SWEET VIRGIN BLENDED CHERRY MOJITO



Sweet Virgin Blended Cherry Mojito image

What a great way to have something to sip on at gatherings, holidays or in the hot summer months. This one will give the taste of a Mojito without the hangover the next day.

Number Of Ingredients 12

1 lb frozen pitted cherries
2 c crushed ice
1/2 c packed fresh mint leaves, must be fresh
1/3 c fresh lime juice (about 3 limes)
1 c citrus flavored soft drink (sprite, 7-up, sierra mist)
1 2/3 c lime simple syrup (recipe below)
lime wedges, fresh or frozen pitted cherries and ice for serving
LIME SIMPLE SYRUP
2 c sugar
1 c water
3 limes, zested
yields about 1 2/3 cups

Steps:

  • 1. For Simple Syrup: In a small saucepan, combine sugar, water and lime zest over medium heat and bring to boil. Reduce heat and simmer for about 5 minutes stirring occasionally until sugar is dissolved. Remove from heat and let the syrup cool. About 15 minutes. Strain through fine wire strainer before mixing into drink.
  • 2. For drink: Place cherries, crushed ice, mint, lime juice and simple syrup into blender and blend till smooth. Add Citrus flavored drink and combine with spoon (do not turn on blender for this part). Pour mixture into chilled glasses and top with ice, lime wedges and cherries.

BLENDER MOJITOS

Classic mojitos made in a blender! Perfect for those lazy summer days. Who has the muscles for muddling?!

Juice from 5 large limes
Leaves from 5-6 sprigs mint
5 tablespoons sugar
8 ounces rum
Club soda

Steps:

  • Throw the mint leaves and the sugar into a pitcher. Smoosh it around a bit with a spoon to get a bit of the mint oil out of the leaves. Roll the limes on the counter to help release the juice, slice them in half, and squeeze into the pitcher. You can even press a spoon into the lime halves to eke out every last bit of juice, if you want.
  • Now the most important step: ADD THE RUM! :)
  • Next: If you're camping and your guy is waiting outside with the awesome hand-crank blender at the ready, take the pitcher outside for the next step. Or you can do this with your blender inside, too.
  • Fill the blender with 4-5 cups of ice cubes. Pour half the mojito mixture in, and blend on a low speed for 5-10 seconds, just until the mint has been chopped and the ice is a little smaller.
  • Divide the mixture between two large glasses, top with club soda to taste. Pour the second half in the blender, and do it again.
  • Now just drop straws in, pass 'em out, and let the party begin!

1 lb bag frozen pitted cherries
1/2/ c mint, packed fresh leaves
lime simple syrup (see below)
1 c rum, white
lime wedges and fresh cherries for garnish
SIMPLE LIME SYRUP
1 c sugar
3 limes, juiced and zested
1 c water

Steps:

  • 1. Place the frozen cherries, ice, mint, rum, and lime simple syrup in a blender. Blend until smooth.
  • 2. Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.
  • 3. Lime Simple Syrup Directions In a small saucepan, combine the sugar, water, lime juice, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for about 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool to room temperature minutes before using. If making in advance, store in a sealed container within the refrigerator. Notes: You can substitue vodka for the rum if preferred.

BING CHERRY MOJITOS

1 lime (cut in half)
12 mint leaves
6 bing cherries (stems removed and pitted)
1/4 cup cherry simple syrup (recipe follows)
1 1/2 ounces white rum
Club soda
Cherry simple syrup
3/4 cup bing cherries (stems removed and pitted)
1/2 cup water
1/4 cup sugar

Steps:

  • Make the simple syrup. Heat water and sugar over medium-low heat until sugar dissolves. Let cool slightly, then add to a blender along with the 3/4 cup bing cherries. Puree, then strain through a fine-mesh sieve into a small container or pitcher. Set aside.
  • In a large, sturdy glass, muddle together the lime halves, mint, and cherries until the lime juice has been released and the mint and cherries are well-smashed.
  • Stir in the cherry simple syrup and white rum.
  • Fill glass with ice and top off with club soda. Add a wide straw, garnish with a mint sprig and a cherry, and serve.
