Steps:
- Cook macaroni noodles in boiling salted water for about 10 minutes or until al dente; drain.
- Meanwhile, in a medium saucepan over medium heat combine butter, salt, pepper, paprika and bell peppers, and onion. Simmer until peppers and onions are soft.
- Stir in cream, flour, sour cream, bleu cheese and Parmesan cheese; cook, stirring often, until smooth.
- Add milk, by tbsps, if desired for a thinner sauce.
- Pour the hot cheese mixture over the hot cooked macaroni and toss to coat.
- Serve.

BLUE CHEESE PASTA
This goes together while the pasta water is boiling. You can also top this with salmon, chicken, crumbled bacon or tomatoes. This sauce is also great with steak.

- While the pasta is boiling: Melt butter in sauce pan over med-low.
- Add onion and garlic saute about 5 minutes.
- Pour in half& half, let heat through.
- Wisk in blue and parmesan cheeses.
- Salt and pepper to taste.
- Sauce will thicken a bit upon standing.
- Toss with cooked pasta.

- Boil pasta to al dente in salted water, drain, and set aside with a lid to keep warm.
- In a medium saucepan, melt the butter over medium-low heat, add the flour and cook for about 3-5 minutes or until it smells nutty, stirring constantly.
- Whisk in the milk and bring to a boil, stirring occasionally.
- Remove from the heat and add the rest of the ingredients.
- Stir into the pasta and serve.

- Heat oven to 350°F Cook macaroni according to package directions. Drain.
- Melt butter in 3-quart saucepan until sizzling; stir in flour, salt and pepper. Add milk; cook over medium heat, stirring constantly, until mixture boils and thickens (5 to 7 minutes).
- Reduce heat to low; stir in cheese. Cook until cheese is melted (3 to 5 minutes). Add cooked macaroni; mix well.
- Spoon into ungreased 2-quart casserole. crumble bacon and ble cheese as a topping
- Bake for 25 to 30 minutes or until heated through.

- Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally, about 8 minutes. Drain.
- Meanwhile, melt butter in heavy large saucepan over medium-low heat. Add flour. Cook 1 minute, stirring constantly (do not allow to brown).
- Gradually whisk in milk and cream. Simmer until mixture thickens slightly, whisking occasionally, about 3 minutes. Reduce heat to low. Add grated cheddar cheese and 1 cup crumbled blue cheese. Whisk until cheese melts, about 2 minutes. Season sauce to taste with salt and pepper.
- Add cooked pasta to sauce; stir to coat. Transfer mixture to prepared baking dish. Sprinkle with remaining 1/2 cup blue cheese. Bake until sauce begins to bubble, about 25 minutes. Sprinkle with chives and serve.

- Heat bacon in a skillet over medium-high heat for about 5-7 minutes, stirring frequently, until crispy.
- In a separate bowl, whisk together evaporated milk, egg, salt, pepper and cayenne until combined. Set aside.

- Cook cavatappi pasta (I like to use these spirally noodles because they sop up the cheese) according to package instructions and strain and leave the pasta in a colander while you make the sauce.
- In the same pot used to cook the pasta that is now empty, melt the butter and as soon as it is almost melted add in ½ pint of heavy whipping cream. Whisking occasionally and let the butter and cream come to a slow boil, add the flour and garlic salt in and whisk until combined.
- Next add the milk, and whisking occasionally let the milk come to a boil (about 3-5 minutes). As soon as you start seeing bubbles (the mixture will rise in the pot a little) add the shredded cheddar and while whisking occasionally the cheddar will melt and then you’ll add 5 oz of the blue cheese crumbles (1/2 of the blue cheese) and let it melt.
