Time 35m

Yield 20

Number Of Ingredients 7

2 eggs
1 tablespoon white sugar
⅓ teaspoon salt
½ cup all-purpose flour
2 ½ cups milk
1 tablespoon vegetable oil
1 tablespoon butter

Steps:

  • In a medium bowl, whisk together the eggs, sugar, and salt. Sift the flour into the bowl, and stir in along with the milk. Mix until smooth and well blended. The batter should be thin.
  • Heat a griddle or skillet over medium heat. Lightly oil the pan or spray with cooking spray. Pour about 2 tablespoons of the batter, or as much as desired, into the pan. Tilt the pan to spread the batter out evenly. When the edges are crisp looking and the center appears dry, slide a spatula carefully under the blin. Flip, and cook for about 1 minute on the other side, or until lightly browned.
  • Remove blini to a plate. Put a little butter on top, and continue to stack the blini on top of each other. To serve, spread with desired filling, then fold in half, and in half again to form a triangle. Mmm Mmm!

BLINI (RUSSIAN PANCAKES)

Blini (Russian Pancakes) image

Widely popular Russian dish, especially eaten during the Maslenitsa festival in Russia. All kinds of fillings are possible--sweet or savory.

Provided by Kangaroo495

Categories     100+ Breakfast and Brunch Recipes     Pancake Recipes

Time 1h5m

Yield 8

Number Of Ingredients 10

4 ¼ cups milk
5 eggs
⅓ teaspoon salt
2 tablespoons white sugar
½ teaspoon baking soda
⅛ teaspoon citric acid powder
4 cups all-purpose flour
3 tablespoons vegetable oil
1 cup boiling water
⅔ cup butter, divided

Steps:

  • Beat together the milk and the eggs. Stir in the salt and the sugar and mix well. Add the baking soda and citric acid.
  • Blend in the flour. Add the vegetable oil and pour in the boiling water, stirring constantly. The batter should be very thin, almost watery. Set the bowl aside and let it rest for 20 minutes.
  • Melt a tablespoon of butter in a small frying pan over medium-high heat. Pick the pan up off the heat. Pour in a ladleful of batter while you rotate your wrist, tilting the pan so the batter makes a circle and coats the bottom. The blini should be very thin.
  • Return the pan to the heat. Cook the blini for 90 seconds. Carefully lift up an edge of the blini to see if it's fully cooked: the edges will be golden and it should have brown spots on the surface. Flip the blini over and cook the other side for 1 minute.
  • Transfer the blini to a plate lined with a clean kitchen towel. Continue cooking the blini, adding an additional tablespoon of butter to the pan after each 4 blini. Stack them on top of each other and cover with the kitchen towel to keep warm.
  • Spread your favorite filling in the center of the blini, and fold three times to make a triangle shape. You can also fold up all 4 sides, like a small burrito.

BLINIS WITH SMOKED SALMON AND CAVIAR

Blinis with Smoked Salmon and Caviar image

In the normal scheme of things, cheats don't do canapés. Far too fiddly and fussy. However, now you can buy cocktail blinis (bite-sized buckwheat pancakes), all this actually involves is a quick assembly job. That said, though, they really do look and taste the business if you want to have friends in for festive drinks.

Categories     Buffet food     Easy Entertaining     Christmas: Last-minute and Easy     Christmas: Drinks, Parties and Buffets

Yield Serves 8

Number Of Ingredients 5

2 x 135 g packets cocktail blinis (32 in total)
3 oz (75 g) sliced smoked salmon (with the brown bits removed)
1 x 55 g tub Avruga (smoked herring roe) or the real McCoy, caviar, if you're flush!
4 oz (110 g) crème fraîche
1 x 20 g packet of fresh dill, torn into 32 sprigs

Steps:

  • First, preheat the oven to gas mark 6, 400ºF, 200ºC. Arrange the blinis on 2 baking trays and pop them in the oven on a high shelf for 4 minutes - this somehow seems to liven them up. Then let them cool while you cut the salmon into 16 even-sized pieces. Now put about 1⁄2 teaspoon of the crème fraîche on to 16 of the cooled blinis, then take the pieces of salmon and fold them loosely, to create some height, and place one on each of the crème fraîche-topped blinis. Now place 1⁄2 teaspoon of the crème fraîche on each of the rest of the blinis, followed by 1 teaspoon of the Avruga. Finally, garnish each one with a tiny sprig of dill. The canapés can be made 2 hours in advance if you keep them in a lidded container in the fridge. But don't use clingfilm, as it squashes them. Remove them from the fridge 30 minutes before serving.

BLINI WITH MUSHROOM CAVIAR

Blini With Mushroom Caviar image

In Russian kitchens, mushroom caviar is made with cooked mushrooms and lots of sour cream. I use canned tomatoes in this version, and the result makes a savory topping for blini (and for latke, I found, as I tested the recipe during Chanukah). Make sure to finely chop the mushrooms.

Provided by Martha Rose Shulman

Categories     appetizer

Time 45m

Yield 12 blini toppings, four to six as a side dish

Number Of Ingredients 10

2 tablespoons extra virgin olive oil
2 shallots, minced
1 pound mushrooms, trimmed and finely chopped
2 garlic cloves, minced
Salt
freshly ground pepper
1 14-ounce can chopped tomatoes, with juice
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh dill
1 batch buckwheat or cornmeal blini

Steps:

  • Heat the olive oil in a large, heavy nonstick skillet over medium heat. Add the shallot. Cook, stirring, until tender, three to five minutes. Add the mushrooms. Cook, stirring, until they begin to sweat, and add the garlic, salt and pepper. Cook, stirring often over medium heat, for five minutes until the mushrooms are tender and fragrant. Add the tomatoes, and bring to a simmer. Cover, reduce the heat and simmer for 30 minutes. Stir in the lemon juice, and taste and adjust the seasonings. There should be very little liquid in the pan. If there is, continue to simmer uncovered until most of the liquid has evaporated. Stir in the dill, and serve.

Yield Makes 36 hors d'oeuvres

Number Of Ingredients 10

1/4 cup warm water (105-115°F)
1 (1/4-oz) package active dry yeast (1 1/4 teaspoons)
1 1/2 tablespoons sugar
1/2 cup sifted all-purpose flour (sift before measuring)
1/2 cup sifted buckwheat flour (sift before measuring)
1/4 teaspoon salt
1 cup whole milk, heated to warm (105-115°F)
1/2 stick (1/4 cup) unsalted butter, melted and cooled
2 large eggs, lightly beaten
Accompaniments: sour cream and caviar

Steps:

  • Preheat oven to 250°F.
  • Stir together warm water, yeast, and sugar in a bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)

Transfer to an ovenproof platter and keep blini warm in oven.
  • Serve blini topped with sour cream and caviar.
