3-INGREDIENT APPLESAUCE (NO SUGAR ADDED)
Steps:
- To a medium saucepan (see notes for Instant Pot instructions) add peeled chopped apples, cinnamon, a dash of water (~2-3 Tbsp / 30-45 ml as original recipe is written), and lemon juice or apple cider vinegar. Stir.
- Cover and cook over medium heat until it simmers, then reduce heat to low / medium-low and continue cooking until the apples are very tender and slightly caramelized - about 15-20 minutes. Stir occasionally.
- Use the back of a wooden spoon or potato masher to mash into a loose sauce. You could also blend with an immersion blender, in a food processor or high-speed blender for smoother texture (optional) - a helpful step if you left the skins on. Add a dash of maple syrup or sugar of choice to sweeten (optional - depends on sweetness of your apples).
- Enjoy fresh, or store cooled leftovers in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Enjoy cold or reheated in the microwave or on the stovetop over low heat until hot (add more water as needed if dry).

Steps:
- Combine the apples, sugar and 1/2 cup water in a medium saucepan. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium; cover and cook until the apples are very soft and most of the liquid has evaporated, about 20 minutes (or microwave in a large microwave-safe bowl, covered, about 10 minutes).
- Add lemon juice to taste to the applesauce, then transfer to a blender or food processor and puree (or puree in the pan with an immersion blender).
- Transfer the applesauce to a bowl and refrigerate until cool.
- Fun Flavors
- Apricot: Stir in 1/4 cup apricot jam.
- Raspberry: Add 1 cup raspberries while the applesauce is still warm; mash slightly.
- Cranberry-Spice: Add 1 tablespoon brown sugar, 1/4 teaspoon ground cinnamon and 1/2 cup dried cranberries while the applesauce is still warm.
THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
BLENDER QUICK APPLESAUCE
You can serve cold. If you serve cold you can use Splenda sugar blend or Splenda brown sugar blend. This does not have to be cooked. If heated & served warm, use regular brown or white sugar.

Steps:
- Place water, salt and lemon juice in blender.
- Add half of the apple slices with half of the sugar or Splenda blend.
- Pulse 3 or 4 times.
- Add other half of apples. Add the other half of sugar or Splenda blend and add allspice.
- Pulse until all is blended.
- Taste. If you want more sugar, add 1 tsp at a time. Stir until blended.
- Cover, chill and serve or serve immediately.
- This applesauce is not light colored. It is very good. There is a lot of water and whiteners in manufactured applesauces and I personally prefer making my own. When I don't want to open a whole quart of home canned I make this recipe.Very quick to prepare.

- Steam the apples on your stove for about 20 minutes. I use a steamer basket for this. The apples should look wilted and soft. Alternately, place the apples in a Pyrex casserole dish with a lid and place in the microwave, covered. Cook for about 10 minutes.
- Place all the apples and their juices into a high powered blender, like a Blendtec. The apples should not go above the liquid lines, or the mixture will overflow. Add in your cinnamon. Close the lid, and puree on high for about a minute

- Preheat oven to 400°F. Line 12 muffin cups with paper liners and lightly spray liners with nonstick spray.
- Measure oats into a blender. Blend until the oats are ground into a fine powder, like flour. Shake the ground oats to one side of the pitcher and add the baking powder, cinnamon, baking soda, salt, applesauce, honey, Greek yogurt, eggs, and vanilla to the blender. Turn on the blender to low speed and then immediately increase to high speed. Blend until the ingredients are just combined, stopping and scraping down the sides of the blender as necessary. If using nuts, add them at the very end; sprinkle them on top of the finished batter and quickly pulse one time to incorporate the nuts without chopping them further.
- Evenly divide the batter between the prepared muffin cups, pouring it directly from the blender pitcher. If desired, sprinkle the top of each muffin with additional chopped nuts. Bake for 18 to 22 minutes or until the muffins test done with a toothpick. Allow the muffins to cool in the pan for 5 minutes, and then transfer them to a wire rack to finish cooling.

- Start by peeling your apples. I used sliced Crunch Pak apples, so grabbing a paring knife and peeling the apples took no time at all. For about 1 quart of applesauce, you'll need about 2 lbs of apples.
- Toss your apples into the bottom of the pressure cooker and add 1/2 cup of water. Or for a deeper flavor use apple juice or apple cider.
- Add 1 Tbsp of sugar. Totally optional, but if you like your applesauce sweetened, this is a good guide.
