3/4 cup (170 grams) unsalted butter (, melted and slightly cooled)
1 cup (200 grams) light brown sugar (, lightly packed)
3/4 cup (150 grams) granulated sugar
2 large eggs (, room temperature)
2 teaspoons pure vanilla extract
2 cups (250 grams) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (190 grams) white chocolate chips ((optional))

Steps:

  • Preheat oven to 350°F (177°C). Line a 9x13-inch baking pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.
  • In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Whisk in the eggs and vanilla extract until fully combined.
  • Add the flour, baking powder, and salt and mix until just combined, then fold in the white chocolate chips. Scoop the batter into the prepared 9x13 pan and spread it around into one even layer.
  • Bake at 350°F (177°C) for 28-32 minutes or until the top is set and lightly browned. Remove from the oven and transfer the pan to a wire rack to cool completely before slicing into bars.

2 large eggs + 1 egg yolk (room temperature preferred)
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
2 teaspoons cornstarch
½ teaspoon baking powder
1 teaspoon salt
⅔ cup white chocolate chips ((115g))
1 cup chopped walnuts ((130g))

Steps:

  • Preheat oven to 350F (175C) and line a 13x9 pan with parchment paper**
  • Combine melted butter and sugar in a large bowl and stir well.
  • Add eggs, egg yolk, and vanilla extract and stir until completely combined. Set aside.
  • In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
  • Gradually stir dry ingredients into wet until completely combined.
  • Fold in white chocolate chips and nuts, if using.
  • Spread blondie batter into prepared pan and transfer to oven.
  • Bake on 350F (175C) for 25-30 minutes*** or until a toothpick inserted in the center comes out clean or with a few fudgy crumbs.

1/2 cup butter
1/2 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
1 tablespoon cocoa powder
13 full size snickers bars, chopped up

Steps:

  • Coat a 9 inch glass pie dish with cooking spray.
  • Melt butter and brown sugar in a large saucepan over medium heat until mixture starts to bubble. Remove from heat and let cool for about 10 minutes.
  • Stir in 1 egg and vanilla until blended.
  • Stir in flour, salt, and baking powder until smooth.
  • Scrape about 3/4 cup of batter into a mound in the middle of the pie plate. Place in freezer for about 10 minutes, or until firm.
  • Meanwhile, melt 1/2 cup of the chocolate chips in microwave or double boiler.
  • Stir the melted chips, the cocoa, and the remaining egg into unused batter.
  • Remove the pie plate from the freezer and press the dough over the bottom and halfway up the sides of the pie plate.
  • Sprinkle chopped Snicker's over dough, then top with chocolate mixture.
  • Bake at 350 for 24-27 minutes, or until tests done.
  • Sprinkle remaining chocolate chips over middle of brownie layer, then spread them out to meet the blondie layer as they melt.
  • Top with chopped nuts or more Snicker's pieces and cool before cutting into wedges.

¼ cup butter at room temperature
1 cup brown sugar
2 eggs
1 (15 ounce) can pumpkin puree
1 ¼ cups all-purpose flour
1 tablespoon pumpkin pie spice
½ teaspoon baking soda
½ teaspoon salt
1 (11 ounce) package butterscotch chips
½ (2.25 ounce) package chopped pecans
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch pan with cooking spray.
  • Mold the pie crust to fit the pan. It may be thin in some spots; that's ok, just try to get it as even as possible.
  • Beat butter and brown sugar together with an electric mixer in a large bowl until smooth. Beat 1 egg into the butter until completely blended; repeat with the second egg.

If nut brittle is my muse, blondie pie is our love child. It is, to date, my favorite pie we've ever created. Dense, sweet, salty, nutty, chock-full of textures large and small, it's perfect to grab a piece of on the go and crush as if it were a slice of pizza.

Yield Makes 1 (10-inch) pie; serves 8 to 10

Number Of Ingredients 3

3/4 recipe Graham Crust (page 112) [255 g (1 1/2 cups)]
1 recipe Blondie Pie Filling (recipe follows)
1 recipe Cashew Praline (recipe follows)

Steps:

  • Heat the oven to 325°F.
  • Dump the graham crust into a 10-inch pie tin. With your fingers and the palms of your hands, press the crust firmly into the pie tin, covering the bottom and sides evenly. Set aside while you make the filling. Wrapped in plastic, the crust can be refrigerated or frozen for up to 2 weeks.
  • Put the pie tin on a sheet pan and pour in the blondie pie filling. Bake the pie for 30 minutes. It will set slightly in the center and darken in color. Add 3 to 5 minutes if that's not the case. Let cool to room temperature.
  • Just before serving, cover the top of the pie with the cashew praline.
  • Any other nut (brittle and praline) will do in this pie, but cashews balance the white chocolate so well without overwhelming the other ingredients. With a stronger nut, this will most likely become a peanut butter blondie pie, or a hazelnut blondie pie, etc.
  • Warm the graham crust slightly in the microwave to make it easy to mold.

1 1/3 cups graham cracker crumbs (about 10 crackers, finely crushed)
1 tablespoon granulated sugar
5 tablespoons unsalted butter, melted
1 stick unsalted butter
3/4 cup pure pumpkin puree
1 cup packed dark brown sugar
1 large egg
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
3/4 cup all-purpose flour
1/4 cup butterscotch chips
8 ounces white chocolate, chopped, plus shaved white chocolate for topping
3 tablespoons heavy cream
2 tablespoons pure pumpkin puree

Steps:

  • Make the crust: Preheat the oven to 350 degrees F. Mix the graham cracker crumbs and granulated sugar in a large bowl. Stir in the melted butter until evenly moistened. Firmly press the crumb mixture into the bottom and up the sides of a 9-inch pie plate (use the bottom of a measuring cup to help). Bake until firm and golden, 12 to 14 minutes. Transfer to a rack to cool completely, about 30 minutes.
  • Meanwhile, make the filling: Melt the butter in a medium saucepan over medium-high heat. Whisk in the pumpkin and brown sugar to dissolve. Remove from the heat and whisk in the egg, vanilla, cinnamon, ginger and salt. Whisk in the flour until smooth, then stir in the butterscotch chips. Scrape the filling into the crust and smooth the top.
  • Bake the pie until the top is golden and begins cracking and a toothpick comes out mostly clean, 30 to 35 minutes. Transfer to a rack to cool completely, at least 2 hours.
  • Meanwhile, make the ganache: Combine the white chocolate and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring, until almost melted, about 1 minute 30 seconds; stir until smooth. (It's OK if a little oil separates out.) Stir in the pumpkin puree until smooth.
  • Gently pour the pumpkin ganache onto the cooled pie and spread to the edges. Top with shaved white chocolate. Refrigerate the pie until set, about 40 minutes. Return to room temperature before serving.

2 teaspoons cinnamon

2 cups apples, peeled, cored and diced small (1/2 inch or so) about 2 large apples
1 tablespoon white sugar, and 2 tsp cinnamon combined and set aside

Steps:

  • mix ingredients (all but last two) in the order listed - batter will be very thick - mix until all dry ingredients are incorporated, but try not to over mix, and fold in apples as gently as possible.
  • press batter down into a greased 9 X 13 pan with the back of a large spoon to even out.
  • sprinkle with cinnamon sugar evenly.
  • bake at 350 for 30-35 minutes, until just beginning to brown on top.
  • allow to cool before cutting to prevent crumbling.

  • Preheat oven to 350°F. Line an 8-by-8-inch pan with aluminum foil or parchment paper and spray with cooking spray; set aside.
  • Place butter in a medium sauce pan and heat over medium heat. Butter will melt, then begin to bubble and foam. Brown specks will begin to form in the bottom of the pan and a white foam will appear on top of the melted butter. Stir the butter very frequently to prevent burning. It should smell very nutty and the butter in the bottom of the pan should have brown flecks in it. This process should take 2-4 minutes. Remove the butter as soon as you see brown specks, remove the pan from the heat and continue to whisk for 30 seconds. Butter can go from being browned and nutty-smelling to burnt and inedible in less than one minute. Transfer butter into large mixing bowl and allow to cool for a few minutes.
  • Whisk the dark brown sugar into the browned butter. Add the egg, vanilla, and whisk to combine. Add the flour, salt, and stir until just combined, taking care not to over-mix. Pour the batter into prepared pan and smooth it lightly with a spatula or offset knife.
  • Prepare the maple pecan layer. Melt butter in a saucepan over medium heat. Once melted, whisk in the brown sugar and maple syrup until brown sugar is dissolved. Bring to a boil, stirring occasionally. Once it reaches a boil, cook for 1 minute and remove from heat. Add heavy cream and stir. Stir in the chopped pecans. Pour the pecan mixture evenly over the blondie batter and smooth the top with an offset spatula.
