This breakfast casserole combines the crusty flavors of a classic French toast with the creaminess of cheese blintz. Serve yours with the accompanying blueberry sauce. This recipe by Marlene Sorosky Gray appeared in the Chicago Tribune.

12 slices sturdy white or egg bread, sliced, crusts removed
4 large eggs
3 eggs white
1 cup milk, whole or low fat
1/4 cup maple syrup
3/4 cup orange juice
8 ounce cream cheese, regular or low-fat, at room temperature
1 cup ricotta, whole or low-fat
1 cup small curd cottage cheese, whole or low-fat
2 large eggs
1/3 cup sugar
1 tablespoon vanilla extract
1 pint fresh or frozen blueberries
1/2 cup sugar
1 teaspoon grated lemon peel
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup water

Steps:

  • Place bread in a single layer on a rimmed baking sheet.
  • In a large bowl, whisk eggs, egg whites, milk, syrup and orange juice until blended.
  • Pour over bread; turn slices over to coat both sides. Set aside.
  • For the filling, place cream cheese, ricotta and cottage cheese in a food processor or a bowl of an electric mixer; blend until smooth.
  • Mix in eggs, sugar and vanilla.
  • Butter a 9-by-13-inch glass baking dish (or coat with nonstick cooking spray).
  • Arrange 6 slices of bread on the bottom.
  • Spoon filling over and spread evenly.
  • With a spatula, place remaining bread over filling.
  • Cover and refrigerate 8 hours or overnight.
  • Heat oven to 350 degrees.
  • Bake French toast until top is golden and casserole is puffed, 50 to 60 minutes.
  • Serve with blueberry sauce or a store-bought sauce of your choice.
  • In a medium saucepan, stir all ingredients together.
  • Bring to a boil over moderate heat, and cook, stirring often, until sauce thickens slightly and sugar is dissolved, 8 to10 minutes.
  • The sauce will continue to thicken as it cools.
  • Sauce may be covered and refrigerated, up to 2 weeks.

This french toast recipe is the definition of breakfast decadence. Everything is prepared the night before and baked in the morning - great for a special occasion or brunch. The blueberry sauce brings the french toast bake over the top. It's sweet and filled with blueberry flavor. We can't wait to try it again with blackberries...

FRENCH TOAST
12 slice bread, any kind or loaf of French bread
2 pkg cream cheese, room temperature, 8 oz each
1 c blueberries, fresh or frozen
12 large eggs
1 c milk, add a little at a time until milk is absorbed by bread
1/3 c maple syrup or honey
BLUEBERRY SAUCE
1 c sugar
2 Tbsp corn starch
1 c water
1 c blueberries, fresh or frozen
1 Tbsp butter

Steps:

  • 1. French Toast Casserole: Spray 9 X 13-inch dish with Pam. Cut or tear bread into cubes and arrange in the bottom of dish.
  • 2. Cut up cream cheese into 1-inch cubes. Drop the cream cheese cubes over the top of the bread. Sprinkle 1 cup blueberries over the top.
  • 3. In mixing bowl, combine 12 eggs, 1 cup milk, 1/3 cup maple syrup. Pour this mixture, a little at a time until the bread soaks up the milk but not soggy. You don't want it to be soggy before you bake it. If it's soggy before you bake it, it will be soggy after you bake it. Cover with foil and refrigerate overnight.
  • 4. Blueberry Sauce: You can make this ahead of time and refrigerate, then warm up before serving. Stir together 1 cup sugar and 2 Tbsp corn starch in a medium saucepan. Add 1 cup water and stir until smooth so corn starch won't be clumpy. Heat to boiling and stir 2-3 minutes until thickened.
  • 5. Add 1 cup blueberries. Simmer for 8-10 minutes, stirring occasionally until blueberries start to burst. Don't let them all burst. I like some of the blueberries whole.
  • 6. Turn heat off the blueberry sauce and stir in 1 Tbsp butter. Store in plastic or glass container and refrigerate until ready to use.
  • 7. The next morning preheat oven to 350 degrees. Take the casserole out of the refrigerator. Place covered casserole in the pre-heated oven and bake for 30 minutes.
  • 8. Then uncover and bake for another 25-30 minutes or until the top is a golden brown and the center is set.
  • 9. While the casserole is baking, you can heat up the blueberry sauce on top of the oven or microwave until warm. Serve over top of casserole.
  • 10. Prep time: 30 min to put everything together 8-24 hours - refrigerate several hours or overnight until bread is soaked through with egg, milk mixture. Cook time: 1 hour
  • 11. Alternate Sauce, I call it cheating. Take jam or preserves, whatever flavor of fruit you are using to make this. Put preserves in a small saucepan. Add 1 Tbsp corn starch. Mix until smooth. Add additional fruit if desired. Warm in a saucepan until smooth and thickened. Serve over the french toast, ice cream or anything else you can think of.

A healthier twist on blueberry french toast casserole. You can make a bunch and freeze before baking for an easy brunch.

10 slices French bread, cut into quarters
4 ounces cream cheese, cut into 1/2 inch cubes
1 cup frozen blueberries
2 eggs
1 cup egg substitute (I like eggbeaters)
1 cup skim milk
1/2 teaspoon vanilla
1/4 cup maple syrup
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon wheat germ
1/2 cup sugar
1 tablespoon cornstarch
1 cup water
1 cup frozen blueberries

Steps:

  • Spray-treat a baking dish.
  • Arrange half of the bread cubes in the dish and top with cream cheese cubes. (this gets messy -- just try to spread the lumps of cream cheese evenly around.).
  • Sprinkle blueberries over the cream cheese and top with the remaining bread cubes.
  • Whisk together the eggs, egg substitute, milk, vanilla, spices and maple syrup. Pour over the bread cubes.
  • Sprinkle wheat germ evenly over casserole.
  • Cover and refrigerate overnight if serving the next day. If not, continue with freezing instructions.
  • Freezing Directions: Cover the pan loosely with plastic wrap and then cover tightly with aluminum foil. Freeze. Freeze cooled sauce separately in quart freezer bags.
  • To make the sauce (this can be made ahead and frozen or made just before serving): in a medium saucepan mix the sugar, cornstarch and water. (Do this before starting to heat the water -- make sure the cornstarch is completely dissolved before you start heating this!)
  • Bring to a boil and cook, stirring constantly for 3-4 minutes.
  • Mix in the blueberries. Reduce heat and simmer 10 minutes. Cool before putting in freezer bags.
  • To cook, thaw overnight in refrigerator. Remove plastic wrap from casserole. Bake covered for 30 minutes at 350 degrees. Uncover and continue baking 25-30 minutes until center is firm and surface is lightly browned. Warm sauce in microwave, stirring often. Serve casserole with warmed sauce.

This is a Barefoot Contessa recipe which sounds wonderful because you bake the blintzes in a large casserole and then cut into squares vs. having to make individual pancakes. They are topped with a wonderful fresh blueberry topping. Would be wonderful for a brunch!!!

1 1/4 cups milk
2 tablespoons sour cream
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
4 extra-large eggs
1 1/3 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 (24 ounce) carton ricotta cheese
8 ounces mascarpone cheese
2 extra-large eggs
1/3 cup sugar
1 tablespoon lemon zest (zest of 2 lemons)
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla extract
1 teaspoon kosher salt
3/4 cup orange juice, freshly squeezed (3 oranges)
2/3 cup sugar
1 tablespoon cornstarch
4 half-pints fresh blueberries
1 teaspoon lemon zest
1 tablespoon lemon juice, freshly squeezed

Steps:

  • Preheat the oven to 350 degrees. Butter a 9 x 13 inch cake pan or baking dish.
  • For the batter: place all the ingredients in the bowl of a food processor fitted with the steel blade and blend until smooth. Pour half of the batter (about 1 3/4 cups) into the prepared dish and bake for 10 minutes, until set.
  • Meanwhile, for the filling, whisk together the ricotta, mascarpone, eggs, and sugar in a large bowl. Add the lemon zest, lemon juice, vanilla, and salt and mix until thoroughly combined. Spread the cheese filling over the baked pancake. Carefully spoon the remaining pancake batter to cover the cheese (use a measuring cup and pour batter into a spoon over the dish -- this will prevent the pancake batter from mixing in with the filling). Return the dish to the oven and continue baking 35-40 minutes, until the top is liqhtly golden and the filling is almost set. Remove from the oven and allow to stand 10-15 minutes. Cut the blintzes in squares and serve warm with the fresh blueberry sauce.
  • Blueberry Sauce: Combine the orange juice, sugar and cornstarch in a medium saucepan and bring to a boil, stirring occasionally. When the mixture is translucent and thickened, stir in the blueberries and simmer for 4-5 minutes, just until a few berries have burst but most are still whole. Stir in the lemon zest and lemon juice and cool. Makes 2 cups.

Steps:

  • Cut bread into 1-in. cubes; place half in a greased 13x9-in. baking dish. Cut cream cheese into 1-in. cubes; place over bread. Top with blueberries and remaining bread cubes. , Whisk the eggs, milk and syrup in a large bowl. Pour over bread mixture. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 30 minutes. Uncover; bake 25-30 minutes longer or until a knife inserted in center comes out clean. , Combine the sugar, water and cornstarch in a small saucepan until smooth. Bring to a boil over medium heat; cook and stir until thickened, 3 minutes. Stir in blueberries; bring to a boil. Reduce heat and simmer until berries burst, 8-10 minutes. Remove from heat; stir in butter. Serve with French toast.
