Blood Orange & Pomegranate Champagne Cocktails image

Tart, juicy, and so happy, the pomegranate arils dance in the bubbles!

Number Of Ingredients 5

1/4 cup pomegranate juice
1/4 cup freshly squeezed blood orange juice (from about 1 medium blood orange)
1 teaspoon sugar per glass (optional)
2 cups Prosecco sparkling wine (or champagne/sparkling wine of your choice)
Additional blood orange slices & pomegranate arils for garnish

Steps:

  • Set out 4 champagne flutes - if they're chilled, all the better! Divide juices between each glass (about 1 tablespoon of each type of juice per glass). Add sugar, if using, and stir until dissolved. Fill the cups almost to the top with Prosecco. Pour slowly - there will be fizz! Drop in a few pomegranate arils and top with an orange slice. Serve.

3/4 cup blood orange juice (about 3-4 oranges)
1 (750ml) bottle champagne
1 blood orange for slices for decoration
Paper straws

Steps:

  • Place half an orange slice in each glass or on the rim. Divide blood orange juice evenly among glasses.
  • At serving time top with champagne slowly, tipping glasses at 45 degree angle to minimize foaming.
  • Serve immediately. Add paper straw at serving time so it doesn't get soggy.

1 1/2 cups strained fresh blood orange juice (from about 6 oranges)
1 750-ml bottle chilled brut Champagne or dry sparkling wine
8 blood orange slices (optional)

Steps:

  • Spoon 1 1/2 teaspoons crème de cassis into each of 8 Champagne flutes or other glasses. Add 3 tablespoons juice to each glass. Fill each glass with Champagne, then stir gently. Garnish cocktails with slices of blood orange, if desired.
