- Place garlic, blue cheese, white wine, and heavy cream in medium saucepan over medium low heat. Heat mixture, stirring frequently, until cheese is melted and incorporated. Stir in Dijon mustard and thyme.
- Pour into fondue pot or warming dish. Serve hot with chips.

- Heat wine and cream cheese, stirring until cheese melts.
- Add Monterey Jack cheese, a little at a time, stirring constantly.
- Blend in blue cheese. When smooth, add kirsch.
- Serve with dippers of French bread, fresh fruit or vegetables.

CLASSIC CHEESE FONDUE
Steps:
- Toss the Gruyere and Emmental with the flour in a medium bowl.
- Combine the wine and garlic in a fondue pot or medium saucepan and bring to a simmer. Gradually add the cheese mixture while stirring constantly, simmering until the cheese is incorporated and thoroughly melted. Stir in the mustard, nutmeg and cherry brandy if using.
- If you are using a fondue pot, set it over its burner. Otherwise, pour the mixture into a slow cooker and set it to "warm." Serve with an assortment of dippers such as baguette cubes, sliced vegetables and sliced fruit.

- Combine Cheddar cheese, Swiss cheese, flour, salt, and black pepper in a bowl.
- Rub cut side of garlic clove around bottom and sides of fondue pot.
- Pour beer into fondue pot and slowly bring to a simmer over medium-low heat, about 5 minutes.
- Gradually stir cheese mixture into beer, adding small amounts at a time, until cheese is melted and blended, 10 to 15 minutes.
- Stir hot pepper sauce into cheese mixture.

- In a medium bowl, toss the Swiss and Gruyère cheeses with the cornstarch.
- Smash the garlic clove, but leave it whole.
- Add the cheese, wine, lemon juice, garlic, salt, and pepper to the slow cooker.
- Cover, turn the slow cooker on high, and cook for 15 minutes. Remove the garlic and stir. Cover again and cook for 45 minutes more on high, stirring every 15 minutes, until the cheese is melted and smooth. Be careful not to overcook or the fondue will seize.
- Turn the slow cooker to warm and serve the fondue with your favorite items for dipping.
- Enjoy!

- Rub inside of a large saucepan with cut sides of garlic. Finely grate garlic into saucepan; add beer and 1 1/2 cups wine and bring to a boil over medium heat. Whisk cornstarch and remaining 1/2 cup wine in a small bowl until no lumps remain, then whisk into liquid in saucepan. Bring to a boil, whisking constantly, then reduce heat so mixture is at a very low simmer and very gradually add Gruyère and Babybel, whisking until smooth (fully incorporate each batch of cheese before adding more).

- Rub inside of a fondue pot with garlic; discard garlic. Pour cider or wine into pot, and place over medium-low heat. When liquid starts to bubble, start adding cheeses by the handful, stirring until melted and combined.
- Whisk together lemon juice and cornstarch in a small bowl until cornstarch dissolves; stir into cheese mixture. Continue stirring until mixture is smooth and bubbling slightly, about five minutes. Season with nutmeg and pepper.
