way around the orange. Try not to cut away too much of the flesh, but do remove the bitter white part. Discard the peels.
- Thickly slice the oranges and remove any seeds. Puree the oranges, in batches, in a food processor, and then put in a large pot, preferably one with a heavy bottom to prevent scorching. Stir in the sugar and lemon juice, and add the vanilla seeds and pods. Bring up to a boil, lower the heat to medium, and boil for about 40 minutes until the mixture has reduced by at least 2/3, and has thickened. Stir frequently, especially toward the end when it could scorch. Be aware that the jam will thicken even more as it cools.
- Remove the vanilla pods and push the jam through a mesh strainer. I use the back of a large spoon to force as much as possible through. You should only be left with a thin layer of solids. This step is optional.
- Fill your jar or jars and let cool before covering and refrigerating. Jam will keep at least 3 weeks in the refrigerator, or up to a year in the freezer.

- Baked Feta with Dill, Caper Berries and Citrus. Baked feta has been in our arsenal long before it started trending on TikTok. Here, it's paired with bright citrus, briny olives and caper berries and fresh herbs.
- Citrus, Fennel and Avocado Salad. Sharp fennel + peppery arugula + buttery avocado + juicy blood oranges and grapefruit = the most well-rounded winter salad of all time.
- Orange and Chocolate Brioche Tarts. A brioche base stands in for traditional pie crust to make these stunningly unconventional tarts. In addition to deep-colored blood oranges, use Cara Cara oranges or mandarins for their extra sweet flavor.
- Broiled Citrus Ricotta Toast. We wish we looked half as good as this breakfast first thing in the morning. Don't worry about buying a fancy blowtorch to pull it off: Simply pop the honey-coated fruit in the broiler until it begins to caramelize.
- Seared Scallops with Citrus-Shallot Salad. You can use any type of orange you'd like for this seafood recipe. Whatever you do, be sure to thoroughly pat the scallops dry before searing them, so they get a drool-worthy outer crust.
- Mixed Citrus and California Avocado Salad with Poppyseed Dressing. Clementines, grapefruits and blood oranges will all taste equally divine drizzled in creamy coconut-lemon dressing.
- Blood Orange Eton Mess. This old-school British dessert stars light-as-air meringue and whipped cream. Instead of traditional strawberries, we drench the crisp cookies in homemade blood orange curd.
- Roasted Beet and Citrus Salad. When the weather is dreary and gray, this winter gem is sure to bring some vibrancy to your table. Think bright pink and gold beets, crimson blood oranges and verdant arugula.
- Blood Orange-Mint Gin Fizz. These sippers scream Christmas Eve cocktail hour. We're partial to pairing the three-ingredient syrup with gin and prosecco, but it'd also taste great with vodka or plain seltzer.
- Citrus Shortcake. Think of this shortcake as a massive dessert biscuit blanketed in fresh whipped cream. Keep the citrus fruit separate until you're about to serve your guests so the whipped cream stays in tip-top shape.
