Blackened Salmon Tacos with Chunky Mango Avocado Salsa image

This is a quick and easy recipe that you are sure to enjoy. Healthy and delish!

3 ripe mangoes - peeled, pitted, and diced
1 avocado - peeled, pitted, and diced
1 orange bell pepper, diced
1 jalapeno pepper, seeded and diced
1 lime, juiced
2 tablespoons chopped fresh cilantro
1 pinch salt
1 tablespoon sweet and spicy seafood rub, or to taste
½ teaspoon chili powder, or to taste
salt and ground black pepper to taste
2 skin-on salmon fillets
2 tablespoons olive oil, or as needed, divided
6 corn tortillas
3 large limes, cut into wedges

Steps:

  • Combine mangoes, avocado, orange bell pepper, and jalapeno in a large bowl to make salsa. Add lime juice, cilantro, and salt; mix to combine. Cover with plastic wrap and refrigerate.
  • Sprinkle seafood rub, chili powder, salt, and black pepper over 1 side of each salmon steak; rub in with your fingers until evenly distributed.
  • Coat the bottom of a large skillet with olive oil and heat over medium-high heat. Add salmon skin-side down and cook until skin is crisp, 4 to 5 minutes. Flip salmon and carefully peel off skin. Season top with seafood rub, chili powder, salt and black pepper. Continue cooking until lightly browned on the second side and salmon flakes easily with a fork, 4 to 5 minutes.
  • Slice each salmon fillet lengthwise to create 6 pieces.
  • Lightly oil another skillet over medium heat. Pan-fry corn tortillas, one at a time, until heated through and pliable, about 30 seconds per side.
  • Place 1 piece of salmon on each tortilla. Top with salsa. Squeeze a wedge of lime on top.

2 teaspoons ground cumin
2 teaspoons paprika
2-1/4 teaspoons pepper, divided
3/4 teaspoon salt, divided
4 catfish fillets (6 ounces each)
1 medium mango, peeled and cubed
1 medium ripe avocado, peeled and cubed
1/3 cup finely chopped red onion
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 teaspoons olive oil

Steps:

  • Combine the oregano, cumin, paprika, 2 teaspoons pepper and 1/2 teaspoon salt; rub over fillets. Refrigerate for at least 30 minutes., Meanwhile, in a small bowl, combine the mango, avocado, red onion, cilantro, lime juice and remaining salt and pepper. Blackened Salmon Tacos image

Number Of Ingredients 15

10oz salmon (2-3 salmon steaks)
4 tbsp olive oil, divided
2 tsp smoked paprika
1 tsp cayenne pepper
1 tsp cumin
1/2 tsp coriander
1/4 tsp black pepper
1/2 tsp sea salt
1 honey mango, pitted and chopped into small pieces
1 medium avocado, pitted and chopped into small pieces
zest of 1/2 lime
juice of 1 lime
1 tsp olive oil
1/4 tsp sea salt
5-6 flour tortillas

Steps:

  • Place cast iron skillet in oven
  • Pre-heat oven to 400°F
  • Pat salmon steaks dry
  • Brush with 2 tbsp olive oil
  • Mix together all of the spices
  • Rub spice mixture all over salmon, coating completely
  • Once oven reaches temperature, carefully remove skillet and place on a burner over medium heat
  • Coat skillet with 2 tbsp olive oil
  • Add salmon steaks to skillet
  • Cook 2 minutes on each side until browned
  • Return skillet to oven for 5-8 minutes (depending on how well you like your salmon cooked)
  • Remove salmon from oven, cool completely
  • Slice salmon steaks, set aside
  • Prepare salsa while salmon is cooling
  • In a small bowl, toss together all of the ingredients
  • Divide salmon between the tacos
  • Top with desired amount of salsa

  • Make the salsa. Chop the mango, avocado, and finely dice the jalpeño and red onion. Place the mango, avocado, red onion and jalapeño in a medium bowl. Pour in the lime juice and oil. Season with salt and pepper to taste and top with chopped cilantro. I like to dice everything quite small but this isn't necessary.
  • In a small bowl, mix together all the spices. Place a cast iron skillet on the grill and turn the grill to very high. Pat fish dry and drizzle with 1 tablespoon oil on both sides. Sprinkle the spice mixture on both sides of the fish and press lightly so the spices stick.
  • When the skillet is piping hot, add the remaining 1 tablespoon oil. Place the fillets in the skillet and cook for 2 to 3 minutes or until the bottom is almost black but not burned. Carefully flip and cook another 2-3 minutes or until the fillets seemed properly blackened but not overcooked.
  • Remove fish from pan and place onto a large platter or individual plates. Spoon mango-avocado salsa over top and serve immediately.
