1 lb ground beef
1.5 tsp Chili Spice #1
1/4 lb bacon, chopped
1.5 tsp Chili Spice #2
1/2 Cup chopped onion
15 oz diced tomato
15 oz crushed tomato
1.5 T chili spice #3
1/4 cup Sherry
1/4 cup Worchestershire Sauce
1/2 Beer
2 beef bouillon cubes
4 oz blue cheese crumbles
Chili Spice
2 tsp paprika
2 tsp dark chili powder
2 tsp black pepper
1.5 tsp oregano
1.5 tsp thyme
2 tsp coriander
1 tsp cayenne
1 tsp white pepper
2 tsp onion powder
2 tsp garlic powder
2 tsp granulated garlic
1/4 tsp cumin

Steps:

Brown Ground Beef and chili spice #1 in heavy bottom stock pot. Add Onion, bacon, and chili spice #2until bacon is crisp and onion is soft over medium heat for 5-8 minutes. Add Sherry, bouillon, worschestershire and beer cook for 5 minutes. Add tomatoes and chili spice #3 cook for 10-15 minutes to incorporate the flavors. Remove from heat, add cheese and serve.
