32 raw peeled large shrimp
1/4 lb unsalted butter
mushroom (optional)
tomatoes (optional)
onion (optional)
bell pepper, sliced (optional)
1 teaspoon ground basil
1 teaspoon ground thyme
1 teaspoon garlic
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon salt (sea salt is best)
1 teaspoon onion powder
2 teaspoons cayenne pepper
1 teaspoon sweet paprika

Steps:

  • Mix spice ingredients thoroughly in a small bowl (make a double or triple batch and store the remainder for later use!) Dredge shrimp through the mixture.
  • Place a large skillet over a very high heat, and melt the butter.
  • Place the shrimp in the skillet and turn heat down to medium.
  • Cook on both sides for approximately 7 minutes (maybe less) each- pay attention to the shrimp as they cook quickly; when the shrimp curl, they are done.
  • Optional – sprinkle the vegetables with the spice mix and sauté in the butter in the same skillet.
  • Serve with lots of garlic bread and ice-cold beer or chilled white wine.

I played around with some different seafood and fettuccini recipes, and combined our favorites into this delicious Cajun shrimp and sausage Alfredo dish that my family can't seem to get enough of. It is filling and so quick and easy to make.

¼ cup butter
2 tablespoons olive oil
1 (12 ounce) package pork sausage links, sliced
1 (10 ounce) package frozen bell pepper, celery, and onion blend (such as Pictsweet® Farms Seasoning Blend)
1 (4 ounce) jar sliced mushrooms, drained
2 tablespoons Creole seasoning (such as Tony Chachere's®)
1 tablespoon minced garlic
2 teaspoons ground black pepper
1 pound uncooked medium shrimp, peeled and deveined
1 (15 ounce) jar Alfredo sauce (such as Bertolli®)
½ cup grated Parmesan cheese
1 (16 ounce) box fettuccine noodles
2 tablespoons Italian bread crumbs
¼ cup chopped fresh parsley

Steps:

  • Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. Saute until sausage is almost fully cooked, onions are tender, and any liquid from the frozen vegetables has almost fully evaporated, 10 to 12 minutes. Stir in Creole seasoning, garlic, and pepper; cook for 2 minutes. Add shrimp, Alfredo sauce, and Parmesan cheese. Cook and stir until sauce has thickened and shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, 8 to 10 minutes. Drain fettuccine, top with shrimp-sausage mixture, and sprinkle with bread crumbs and parsley.

1 1/2 pounds sweet potatoes, peeled, diced
1 1/2 pounds yukon gold potatoes, peeled, diced
1 tablespoon honey
1/4 pound (1 stick) butter
1/2 teaspoon cinnamon
Salt and black pepper
1 tablespoon olive oil
1 tablespoon minced garlic
2 tablespoons minced shallots
2 tablespoons diced celery
1/2 cup white wine
4 ounces andouille, diced
1 sprig fresh thyme
1 cup heavy cream
1 teaspoon Cajun seasoning
2 tablespoons butter
1 tablespoon Italian flat-leaf parsley, chopped
Salt and black pepper
12 shrimp, 10/20 size, peeled, tail on, butterflied
Blackening spice, to coat shrimp
1/2 cup olive oil

Steps:

  • For the sweet potatoes, in a one-gallon saucepot, add the potatoes and cover with water. Bring to a boil and cook until fork tender. When cooked, strain potatoes. In a large bowl, while potatoes are still hot, add honey, butter, cinnamon, salt, and pepper. Mash together and reserve on stovetop with low heat.
  • For the andouille cream, in a large saute pan with the olive oil, sweat the garlic and shallots. Add the celery and saute for one minute. Add the white wine, sausage, and thyme. Reduce for about one minute to half. Add heavy cream and reduce mixture by half again. Stir in Cajun seasoning and butter, saute for one minute. Stir in parsley and season. Be sure to remove thyme sprig before serving. Reserve on stovetop with low heat.
  • For the shrimp, dredge shrimp in blackening spice. Season each side of the shrimp with salt and ground black pepper. In a hot saute pan with olive oil, pan sear shrimp. Be sure not to burn the blackening spice, or it will turn very bitter in taste.
  • For the presentation, spoon the potatoes in the center of a serving plate. Then stand three shrimp on the potatoes, with the tails in on top. Lastly, spoon a portion of the andouille cream on top of the shrimp and potatoes.

3 lbs shrimp
6 tablespoons butter
6 tablespoons flour
1 small onion (minced)
1 1/2 cups dry white wine
salt
cayenne (to taste)
3 cups whipping cream
1 lb bulk sausage
6 cups spinach (stemmed, chopped)
24 mushrooms (sliced)
1 cup green onion (chopped)
1 1/2 lbs monterey jack cheese (shredded)
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Prepare herb mix.
  • Heat broiler.
  • Peel and devein shrimp, reserving shells. toss with cayenne and herb mix.
  • Place shells in a saucepan. Cover with water.
  • Bring to a boil. Reduce. Simmer 15 minutes. Strain.
  • Set aside 3 cups. Freeze rest for another use.
  • Heat butter in a saucepan.
  • Add onion. Saute 3 minutes.
  • Add flour. Cook 1 minute.
  • Whisk in stock and wine until smooth.
  • Stir in the salt and cayenne. Simmer 10 minutes.
  • Whisk in cream. Simmer 5 minutes. Keep warm.
  • Brown sausage in a wok.
  • Add shrimp to wok. Saute 3 minutes.
  • Add spinach, mushrooms and onions. Saute 3 minutes.
  • Pour mix into a sprayed 9x13.
  • Top with sauce and cheese.
  • Broil until golden.

Heat a large skillet over medium high heat and drizzle bottom of pan with olive oil. Add shrimp and cook for 2 minutes or so until starting to curl. Flip shrimp over and cook another minute or two and then remove to a plate and set aside. Drizzle pan with a little more olive oil, add sausage and brown until nicely caramelized, about 4 - 5 minutes. Remove to plate, set aside.
  • Add pasta to salted boiling water and cook until al dente, a minute less than package instructions.
  • Lower heat to medium and add another good drizzle of olive oil to the pan, add the onion, red bell pepper, thyme, smoked paprika, 1 tablespoon cajun seasoning, brown sugar and a generous pinch of salt. Sauté until onion and pepper have softened a bit, scraping up any browned bits that you can. Add the garlic and cook until fragrant, about 30 seconds.
  • Add crushed tomatoes, chicken broth and Worcestershire sauce and bring to a simmer, stirring and scraping up any brown bits from bottom of pan, simmer a couple minutes. Add cream and stir to combine, bring to a simmer. Once simmering, add cooked pasta and andouille sausage and stir to combine and heat through, 2 - 3 minutes. Add more chicken broth or cream if it seems dry or you'd like more sauce (I added ¼ cup of each). Salt and pepper to taste and then lastly, add blackened shrimp and combine, or place shrimp on top of pasta. Sprinkle with some more freshly cracked black pepper, grated Parmesan and chopped parsley.
