CHICKEN CORDON BLEU PASTA
Facebook fans of my blog, Chef in Training, inspired me to make this creamy pasta casserole out of ingredients I had on hand. Success! I took the dish for another flavorful spin and added a bit of smoky bacon and toasted bread crumbs. -Nikki Barton, Providence, Utah

Steps:
- Preheat oven to 350°. Cook pasta according to package directions for al dente., Meanwhile, in a large saucepan, heat cream and cream cheese over medium heat until smooth, stirring occasionally. Stir in 1 cup Swiss cheese, onion powder, garlic salt and pepper until blended., Drain pasta; stir in chicken, bacon and ham. Add sauce; toss to coat. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining cheese and the bread crumbs. Bake, uncovered, 18-22 minutes or until heated through.

BLUE CHEESE CHICKEN
My husband created this dish on Valentine's day our second year of marriage. We didn't have a lot of money and he wanted to create something special for me. It has been a favorite ever since. Easy to make and delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.
- Spread cheese mixture over each chicken piece. Roll each piece of chicken around filling; dip into egg and press into bread crumbs until coated. Arrange chicken rolls on a baking sheet or baking pan.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cheese mixture will start to run out when done. Serve chicken over cooked rice.

BLEU CHEESE CHICKEN PASTA
If you don't like bleu cheese, this isn't a recipe for you. I, of course, do, and threw this together spur-of-the-moment one day when all I had in the kitchen was chicken, pasta, milk and bleu cheese. If you like a more liquid sauce, add more milk, if you like a creamier sauce, add less.

Steps:
- Bring water to a boil in a pot and add salt and pasta.
- Heat olive oil in pan and add chicken, salt and seasoning.
- Cook chicken thoroughly and drain.
- Cook pasta thoroughly and drain.
- Add pasta, chicken, bleu cheese and milk into small pot and heat until cheese is melted and sauce thickens, stirring frequently.
- Remove from heat and serve.

BLUE CHEESE PASTA
This goes together while the pasta water is boiling. You can also top this with salmon, chicken, crumbled bacon or tomatoes. This sauce is also great with steak.

- While the pasta is boiling: Melt butter in sauce pan over med-low.
- Add onion and garlic saute about 5 minutes.
- Pour in half& half, let heat through.
- Wisk in blue and parmesan cheeses.
- Salt and pepper to taste.
- Sauce will thicken a bit upon standing.
- Toss with cooked pasta.
SWISS CHEESE SAUCE FOR CHICKEN CORDON BLEU
This Swiss cheese sauce is great for putting over chicken cordon bleu, but can also be used over egg dishes, vegetables, etc.

- Melt butter in a heavy saucepan over low heat. Whisk in flour gradually until smooth and all lumps are gone. Cook, whisking constantly, for 1 minute. Gradually whisk in 2 cups milk and cook over medium heat, whisking constantly, until mixture has thickened and is bubbly, about 5 minutes. Add Swiss cheese, salt, and pepper. Cook and stir until cheese has melted.
