4 pears, halved, but not peeled or cored
Extra-virgin olive oil
1/4 bunch fresh thyme
Salt and freshly ground black pepper
1/4 cup crumbled good-quality blue cheese
1/4 cup walnut pieces

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the pears, cut sides up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Strip the leaves from the thyme branches and sprinkle over the pears. Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
  • Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.

½ cup sliced red onion
1 Bosc pear, cored and sliced
½ cup chopped candied pecans
½ cup crumbled blue cheese
¼ cup maple syrup
⅓ cup apple cider vinegar
½ cup mayonnaise
2 tablespoons packed brown sugar
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup walnut oil

Steps:

  • Place the salad greens in a large bowl. Add the red onion, pear, pecans, and blue cheese, and toss to mix evenly.
  • To make the dressing, place the maple syrup, vinegar, mayonnaise, brown sugar, salt, and pepper in a blender, and blend thoroughly. With the motor running, slowly pour in the walnut oil. Blend until mixture becomes creamy, about 1 minute. Pour over salad mixture, and toss to coat greens evenly. Serve immediately.

We really enjoyed these scrumptious tea sandwiches. They're slightly salty and creamy from the Bleu cheese spread. The mildly sweet and crisp slices of pear are a tasty contrast to the creamy filling. They are perfect sandwiches for parties or afternoon tea.

4 Tbsp cream cheese, room temperature
2 Tbsp Bleu cheese
butter, softened
6 slice bread, thin, rye, pumpernickel or any multi-grain
1/2 c walnuts, chopped very fine, and toasted
2-3 pears, ripe and thinly sliced into 12 pieces

Steps:

  • 1. Spread each slice of bread with a thin layer of butter.
  • 2. Mash cream and Bleu cheese together in a bowl until combined well. Spread equal amounts of cheese on 3 slices of bread.
  • 3. Sprinkle with a heaping tablespoon of walnuts over cheese.
  • 4. Place 4 thin slices of pear on top of cheese and nuts.
  • 5. Cover with remaining bread slices. Press down firmly.
  • 6. Remove crusts and cut into 4 pieces.
  • 7. Serve immediately or wrap well and chill until tea time.

6 ounces stilton blue cheese
1 ripe pear
2/3 cup walnuts, toasted (see recipe for Toasted Walnuts)
8 slices bread (white or dark)
4 tablespoons unsalted butter, softened
1 small shallot, chopped fine (or onion)
salt and pepper (optional)
fresh tarragon, chopped fine (or herb of choice)

Steps:

  • Toast the walnuts, then finely chop.
  • Remove the core from the pear and slice thinly. Set aside.
  • In a bowl, combine the crumbled cheese and nuts.
  • Add the butter, tarragon, shallot, optional salt and pepper to this mixture and mix well.
  • Spread the seasoned butter onto 8 slices of bread.
  • Lay thinly sliced pears on four of the bread slices.
  • Cover with the remaining four slices of bread.
  • Wrap each sandwich securely with plastic wrap and refrigerate until cold and mixture is set.
  • Unwrap the sandwiches and trim the crusts.
  • Cut each sandwich into 4 triangles or squares.
  • Note: To add a little color to the sandwiches, you might like to sprinkle a bit of the herbs on top of each square or trangle.

4 Thick slices of country bread
1 Tbsp. unsalted butter, melted or olive oil
4-ounces of Blue cheese - thinly sliced
1 large Bosc or Bartlett pear - thinly sliced
1 cup fresh arugula
Optional: 2 tsp. Dijon mustard

Steps:

  • Brush one side of each slice of bread with butter or olive oil.
  • Form sandwiches with buttered-side out. Spread a thin layer of Dijon mustard on one side onto each sandwich, then add a few slices of pear and pile on some fresh arugula.
  • Top with a thin slice of blue cheese and close the sandwiches.
  • Heat a large nonstick skillet over low heat. Spray lightly with cooking spray. Grill the sandwiches, on low heat until the bread is golden brown, crispy, and the cheese is melted, about 2 to 3 minutes per side.
  • Remove and cut sandwiches in half or diagonally and serve immediately.
  • Serves 2

I used mixed greens, pears, honey and bleu cheese-all from Oregon sources in this salad. For alternate versions, try two different varieties of pears. For example, I tested Forelle and Anjou pears. Rogue Creamery artisan cheesemaker supplied the bleu cheese (in particular their Smokey Blue), too. A light dressing tops it off. From a local source. Makes 6 small dinner salads. 2 medium pears, thinly sliced (any variety, read intro)
1/4 cup chopped walnuts, toasted
1/2 cup artisan blue cheese
2 tablespoons honey (soften the honey if necessary to make it easier to whisk) or 2 tablespoons agave nectar (soften the honey if necessary to make it easier to whisk)
2 teaspoons fresh lemon juice
salt, to taste
cracked black pepper, to taste

Steps:

  • In a salad bowl, lightly toss the greens with the pears.
  • In a small non-reactive bowl, combine the honey and lemon juice. Whisk with the salt and pepper, to taste.
  • Pour the dressing over the the greens and pears and toss .
  • Arrange the salad on six individual salad plates.
  • Garnish with the walnuts and bleu cheese.

1/2 cup walnuts, chopped
Coarse salt and ground pepper
4 ounces (1 cup) cold crumbled blue cheese, such as Stilton
Crackers or crostini, for serving

Steps:

  • In a medium bowl, stir cream cheese with a wooden spoon until softened. Mix in walnuts; season with salt and pepper. Gently fold in blue cheese, breaking up as little as possible. Transfermixture to a small bowl; smooth top. Serve with crackers or crostini. To store: Cover with plastic wrapand refrigerate, up to 1 week.

2 large white onions, thinly sliced
2 tablespoons (packed) golden brown sugar
2 tablespoons rice vinegar
2 tablespoons chopped golden raisins
8 5 1/2x3x1/2-inch slices rustic country bread, such as walnut, pecan, or walnut-raisin
2 6-ounce wedges soft blue cheese (such as Cambazola, rind trimmed, or Gorgonzola dolcelatte), sliced
1/4 cup (1/2 stick) butter, room temperature

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onions; cook until just beginning to color, stirring often, about 20 minutes. Add sugar and cook until onions are deep golden brown and very soft, stirring occasionally, about 25 minutes. Remove from heat. Mix in vinegar and raisins. Season caramelized onions to taste with salt and pepper. Cool. (Can be made 3 days ahead. Cover and refrigerate.)
  • Arrange 4 bread slices on work surface. Top with cheese, dividing equally. Top each with 1/4 cup caramelized onions. Top with remaining bread slices to form 4 sandwiches. Spread half of butter over tops of sandwiches. Heat heavy large skillet over medium heat. Add sandwiches, buttered side down. Spread remaining butter over tops of bread. Partially cover and cook until bottoms are brown, about 3 minutes. Turn sandwiches over. Cook until second sides brown, about 3 minutes. Transfer to cutting board. Cut each sandwich into 6 wedges.

The original idea for this came from a friend. I varied the type of cheese and bread, and added a finishing step to create these tasty little sandwiches. I used low-sodium bacon, however, I think any bacon would work well. Served with a side salad of mixed greens and fresh berries, this makes a great brunch or light supper sandwich.

1 ½ cups apple juice
6 slices bacon
2 rosemary focaccia bread, or other square rolls, split
6 ounces blue cheese, crumbled

Steps:

  • Place the pear slices in a skillet, and pour in the apple juice. Cook over medium heat until the pears are soft, about 5 minutes. Drain pears and reserve; discard juice.
  • Meanwhile, place the bacon in a skillet and cook over medium-high heat until evenly brown. Drain on paper towels. Crumble and set aside.
  • Preheat the oven broiler.
  • Place the focaccia bread slices on a baking sheet. Divide the pear slices evenly among the bread, and top evenly with the bacon, and then with the blue cheese.
  • Broil the sandwiches in the preheated broiler until the cheese melts, about 2 minutes.
